3 CONTENTS Hensons was founded by Joseph Lincoln Henson in the 19th Century in the heart of London - at Smithfield Market - and has a rich history in the meat industry. BUTCHERY SALT BEEF, OX TONGUE & PASTRAMI BURGERS & BURGER MINCE CHEESE DELICATESSEN FROZEN AMBIENT CONTACT US J L Henson Ltd. was one of only a few businesses that specialised in offal and tripe at a time when access to affordable sources of protein was vital. Hensons was also known for its Salt Beef, a product that dates back to the Tudor period. Off-cuts of beef were soaked in barrels of brine and salt petre to preserve and tenderise it. This was then sold to the numerous Salt Beef bars around London. As demand for higher-quality meat products rose, Hensons focussed its production on Salt Beef. They developed a new commercial production technique, using prime cuts of brisket and a special low-salt cure, that transformed Salt Beef into a premium product. Now supplied to a large number of high-end bars and restaurants, it has cemented Hensons position as a quality brand in the foodservice industry. We have developed our passion for excellent meats and diversified our operations to reflect our commitment to good food. We now offer a full catering butchery service to formal and informal dining establishments, and in addition to Salt Beef we also specialise in fresh gourmet Aberdeen Angus burgers. Our acquisition of a cheese wholesaler in 2006 has added a range of complimentary British and continental cheese to our portfolio, and we boast probably the largest temperature-controlled storage facility in central London, stocking premium chilled and frozen ingredients for chefs and caterers.

5 High Class BUTCHERY Hensons offers a wide range of products, including frozen and ambient foods and a speciality cheese selection, but our heart will always be with meat. For our restaurant and catering butchers in London and the South East we have a dedicated butchery combining the personal service and attention to detail of a local, high street butcher with the technical standards of EU and BRC certification. We source our meat from the UK and Ireland wherever possible, and always from audited and approved suppliers. In order to offer the widest choice of beef for joints and steaks, we compliment our Scottish and Irish range with South American and Australian beef, as they offer consistent quality and price. Traditional bacon and gammon joints come from West Country farms and are produced with a traditional Wiltshire cure, for delicious cooked hams with a distinctive taste. Sausages are made fresh, to order, overnight. By far the most popular choice is our Cumberland, but we can make just about any sausage for you. Our service is bespoke to each customer, with specifications recorded on our computer to ensure consistent cutting and trim. We have a dedicated technical department to ensure the highest standards of HACCP procedures and full traceability records. We also carry out regular microbiological tests, for your peace of mind. 04 I 05

7 SALT BEEF Ox Tongue & Pastrami Hensons Famous Salt Beef is our pride and joy - we even sponsor a website devoted to raising the profile of this delicious, traditional fare amongst Britain s foodies saltbeef.com Salt Beef dates back to Tudor times. It was part of the diet on the Mary Rose, the Golden Hind and HMS Victory, and as well as being a traditional English dish it is also central to Jewish cuisine. Salt Beef has long been one of London s regional dishes but almost fell out of production in the middle of the 20th Century due to the time and effort required to cure the meat. In the 1970s, however, we perfected a commercially-viable method of curing the beef which has been instrumental in the increase in popularity of this excellent product amongst restaurateurs. We use only prime cuts of brisket from cattle that have grazed on lush green pastures, and slow cure it to our own unique, low-salt recipe. This ensures a delicate texture, fine flavour and an even cure throughout. The same cure is used for our ox-tongue and pastrami, which are often served in combination with Salt Beef - such as in the famous Reuben and Rachel sandwiches that originated in New York. Salt Beef is supplied throughout the UK and Ireland and, over four hundred years since it was first served aboard ship, it is still sold by ship s chandlers. 06 I 07

9 BURGERS & Burger Mince Hensons gourmet burgers are amongst our most popular products. We use top quality ingredients and state-of-the-art equipment to produce Aberdeen Angus and British Beef burgers of various sizes and recipes. The beef comes from a small number of British suppliers that we have traded with over many years. We only use fresh beef: never frozen or previously frozen. The Scotch beef for our Aberdeen Angus mince comes from farms in and around Inverurie. Our burgers are made by a small, highly trained team using burger machines specially imported from America. They are widely acclaimed to be the best in their field because of the unique way they form the burger, resulting in a less dense patty which cooks quickly and evenly. Together with the quality of the beef itself, this makes for a tender burger, full of flavour, with a satisfying bite. You can choose from a range of sizes - cocktail to 10oz - and visual lean ranging from 80VL to 95VL. We also make private label burgers for contract customers to their own recipe and specification (and sometimes even their own shape!). All Hensons burgers are gluten free. For chefs who prefer to make their own burgers by hand we offer twice-ground Scotch Aberdeen Angus mince, prepared to order every weekday morning, with absolutely nothing added. The mince is delivered later the same morning, so it is super fresh and in perfect condition. For your peace of mind we have full traceability records for every box of burgers and mince. We carry out regular microbiological testing on all of our butchery products. Our gourmet burgers are supplied nationwide to restaurants and wholesalers (subject to minimum order). 08 I 09

11 CHEESE No longer just the land of mild-cheddar-lovers, Great Britain has become a cheese superpower. The resurgence of cheese-making in the UK over the last two decades is hard to believe, with the revival of long-lost recipes as well as newcomers to the scene. You can now find all types of artisan cheeses on offer - with some lovely goat and sheep s milk cheeses to compliment the Farmhouse cheddars and Stiltons that we ve always been famous for. We are proud to stock some of the finest cheeses from small farms and artisan cheese makers across the country, and especially from the counties of the South East, and we re always on the lookout for new and interesting cheeses to add to our portfolio. Many farms produce their cheese in strictly limited quantities, and we are lucky to have a close relationship with them, so we often have cheeses that are hard to find. To complement our range of British and Irish cheese we import from recognised specialists on the continent - including Brie, Camembert and Goat s cheese from France and cheeses such as Grana Padano, Mozzarella, Ricotta and Taleggio from Italy. Our cheeses are available for national delivery to our wholesale customers and we are always pleased to invite buyers to visit our cheese halls to see our full range and sample new products. 10 I 11

13 We import olives, extra virgin olive oil and charcuterie, as well as a range of vinegars and sauces. All of our products are carefully selected from around the British Isles and Europe by our experienced team and we strive to achieve the highest standards in quality. DELICATESSEN In addition to our range of cheeses, we also stock a wide variety of deli products. We understand that speciality products such as cured meats play a very important part in the success of our customers, and so we never compromise on quality. At the same time we know that everyone is under pressure to reduce costs, so we operate a very fair pricing policy. We are able to do this because of our buying power and our very efficient multi-temperature distribution service. 12 I 13

15 FROZEN Fish and seafood, frozen at sea; vegetables, frozen minutes after being picked from the field; chips, free from blemish and with consistent lengths: these are a few of the advantages that frozen can offer. Frozen ingredients also offer year-round availability and absolutely no waste, as well as a buffer from the market price flucutations of fresh produce. Our biggest selling lines are full, uncooked racks of ribs (in various configurations) premium quality chips and potato specialities, Ardo fruit and vegetables, fish fillets and seafood. real dairy ice cream and we have a wide selection of bread buns specifically for burgers. 17 AMBIENT Our range of quality ambient ingredients, spices and condiments is particularly well-suited to our restaurant customers. We offer a wide range of premium-branded dressings, relishes and ketchups to complement the dishes that you create, as well as a selection of canned goods, seasonings and cooking sauces to enhance your offerings. And if you re serving salt beef, don t forget the classic accompaniments: English mustard and giant, juicy gherkins with dill. For our wholesale customers, we offer exceptional pallet rates for delivery of many of our ambient products such as oils, olives, canned tomatoes and gherkins. 16 I 17
