4 page 4 Family values Members of the Dennis family have been butchers for over a hundred years, so every steak, sausage and joint has been approved with the benefit of years of knowledge and skill. John Dennis tells how all this experience makes for meat that s a cut above the rest. My grandfather, Archie Dennis, had a butcher s shop in The Square in Braunton since long before the First World War. He was known for his excellent sausages, and took pride in providing the best meat he could. In fact, he used to buy animals in before they were due for slaughter and graze them for a few weeks to ensure they were of the best quality. Three of Archie s brother were butchers, and their uncle, Sidney, had a shop in Morthoe. The need to sell good food must be in the genes! My father, Philip Dennis, worked in Archie s shop until World War Two. When he returned home in 1946 he started his own farming business. Over time he produced pork, turkeys and hens eggs, and built up a successful business delivering to hotels in Woolacombe. Philip was quite innovative in his approach, and was always anxious to produce a quality product. He produced his pigs using what was known as the Danish method which was new to the South West, and turkeys were relatively unknown in this country when he first reared them. Fast, reliable delivery was key to my father s business even then. He did well because the Woolacombe hoteliers had never before had a regular, local supply of such a good product. This is still vital to our customers today - we can get a huge range of quality food to them quickly and conveniently.

5 In 1977 I returned from university and joined my father in business. Of course I d been involved before then, hand-plucking turkeys during the Christmas rush and helping with deliveries. I liked working with him, and liked the motivation of being self-employed. At this time I could see that our customers had a growing need for frozen food, which was quite new then. We started supplying it to our customers, and as it was my idea I was determined to make it work! Thankfully, it proved very popular, and by the mid-eighties we d outgrown our premises and moved to much larger ones. We ve expanded a few more times since. products, and we listened to them then, too. We still have family members such as my wife Elizabeth actively involved in the running of the business, but we ve the benefit of other, hugely experienced people, too. Our managing director, Stephen Carr, comes from a local farming family, and our director, Nigel Yeo, brought years of experience in running his large family butchers to us. It s this collective experience that s shaped Dennis Family Butchers into what it is today. We know about top-quality meat, and couldn t bear to sell our customers anything else my ancestors would turn in their graves! Giving our customers what they want has been very important over the years. As time progressed and our customers needs changed we added fresh meat and fish, chilled foods and cooking ingredients to our range. Today, many of our customers want top-quality ingredients so they can make their own dishes from scratch, so we provide it for them. In the eighties, when pubs and cafés were just starting to provide meals, they wanted convenient, frozen I still try to maintain my father Philip s high standards of meeting customers expectations and providing value for money. My grandfather would be proud of where his early business led to, and he d probably still recognise much of what goes on in the butchery department. In some ways, the principles of providing top-quality meat hasn t really changed that much.

6 page 6 CUTTING EDGE Everything that comes from Dennis Family Butchers is prepared by experienced professionals employing traditional skills in high-tech surroundings. Production manager Phil Dunn talks about the best butchers on the block. With over 200 years collective experience in his cutting room, Phil Dunn, production manager at Dennis Family Butchers, is rightly proud of his team. I work with a fantastic group of highly skilled, motivated people, he says. They re dedicated to the customers needs, show huge attention to detail, and are very quick and efficient. Some of them have trained for years to get to the level they re at now. Key to building a team like this is getting the right people in the first place. Phil himself has 28 years butchery experience, so he knows what he s looking for. Good butchers are like gold dust nowadays, he says. So I ll go to great lengths to get the right people, then we continually train them so they get even better. Of course, it s not all about traditional skills at Dennis Family Butchers - the equipment Phil s team uses in the cutting room, built in 2010, is thoroughly modern. The building and equipment we use are state-of-the-art, and a privilege to work with, he says. So what we produce is scrupulously clean, and conforms to exceptional hygiene standards. For Dennis Family Butchers customers, all of this means that what they get is of the highest quality. We start with the best meat we can get, then my butchers make sure that our customers can use everything they pay for. There ll be no bits they don t want, or unnecessary fat, says Phil. Our bespoke butchery service means that if you want a particular size or number of cuts, or a particularly large or small joint, that s what our butchers will prepare for you. We ll also prepare any unusual cuts or joints, even if they re not on our regular list of products - all you have to do is ask.

8 page 8 Behind the scenes The team of skilled butchers are working day and night to get bespoke orders of top-quality fresh meat to businesses across the country. We take you behind the scenes for an insight into how it works. The goods inwards manager inspects beef fore quarter carcasses before they are moved through to the storage chiller. A team of skilled butchers prepare the carcasses and primals for red meat in the main production hall. Poultry products are produced in a separate room to maintain stringent hygiene standards. Sausages are made in another speciallydesignated area. The team use carefully chosen pork and beef cuts and follow our own traditional recipes.

These distinctive animals are an old, traditional breed with strong heritage links to North Devon, where they can be seen dotted about the countryside, their deep red colouring a pleasant contrast to the rich green pastures. The Red Ruby Devon is a slow-maturing breed, recognised internationally for its ability to produce the very finest beef. Unlike modern breeds, it naturally lays down intra-muscular fat in the meat which produces wonderful marbled, succulent beef with an excellent flavour. We choose only the best farms to supply us with Red Ruby Devon meat. Our farmers feed their cattle on the best available feed with plenty of grass as their main diet, and provide them with the optimum balance of indoor shelter and outdoor roaming. We have the right breeding, a great system and the most modern machinery, which cuts the use of pesticides and fertilisers, and this means that we can produce really excellent meat. Chris crosses pedigree Aberdeen Angus cattle with Canadian Angus and South Devons to get a large, meaty animal which produces delicious, tender cuts of meat. Our breeding is geared towards getting meat that s beautifully marbled with wellflavoured fat, which flavours and moistens the beef as it cooks, he says. He then hand rears his cows using non-intensive methods, giving them only food that s grown on his farm and rearing them outside on green Exmoor pastures or sheltered in airy barns. Chris also makes sure that their lives are as unstressful as possible by moving them around as little as he can. With just two miles from our farm to the abbatoir we have one of the lowest food mile counts and smallest carbon footprints in the food industry, says Chris. This also means that the animals are pretty stressfree, which definitely makes for better tasting meat.

16 C H I C K E N A N D D U C K from Lane End Farm P O U LT R Y When it comes to producing high-quality poultry, Ingrid and Peter Smith of Lane End Farm on the edge of Exmoor know exactly what s important: intelligent husbandry, careful breeding and, perhaps most importantly, high welfare standards. We produce happy meat from happy birds, says Ingrid. Our chickens and ducks are very content in their environment. They live in spacious arks with natural light and outside space to roam in and are given fresh bedding every day, and our ducks swim in their own water baths. We feed them with GM free grain, and they enjoy raking and scratching at the ground for wheat, husk and worms. Add to this the fact that Lane End birds are of the slow-growing Hubbard variety - they take nearly twice as long as most commercial birds to mature - and that no artificial pesticides or fertilisers are used on their land, and you can see why their flavour is flights above the norm. 20 W E S T C O U N T R Y L A M B Sweet, tender spring lamb is one of the highlights of the year - which is why we source ours from the Westcountry, a region known for its lush grazing ground. Wherever possible we try to select our lambs from a small number of farms, each with years of experience, and at certain times of the year some lambs come from a farm just three miles from our establishment. The sheep are specially bred to produce lambs which suit the high standards of today s chefs. They re allowed to graze freely and have their diets supplemented by highquality grain that s been specifically tailored to their dietary requirements. Close monitoring of the lambs progress means that once they reach the optimum age, weight and quality they are sent for processing at the right time to get the best meat. 22 P O R K from Lane End Farm P ORK The care that Peter and Ingrid Smith put into their Lane End Farm pork is clear to see in the end result: tender, succulent meat that Peter says, Tastes just like pork used to. High welfare standards play a vital part in the production of such top quality meat, and Peter s proud of the life he gives his pigs. We house them in airy, sunlit barns and give them fresh straw bedding every day, he says. And during the summer months the sows love being outside. The pigs spend their days on Peter and Ingrid s edge of Exmoor farm and are fed on cereal and locally grown fodder, but get extra food from the straw, which they like to root through. This gives them mental stimulation too, says Peter. And our open pen system means they can socialise. It s important to us that our animals are happy. Peter also applies this attention to detail to breeding perfect pigs for his customers requirements. You need a different fat to meat ratio for, say, a pig destined for spit roasting than for one that will produce a good carvery joint, he says. So I cross Gloucester Old Spots, Large Whites and Durocs to produce the right pig for each cut that s required.
