5 Aberfeldy 12yo Creamy nose with some sherried fruit. Sweet and malty palate with gentle peat but very clean. AnCnoc 12yo Sweet to start, with an appetising fruitiness and a long smooth finish. Light, yet complex, smooth and challenging. Ardmore Legacy Full of caramel. Toasted oak is evident and rich with just the faintest peat coming through. Lots of barley and cereal notes, oodles of rich bourbon, smoke and peat present. Ardmore 1996 Honey, polished oak, smoky embers and a little bit of orange oil. Orange continues to build on the palate, with hints of ripe banana too. Still pleasingly peaty. Brora Rare Old Fragrant green apple aromas enhanced with lemon, lime and subtle menthol notes. A sweetness develops with hints of milk chocolate. Ballechin 10yo Wood smoke, lime jam and coastal brine with dark chocolate and linseed oil underneath. Soft, rounded and sweet to start, with cinnamon, chocolate and lime leading to burning hay. Blair Atholl 12yo Interesting and unusual sweet aftertaste. A rich, sweet malt best drunk with only a drop of water, when it holds its sweetness better. Balblair 10yo A delicate floral aroma develops. Initially with creamy milk chocolate and orange flavours with subtle brazil nut and beeswax influences. Balblair 2005 Citrus blossom mixed with hints of barrel-char spice and treacle tarts. Fresh and spiced. Balblair 1999 The Sherry oak takes hold of the nose with thick slices of warm Christmas cake and juicy raisins. Beneath you ll find apple peel and honeyed malt. HIGHLAND 5 Balblair 1990 Lush toffee, milk chocolate and a good helping of vanilla. A sprinkle of spice round out the nose. Citrus fruits come through first, followed by honeycovered raisins. Balblair 1980 Chilli spice initially with creamy milk chocolate and orange flavours with subtle brazil nut and beeswax. Balblair Private Collection Notes of vanilla and rich malt along with citrus zest, candied peels and cocoa. Clynelish 14yo The palate is multi-layered too, with some slight citrus hints on a honey background with peat and delicious spices before a honey finish. CÙ BÒcan Initially feather light, followed by a honeyed smoke. The rich spice of cloves, cinnamon and star anise create an enigmatic elegance. Dalmore 12yo Aged in Sherry casks, it has a powerful nose and is very smooth. Spicy marmlade and heather smoke notes persist into an orange finish. Dalmore 15yo Elegant and refined with aromas of dried spice, cloves, cinnamon and ginger, combined with hints of seville oranges, lemon and lime on the palate. Dalmore 18yo Fruity and spicy with notes of vanilla, orange zest, potpourri, marmalade and sweet milk chocolate. A delicious fireside dram with notes of chocolate raisins, juicy citrus, stewed fruits, old Sherry and pepper. A long, fruity finish ending on almond, buttery toffee apples and cocoa. Dalmore King Alexander III Seville orange zest, parfait amour and malty cereal on the nose. Medium-bodied with a rounded palate of winter berries, spice and zesty orange. Liqueurs subtly emerge; Gran Marnier, Kirsch and Frangelico. On the finish there is well-integrated oak and the Claret makes a last minute appearance.

6 Dalwhinnie 15yo A simple, clean and crisp Malt. Enjoy aromas of heather and an aromatic light, subtly peaty nose. Walnuts, vanilla and honey are interweaved by smoky notes with a touch of spice emerging into a long, malty finish. Dalwhinnie 25yo Sweet and fruity with a spicy backbone. The spice builds on the palate, with the cloves starting to dominate, but it s all balanced out by sweet, spicy vanilla notes. Dalwhinnie Distiller s Edition A big, spicy buzz followed by an impressive build-up. After a quick burst of sweetness, a rich, grape effect moves in towards the middle. Deanston 12yo Light aromas of cereals and zesty orange marmalade leading into soft, nutty caramel flavours with a touch of salinity. Finished softly with a hint of caramel. Edradour 10yo Thoroughly fruity, Sherry sweetness and alluring vanilla. Cloying, seductive murkiness. On the palate, rum, barley, toasted almonds. Some may find themselves lost in the mêlée, not quite enough method to the madness. Edradour Fairy Flag A rich, Christmas cake flavoured dram sweet and spicy with touches of Sherry-soaked raisins dusted with dark chocolate shavings. Glendronach 12yo Rich cereals, struck match, raisin, cinnamon, caramelised sugar. Opens with some sweeter Pedro Ximénez and lots of delicious raw ginger before becoming creamier with hazelnuts. Glenglasshaugh Revival Sweet caramel and toffee with notes of nutty Sherry, milk chocolate and honey. Ripe plums, red berries and oranges. Caramelised sugar and earthy, charred oak. HIGHLAND 6 Glenglasshaugh 30yo Coffee and toffee, citrus, fruit cake, fruit salad and spice. Dark chocolate, ginger, plenty of stewed golden fruits supported by oak. Glengarioch 12yo The colour of sharp honey, on the nose heathery floral notes are balanced with the richness of poached pears and the sweetness of malted barley. Glengoyne 10yo A Highland Malt, from a distillery situated near the village of Blanefield between Glasgow and Aberfoyle. Slightly lighter in colour, remarkably smooth and fiendishly approachable. Glengoyne 15yo Glengoyne s new 15 year old is a rich, rounded Single Malt, completely devoid of peat smoke thanks to air drying the barley. Glengoyne 21yo Oak, barley and red fruits. Barley and oak, possibly erring on the side of too much oak. Glencadam Aromatic and fresh. Hay, fruit, gentle wood influence with light vanilla and spice. Beautifully balanced with tart fruits, freshly cut hay and vanilla sweetness. Glen Mhor 1980 The nose is quite subtle with a lightness. There are notes of wet stones and a soft acidity. The oak is green and chewy with notes of Madeira, fudge and a gentle rubbery note. The palate is of medium-bodied with superb balance. There are notes of dried herbs and soft wood smoke. The finish is of good length with a zesty orange note. Glenmorangie Original Very fruity and thick. Rich notes of lemon, nectarine and apple. Fresh and balanced, with boiled sweets, very creamy tiramisu and toffee. Glenmorangie 18yo Creamy honey and Greek yoghurt, grapefruit, exotic spice, berry compote, tinned citrus, lychee and very creamy honey.

7 Glenmorangie Finealta Glenmorangie Finealta (gaelic for elegant ) is the new Malt from the Glenmorangie distillery. This exquisite Single Malt is a recreation of the style of the early 1900s. It has a distinct vanilla and citrus notes, layers of rich fruit flavours from part maturation in Oloroso Sherry casks. Lightly peated malt adds a surprise hint of subtle smokiness and deep layers to discover. Glenmorangie Nectar d Or The nose is full of dessert wines, a little fruitiness with a good barley sweetness. A mix of honey and apricot skins. Quite full with more dessert wine notes, cereal notes and barley. A touch of malty spice and berry fruits with good oaky tannins develops. Glenmorangie Quinta Ruban Full of winter berries and a touch of port. A good oak and a little cereal hanging in the substratum. Sweet and thick. The port note is chewy and rich with notes of barley sugar and cereal with lots of juicy fruit and berries. Glenmorangie Milsean Seaside fudge, coconut ice, blueberries and candied peels. Develops more fresh fruit than candied fruit with a drop of water. Glenturret Tripplewood The result is richly flavoursome, with good helpings of honey d barley, vanilla, orange peels and lively cinnamon. Fettercairn 24yo Nutty, spicy nose with notes of caramel, toffee popcorn, calves leather, beeswax, granary toast and hints of walnut cake. Malty and spicy with notes of berry fruits, star anise, a little orange zest, cocoa and coffee beans on the palate. Fettercairn Fior Astonishingly rich flavour of espresso, spices, fruit and almond. Sherry and smoke on the weighty nose. The addition of water causes the heavily HIGHLAND peated component to really shine through. Mildly spicy oak in the pleasingly lengthy finish. Old Pulteney Crisp and clean, with great balance revealing notes of herbs with a medium body and musty flavours leading into an oaky finish. Oban 14yo Rich and smooth with peaty smokiness and fruity undertones, the palate is thick and full with notes of citrus and a smooth sweetness. The finish is of good length with fruit and dry oak. Royal Lochnager 12yo Not obvious to begin with. Planed wood, light toffee, boat varnish. Linseed oil behind, even putty and later a lychee-like acidity. With water the acidity comes through (acid drops), and the nose sweetens. A pleasant, fresh woodiness, followed by warm sand. On the finish, coffee with brown sugar. Tullibardine 20yo Cocoa butter and all spice, notes of vanilla, cream and candy floss. Manuka honey. Honeyed, malty palate with vanilla and mixed spices, with orange blossom honey, allspice and pepper on the finish. Teaninch 10yo Notes of cut hay and chamomile, hints of wood resins and potpourri, with a little winter spice and gentle citric acidity. The palate is of medium body with a pleasant dryness. There are notes of barley sugars and cereal notes. There are some oily herbal notes with more of that citric acidity developing with a hint of espresso. Tomatin 14yo Hints of strawberries dipped in dark chocolate along with notes of almonds, walnuts, victoria sponge and a centre of oak. Shackleton Flavours of treacle toffee, demerara sugar and sweet sultanas, glazed pineapple, freshly baked crusted bread and mango cake. 7

10 Balvenie 12yo Doublewood Offers a distinctive character from being matured in an American oak Whiskey cask and a Spanish oak Sherry cask. The bourbon gives gentle spice with vanilla, whilst the Sherry wood brings depth and full-flavour. Balvenie Caribbean Cask Matured in traditional oak casks before being transfered to Caribbean Rum casks, creates a well-rounded and fruity Malt. Balvenie 21yo Portwood An additional period of maturation in 30 year-old port pipes has given this aged Balvenie an extra level of depth and concentration of flavour, adding potent fruit and smoke notes to the silky smooth, full-bodied palate. Rich, indulgent, after-dinner Speyside at its best. Benromach 10yo Dry, barley, big on Malt and oak. Sweet spices after a time and a hint of puckering prune from the Sherry cask and maple fudge. Benromach Organic Benromach Organic is the first Soil Association certified Organic Single Malt Whisky and has enjoyed maturation in new oak, though this is a well-oaked dram, there is plenty of toffee and spice. Benromach 35yo Rum-soaked raisins leading to roasted stone fruits and delicate spice highlighted with vanilla. Rich Christmas cake covered in marzipan and icing with a sprinkling of winter spice on top! Cardhu 12yo Is silky and fruity. Sweet-natured, appealing and smooth-bodied, it is a delightful before or after meals Malt to share with special friends. A lingering sweet smoke in the attractive, drying aftertaste. Cragganmore 12yo A rich, slightly floral Whisky with barley notes on the nose. A strong malty taste with hints of sweet wood smoke and sandalwood followed by a long, Malt-driven finish with light smoke and hints of sweetness. SPEYSIDE CÚ Dubh Hot, notes of liquorice and vanilla tone forward. Sweet, smooth and well-balanced. Glenfarclas 10yo Tempting Sherry-sweet Malty tones combine with delicate smokiness on the nose. The flavour is a mouth-watering mix of maltiness, smokiness and Sherry sweetness with hints of dried fruit, vanilla, cinnamon and cloves. Glenfarclas 15yo With great age, comes great complexity. A prime balance of Sherry, oak and smokiness make this a superb Malt. Glenfarclas 25yo Incredibly clean central palate but amazingly tangy. Really zingy top notes. Sherry and creamy barley, hints of gingerbread and nutty chocolate. Glenlivet 15yo Nàdurra Oak White oak suffuses this traditional Single Malt with sublime notes of sweet vanilla. Glenlivet 16yo Nàdurra Oloroso First Fill Oloroso Sherry Oak casks from Jerez add richness and luxury followed by a long, sweet, finish. Glenlivet 21yo There are notes of oily walnuts and winter fruitcake with spice and sugar. There is a golden syrup note. The finish is long and sweet with a soft, chewy oak. Glenfiddich 12yo The valley of the deer gives its name to this light Malt. With sweet, fruity notes and hints of pears on the nose, leading into creamy, subtle oak flavours in its aromatic flavour. Rounded off with a long and mellow finish. Glenfiddich 15yo Very creamy with blossom notes. Now it s all rather spicy with hints of dark, rich fruit, black pepper and cinnamon. Glenfiddich 18yo Candied fruits balances the richer notes of dried apricot, cinnamon, toffee, ginger and dry Sherry. 10

11 Glenfiddich IPA Sherry, citrus, dry wood, a slight suggestion of smoke, medium Sherry and raisins. Fruit cake, spices and sweetness. Macallan 18yo An 18 year old Single Malt, joining Macallan s Fine oak range. The series shows off a deft balance between juicy sherried notes and vanilla/citrus, rich bourbon oak elements. Macallan 25yo A truly regal Single Malt that is so much sought after that production is strictly limited. Exceedingly smooth and silky on the palate, needs to be sipped, not swallowed. Macallan Spey Malt Candle wax, orange oil, juicy barley and honeycoated raisins. Chocolate-coated banana, more sharp marmalade (now with a hint of grapefruit) and crushed walnuts. Hazelburn 12yo Pungent and aromatic with notes of dried fruits, plenty of Sherry integration with notes of citrus, toffee and nuts. Springbank 10yo A family owned, independent and iconic distillery. A full-bodied Malt with a hint of sweetness which increases with age. Auchentoshan 12yo Tempting aromas of toasted almonds, caramelised toffee and the signature, smooth, delicate Auchentoshan taste. Auchentoshan 21yo Soft and supple with dry grass. Fruity notes, a citrus edge and very floral honey. Oily, nuttiness. Dry and rounded with sugared peels. SPEYSIDE CAMPBELTOWN LOWLAND 11 Macallan 1824 Sienna Noticeably bigger than Gold and Amber, orange peel, vanilla sugar and hot cross buns. Raisins and dried apricots, ripe greengages and frozen currants. Mortlach 25yo Vanilla pods, pineapple, lemon zest and a warming hint of tobacco. Touches of crushed almond. Wafts of light oak develop and grow gloriously rich. Singleton of Dufftown 12yo The palates orange zest spiciness perks up a malty core of nuts, oak and toffee. The finish is oaky, rich with good length and a fruity tail. Speyburn 10yo There are notes of malted barley and cereal sweetness. The palate is of medium body and quite smooth. Strathisla 12yo Flavours of fruit salad and fresh fruits, well supported by biscuity malt and a hint of toffee. Springbank 15yo Fragrant with a certain richness. Notes of fruit salad and a hint of caramel, pineapple, guava and passion fruit lurk. There are notes of dried leather and old ropes. A hint of toffee sweetness and some granary toast. Quite full and rich. There are notes of creamy fruit salad and more exotic fruit notes. Glenkinchie 12yo The nose is light and fragrant. Notes of fresh cereal, barley sweetness and a nutty note. Fruity flavours with notes of Madeira and stewed fruits with tannic oak lining the mouth. Medium-finish with a fresh greenness.

12 Ardbeg 10yo Sweet vanilla counterbalanced with lemon and lime, followed by that surging Ardbeg smoke that we all know and love. Ardbeg Corryvrekan Sticking plasters, buttery, creamy, roast chicken crisps, herbal, almost a hint of pine. Cream, spices, tingling, fresh fruit, medicinal plasters and clementines. Ardbeg Uigeadail Led by sweet, ripe fruit and black forest honey. A good helping of Malt. The throne then usurped by a powerful peat and smoked barley. Bowmore 15yo Matured in Oloroso Sherry casks. Dark and punchy with Sherry notes, spice and a little smoke. Bruichladdich The Laddie Elegantly sweet with honey d barley, boiled sweets and orange petals. Wafts of sea air. Red apples and white grapes, with touches of sweet cinnamon and brown sugar. Still softly coastal. Bruichladdich Black Art The structure of the oak gives honey, tobacco, vanilla and hints of spicy cinnamon. As elegant and refined a dram as you will find. Bruichladdich Octomore 07.1 Vanilla, honey, citrus rise up to be met with sea spray and leather, smoked mussels mix with autumn bracken and cre me brûlée. Bruichladdich Octomore 07.3 Orchard fruit and icing sugar at full strength, ethereal citrus high notes, sweetpea and coffee cake. Water reveals more of the smoke you may have expected. Bunnahabhain Ceobanach Aged in ex-bourbon casks for more than ten years, this is a rich and complex Whisky with a maritime character and will match well with chocolate, smoked fish or red meat. ISLAY Bunnahabhain 12yo Starts with a light fruit and nut, then leads to a malty sweetness, finishing into a rich, full-bodied, lingering experience. Bunnahabhain 18yo Dense, rich Sherried notes perked up with a coastal saltiness. On a second wave, roast chestnuts emerge and gentle wood spice. Bunnahabhain 25yo Bunnahabhain with twent-five years aging opens up the spirit to a plethora of rich, dark flavours that stay with the drinker long after the glass is finished. Caol Ila 12yo Fresh and herbal on the nose with rubbed peppermint leaves, cigar leaves and smoked ham. Full-flavours, oily, tar, elegant smoke with hints of boiled sweets. Caol Ila 18yo A wonderfully balanced expression from the core Caol Ila range, this 18 year old is malty and thick with notes of Caol Ila smoke and phenols, a lovely Islay Single Malt without extreme levels of peat. Kilchoman Machir Bay Matured in ex-bourbon barrels and Oloroso Sherry butts, resulting in a well-balanced flavour profile, with highlights of vanilla biscuits, light fruit and wafts of warm peat smoke. A top expression from Islay s farm distillery. Lagavulin 16yo Very thick and rich in taste with good fruity sweetness. Lagavulin is a traditional Gaelic Whisky, powerful and peaty with a complete finish. Laphroaig 10yo Upfront is a bold, smoky taste, followed by a hint of seaweed and sweetness. Golden in colour, it has an oily feel and is the most strongly peated of all Whiskies. 12

13 Laphroaig Quarter Cask Big rush of sweetness, in fact it s an explosion of sweetness, with fiery chilli heat, TCP, sweet cereals and a touch of cola syrup. Arran 10yo A pale champagne gold colour, with aromas of malt and orchard fruits. The taste is smooth, fruity, with hints of toffee and fudge. Arran Amarone Cask Mandarin citrus with fudge and honeyed notes. Layered fruits and spice combine, with cinnamon baked apple wrestling with raisin and plum pudding. Arran The Bothy Bottled at natural cask strength, this is sweet and spicy with notes of tropical fruit, citrus and toast. As We Get It From Ian Macleod s As We Get It series comes a cask strength Single Malt Scotch Whisky from the Isle of Islay, renowned for its peaty Whiskies. This has been bottled at 61.3% abv, so it likely could stand to be enjoyed with a drop of water or two. Highland Park 12yo Fresh, clean and very aromatic. Floral notes abound the senses with a light grassiness. Notes of creamy Manuka honey and a touch of juicy citrus with cream and a well-balanced sweetness. Highland Park 21yo The most northern Scottish distillery produces this classic Malt, which combines island characteristics with those of the Speyside Malts. Delightfuly dry, smoky aromas and flavours in a very smooth and subltle style. ISLAY ISLAND Port Ellen 1979 Soft smoke to start, with dry peat, coal and leather. Sugary notes appear, with stewed apples covered in sweet custard. Highland Park 25yo A truly dynamic whisky, with an intensely fruity and spicy centre, surrounded by complex layers of candied orange peel, dark chocolate and rich, slightly drier smoke. It is a Malt that rewards patience and delivers an experience like no other. Highland Park 30yo An outstanding Whisky for sure. Rich chocolate and fudge notes with a gently, smoky finish that features superb sea-spray hints. Highland Park Ice Edition Resplendent aromas of cool, fresh pineapple and ripe mango sorbet come to life in this celebration of glacial character. Silvery shards of smoke give way to the frosty kick of root ginger. Jura 10yo With it s water flowing over rocks and being lightly peated, this Malt has a light nose, some island dryness and saltiness coming through at the finish. Jura Superstition Lightly peated with hints of smoke, honey and pine. Using the finest young and aged Whiskies means there s a different flavour with every drop. 13

14 Jura Elixir 12yo Very fruity nose with plums, citrus and a hint of oak and spice. The fruit continues in the mouth, with more waves of Sherry, dried fruits and cinnamon. Plums make their return for a sweet, medium finish. A lively, life-giving Malt. Jura Prophecy Smoky and dry, a muscular, powerful Jura with notes of nutmeg, cardamom, sea spray and coal tar. Good length, with a punchy, dry peat smoke and dry herbal notes. Jura 200 th Anniversary Released to celebrate 200 years of distilling at the Isle of Jura. This 21 year old was specially selected and finished in a 1963 cask that previously held Gonzalez Byass Oloroso Sherry. Knockando Fragrant and smooth with a delightful, flowery, nutty sweetness, it leaves the palate clean with evanescent smoky, dry notes. Ledaig 10yo Quite light and well-balanced on the nose. There is a very soft peat with a gentle smoke and notes of barley and pine oil. Raasay While we Wait Instantly there is peat smoke and spice, balanced with the dry fruit from the Tuscan red wine casks, leaving a tantalising, lingering taste of what is to come. Scapa Glansa This lightly smoky Whisky was aged initially in American oak before being finished in ex-peated- Whisky casks. The result is fruity and creamy Whisky with notes of peach, vanilla, caramel and soft smoke. Scapa Skiren Soft and sweet, with brown-sugar-dusted buttery shortbread, a core of dried and candied apple slices, ground spice and an autumnal surround of damp forests. ISLAND 14 Sullivan s Cove Notes of jelly babies and a little white pepper dominate the palate entry with cinnamon and a lick of fresh cut grass developing. Talisker 10yo A very individual Island Malt with a flavour which explodes into smoky pepper on the palate, after an enticing smoky nose and echoes long and unforgettably. Talisker 30yo A finely-tuned balance of sweetness from plump berries and an enjoyable peppery heat. Its age shines through. Talisker Storm Initial brine, but not as abrupt as the 10 Year Old, quite creamy by comparison. Window putty, hint of sticking plasters and barbecues, citrus. White pepper develops towards the bottom of the glass. Talisker Skye Honeyed toasted oak, sappy wood, only a little pepper and smoke, apple turnovers and hints of lemon and lime Opal Fruits. Talisker Port Ruighe After a wave of initial sea spray, the nose becomes more complex with Crayola crayons, orange pith and a touch of white chocolate. Demerara and even sticking plaster emerge briefly along with plummy, umeshu notes. Talisker 57 North Thick and full. Creamy manuka honey and lemon juice, notes of peppered oak and spice, a little butter and plenty of dry wood on the palate. The finish is long with black pepper and dry oak.
