2 A bit of history At the beginning of the '50s, the eponymous company was founded by Silvio Carta, who starts to make and refine Vernaccia wine, soon acquiring a leading position in the Sardinian market. Later on, after completing University and having obtained the required specialisations, his son Elio decides to join his father. Towards the middle of the '80s, the company begins the production of high quality traditional spirits and liquors alongside its winemaking. Over the following years, tradition and innovation have gone hand in hand to guarantee quality and goodness with an attentive eye on the market. This journey has now culminated with the opening of a new and modern plant, and the creation of truly attractive packaging that has no comparison on the market.

3 The company philosophy The company philosophy that governs Silvio Carta productions is expressed in the famous slogan 'Armonia della natura' ('Harmony in nature'), a cornerstone of the company's advertising campaigns. This simple phrase summarises the working method of the Carta family: always respect the environment. We can state without fear of contradiction that it was not a coincidence - indeed the final point of a long journey - that the company was the earliest to launch on the market the first organic Mirto many years ago. An achievement the Silvio Carta company is understandably very proud of. In line with the logic of eco-friendly production, the company designed and built the new plant in Zeddiani (OR), where the activity achieves maximum energy savings thanks to a photovoltaic system that powers the production with zero emissions of carbon dioxide into the atmosphere.

4 Business branches From 2011, the Silvio Carta company has achieved its aim to diversify its activities through the use of two separate branches, with undeniable advantages from the point of view of production and business logistics. The historic plant in Baratili San Pietro (OR), with its 5,000 sqm of covered surface goes back to the ancient tradition of producing Vernaccia. On the other hand, the brand new plant in Zeddiani (OR), furnished with modern equipment that boasts the most advanced production and packaging technology and around 20,000 sqm of covered surface, will concentrate on manufacturing liquors and spirits, inaugurating a line dedicated to developing essential oils.

6 Vernaccia di Oristano D.O.C. Riserva Classification: Vernaccia di Sardegna D.O.C. Riserva. Alcohol content: 16.5% Vol. Bottle size: 75 cl. Soil: light clay of alluvial origin. Farming system: espalier. Harvesting period: from the second week of September to the first week of October. Type of harvesting: by hand in small boxes. Vinification: the thin skin that can tear easily makes the vinification particularly delicate and difficult; compared to regular oenological practices, however, the unusual stage is the ageing phase. Ageing takes place in chestnut wood barrels placed in highly ventilated cellars that follow seasonal climate changes with temperature leaps. After five to six years of ageing, the wine reaches the following aspect: an amber yellow colour, an alcoholic scent with tones of almond flours, a warm taste with an after-taste of bitter almonds. Refinement: in small chestnut tree barrels with a capacity of litres for about 10 years. The barrels are not completely filled to allow the development of the characteristic layer of "flor" raising agents that generate the unmistakable sensors of Vernaccia di Oristano. Colour: amber. Bouquet and taste: with an aroma that recalls almond flours, this wine has a soft taste with a slightly bitter after-taste. 7 Vernaccia Valle del Tirso I.G.T. Classification: Vernaccia Valle del Tirso I.G.T. Alcohol content: 15% Vol. Bottle size: 75 cl. Soil: light clay of alluvial origin. Farming system: espalier. Harvesting period: from the second week of September to the first week of October. Type of harvesting: by hand in small boxes. Vinification: the thin skin that can tear easily makes the vinification par ticularly delicate and difficult compared to regular oenological practices. Colour : straw yellow. Bouquet and taste: a wine that is perfect for fish dishes with significantly highlighted taste-olfactory tones such as botargo (fish roe from tuna or grey mullet), spicy or smoked cheeses. 8 Mirto Rosso Ricetta della tradizione Classification: Mirto Rosso Liquor - A traditional recipe. Alcohol content: 30% Vol. Bottle size: 70 cl - 50 cl. Colour: ruby red towards crimson. Bouquet and taste: the Mirto di Sardegna is a traditional liquor. The unique taste and colour of the Mirto liquor comes from the fruit of the Mirto plant (Myrtus communis), which produces unique purple blue berries. The organoleptic properties are inside the skin of the grapes, giving the liquor its distinctive colour, while the tannins of the pulp are responsible for the astringent taste and volatile composites that generate the unique taste of this liquor. Gastronomic combinations: thanks to its properties, the Mirto di Sardegna is included among the digestive liquors. It could therefore be consumed after a meal, even if it is often used as an aperitif. It is best served iced by keeping bottles in the freezer. Bouquet and taste: the characteristic of the Mirto Gusto Giovane is its pleasantness, coming from using honey unlike the traditional preparation. This allows it to maintain a correct level of sweetness with a lower content of sugar giving the liquor a soft and velvety taste and maintaining the delicate aromas of Mirto without covering them with excessive sweetness. It is best served with ice from bottles kept in the freezer. Bouquet and taste: it is extracted from the most aromatic leaves of the Mirto plant, an evergreen shrub that spontaneously grows in the uncontaminated lands of Sardinia; the liquor is made naturally, without colourings or flavourings. A slow maceration in pure alcohol and a respect for the ancient method of production give this liquor its elegant and delicate taste. 17 Chrysos Scova e S. Maria Classification: Helichrysum bitter liquor. Alcohol content: 23% Vol. Bottle size: 50 cl. Colour: dark brown. Bouquet and taste: its name comes from the Greek words 'helios' (sun) and 'Chrysos' (gold) for the intense gold colour of its flours that shine in the sun light. This bitter liquor is extracted by an infusion of helichrysum in alcohol. The flavour recalls the scent of the sea and the hills covered with Mediterranean vegetation. It is obtained through a double distillation of Vernaccia wine at controlled temperature, discarding the head and tail of the distilled liquor. The scent is firm and intense, a mixture between refinement, transparency and balance. Unique in Sardinia, it is recommended to be sipped alone or with almond desserts and dry sweets. It is obtained through attentive distillation, exclusively performed by the oenologist Elio Carta and after a long process of ageing in chestnut tree barrels. Superb at the end of a meal with chocolates to highlight the intense fragrances: from the sea scent to the delicate tones of bitter almond.
