The regions of Scotland are the 1

2 Lowlands, the Highlands, Campbeltown and the island of Islay all having their own origins in the regulation of licences and duties, but they do also embrace certain characteristics. The Lowlands This area tends to produce softer malts, without the peat of the Highlands or the brininess of the coastal malts. The Lowlands is defined by a line following old county boundaries and running from the Clyde estuary to the River Tay. The line swings north of Glasgow and Dumbarton and runs to Dundee and Perth. The Highlands, Islands and Speyside By far the largest region, the Highlands embraces wide variations in style. The western Highlands have only a few scattered distilleries, and it is difficult to generalise about their character. If they have anything in common, it is a rounded, firm, dry character, with some peatiness. The far north of the Highlands has several whiskies with a notably heathery, spicy, character, probably deriving both from the local soil and the coastal location of the distilleries. The more sheltered East Highlands and the Midlands of Scotland (sometimes described as the South Highlands) have a number of notably fruity whiskies. None of these Highland areas is officially regarded as a region, but the area between them, known as Speyside, is universally acknowledged as the heartland of malt distillation. This area, between the cities of Inverness and Aberdeen, sweeps from Granite Mountains down to fertile countryside, where barley is among the crops. It is the watershed of a system of rivers, the principal among which is the Spey. Although it is not precisely defined, Speyside is commonly agreed to extend from the River Findhorn in the west to the Deveron in the east. Within this region are several other rivers, notably the Livet. The Speyside single malts are noted in general for their elegance and complexity, and often a refined smokiness. Beyond that, they have two extremes: the big, sherryish type, as typified by The The Macallan, Glenfarclas and Aberlour; and the lighter, more subtle style. Within Speyside, the River Livet is so famous that its name is borrowed by some whiskies from far beyond its glen. Only one may call itself The Glenlivet, only Braes of Glenlivet and Tamnavulin are produced in the valley, and only Tomintoul in the parish. These are all delicate malts, and it could be more tentatively argued that other valleys have malts that share certain characteristics. The Highland region includes a good few coastal and island malts, but one peninsula and just one island have been of such historical importance in the industry that they are each regarded as being regions in their own right. Campbeltown On the peninsula called the Mull of Kintyre, on the west coast of Scotland, Campbeltown once had about 30 distilleries. Today, it has only two. One of 2

3 these, Springbank, produces two different single malts. This is achieved by the use of a lightly peated malt in one and a smokier kilning in the other. The Campbeltown single malts are very distinctive, with a briny character. Although there are only three of them, they are still considered by serious malt lovers to represent a region in their own right. Islay Pronounced "eye-luh", this is the greatest of whisky islands: much of it deep with peat, lashed by the wind, rain and sea in the Inner Hebrides. It is only 25 miles long, but has no fewer than eight distilleries, although not all are working. Its single malts are noted for their seaweedy, iodine like, phenolic character. A dash of Islay malt gives the unmistakable tang of Scotland to many blended whiskies. Tasting notes We have included a brief tasting note for each of the many single malt whiskies on our list which we hope will prove useful to both the novice and seasoned drinkers. By their nature, tasting notes are always subjective and so you may not agree with what we say! We are indebted to the many different sources who have provided these notes, not least which provides a wealth of information for the whisky enthusiast. Slainte mhoiz and slaandjivaa 3

Clynelish distillery can be found near Brora, a popular resort with golfers and fisherman. Clynelish is renowned for its briny coastal character. A beautifully balanced finish crowns the experience Boisdale Auchroisk 1998 Speyside Boisdale Auchroisk distillery, (pron. Othrusk), started producing in A major contributor to some famous blends, it is seldom seen as an independently bottled whisky. This single cask expression has a classic Speyside style nose with plenty of fresh soft yellow fruit, well woven sweet barley and oak. The finish is clean, refreshing, uplifting and perilously moreish finale Boisdale Longmorn 1992 Speyside Floral and opulent on the nose, backed up with well-varnished oak, this Longmorn starts the charm offensive long before it gets anywhere near the palate! There s a lovely, sweet attack on the tip of the tongue with roundness provided by the wood and malt undertones. Scottish strawberries and Devon cream crash around the mouth wrestling for supremacy with the luxurious macadamia nut texture. Caramelised peaches, old rosehip, and oozing honeycomb flesh out the forget-me-not finish

5 Boisdale Linkwood 1991 Speyside The picturesque linkwood distillery, founded in 1821, is one of the Speyside region s hidden gems. The Victorian buildings remain despite much updating and expansion during the 1960 s and 70 s. Swans and ducks swim on the distillery dam which provides cooling water for the condensers. Fruit and floral aromas abound with peach skin and vanilla coming to the fore. The delicately smoky palate has a balanced and complex feel, building to deliver nectarine, sugared almonds with sweet floral intensities towards the satisfying elegant finish Boisdale Teaninich 1973 Highlands Beguiling and fruity with perfumed aromas emerging. Passion fruit, a touch of lime and polished oak invite further exploration. The palate delivers waves of vanilla, yellow fruit and honey with some toasty influence. A little liquorice kicks in heralding the graceful finish

6 666 Aberfeldy 12yrs 40% Southern Highlands, bottled by Gordon & MacPhail On the nose we find orange zest, incense and a touch of sherry. The finish is like biting into a kumquat; then a long, fruity glow. 847 Aberlour a bunadh 59.9% A wide spectrum of saturated shades of sherry and a very fruity nose. Big sweet and woody cask strength malt with lots of oak in the finish. Softer and sweeter when diluted. 633 Aberlour 10yrs 40% 9.50 Nutty, with nutmeg and a hint of cinnamon. Although peated it is very brandy like and warming. Not overly challenging but quite satisfying, particularly with dessert. 845 Aberlour 16yrs 43% Aberlour 16 year old has been double matured in traditional oak and sherry casks. Intense, honeyed flavoured, complex, with fabulous spicy wood notes lingering & mouth-watering finish. 846 Aberlour 18yrs 43% Notes of chocolate & orange zest, with soft flavours of cream, peach and apricots, & a warm soft finish. 634 Aberlour 15yrs Sherry Cask 40% Complex and sophisticated a perfect balance of sherry and the malty, spicy, house character. The two elements are tightly combined, with the spicy flavours emerging slowly: nutmeg, aniseed and emphatic orange flower. Long, soothing, with a minty and spicy finish. 635 Ardbeg 10yrs 46% Islay, distillery bottling The nose is amazingly smoky with a whiff of tar covered rope. The palate is robust with more peat smoke and the flavours of turf and Lapsang Souchong. A long finish with a fragrant peaty reek. Whilst flavour packed, this is still a delicate Scotch. 651 Ardbeg Uigedail 54.2% Islay, distillery bottling Pronounced 'Oog-a-dal.' A fine drop of Ardbeg bottled at cask strength. A marriage of Ardbeg from bourbon barrel and sherry butt which gives a sweet and smoky finish to this malt. Uigeadail is the loch from which all Ardbeg water flows. This 'huge' dram is, in the best traditions of Ardbeg, intense. 6

The palate is silky with fruitiness, usually reminiscent of lemons, with a momentary suggestion of cherries. The flavours become almond and walnut-like, then rooty and peppery. A long dry finish with chocolate malt and crushed peat. 836 Ardbeg Single Cask 49.9% Islay, distillery bottling for Verdier in Italy 1 of 246 bottles Of the many 72 cask Ardbeg has released this is one of the finest. Bottled from a single refill for Italy in 2003, over half the cask were returned to the distillery due to legal issues after the sale of Glenmorangie in At the distillery almost all the remaining bottles were used in tastings and such research. This remains, as a result one of the rarest of all Ardbeg bottling. The whisky itself is quite simply stunning the nose is rich with layers of dense oily phenols, tropical and green fruits, with an unusual distinctive medical streak running through it. On the palate the ancient peated malt detonates and after 31 years still come through clean and balanced. The familiar Ardbeg harmony is here in spades, floral, citrus character on the finish and immense simmering, sinewy creosols and tar all over the mid palate the medicinal aspect is now concentrated iodine. An amazing Ardbeg and a stunning drink that totally challenges and beguiles the senses. 652 Auchroisk 10yrs 43% Light soft and creamy. A dry, sharp nose, becoming sweeter and creamier with some light caramel and heathery overtones. 653 Bowmore Darkest 15yrs 43% Islay, distillery bottling The sherry aroma is fantastic, together with almonds and mature oak. The peaty notes become an excellent foil to the fruity flavours and do not allow the sherry to totally dominate. Hints of the sea drift in given a little time in the glass. Soft over ripe dark grapes flood the palate like an incoming tide. It s rich, but not over the top, due to the wonderful heather fire smoky flavour you will find on the back palate. A warm chocolate sweetness runs throughout. 631 Bowmore 18yrs 43% Islay, distillery bottling From the oldest distillery on Islay, the nose of the 18 year old has autumn leaves on a damp woodland floor with heather, wood smoke, and waxy apple peelings, with a citrus fruitiness. On the palate there is a lot more evidence of the large number sherry casks used at Bowmore. Intensely floral with more citrus and chocolate. A complex whisky that changes and develops in the glass, very much a whisky that rewards time and patience. 657 Bowmore 25yrs 43% Islay, distillery bottling Full and round, with a gentle softness, the nose has a strong herb like fragrance overlying the sherry and peat notes. The palate has plenty of sherry, but surely as night follows day, you will find the oak, the smoke, the brine, the ozone, ending with toffee and hazelnut. The finish is mellow, gentle and warming. Hints of boiled sweets. 849 Caol Ila 25yrs 43% Islay, distillery bottling Without water, immediately sweet and fruity with balancing bitterness. The balance is sublime and the mouthfeel is perfectly rounded. A great 14 year old Highland malt, quite coastal too. 669 Cragganmore 12yrs 40% Intensely, nearly overwhelmingly, perfumed, especially with a splash of water. 14 In 2006 Glenfarclas was named distiller of the year by Whisky Magazine. They were nominated for the award for being consistently good and staying true to our core values. For six generations everyone at Glenfarclas has taken personal pride on the quality of the whisky we produce, so it was a great pleasure that these values should be recognised by the industry. It was this pride and sense of history which lead us to create a collection of limited edition. Glenfarclas expressions The Family Casks John L S Grant (Glenfarclas 2006). BIN Number of bottles ABV Per 50 ml 824 Glenfarclas Family Cask % There is lots of nuttiness and marzipan on the nose, with vanilla trying to fight its way forward. At 57 years old, this is the oldest bottling of Glenfarclas to date. 825 Glenfarclas Family Cask % A very rich, dark whisky, which reflects almost no light through the bottle. Strong, rich tannins are immediately present on the nose. However, you will also experience lots of sherry, rich stewed coffee, a fresh bag of liquorice; many different aromas as this delightful whisky is released into the air. After about 20 minutes you might even sense macadamia nuts. This is a very big, heavy whisky rich in alcohol soaked fruit. Almost bitter to begin with, then a delicate sweetness present. A strong double espresso immediately comes to mind. It has a bitter, dark chocolate aftertaste, present for a very long time. In short, a fantastic whisky. A great treat. 826 Glenfarclas Family Cask % A lovely rich, dark whisky colour more often associated with a dark cognac. A big heavy sherried whisky; great if you like them big and powerful. This bottling is more than 40 years old but has lost none of its appeal. Still strong but not overpowering. The thick, powerful nose is bursting with sherry and Demerara sugar. The lovely malty flavour keeps pace with the powerful rich viscous flavours of sherry. 16 In the summer of 1886 Glenfiddich s founder, William Grant, set out to fulfil a lifelong ambition of creating the 'best dram in the valley'. With the help of his seven sons and two daughters, William built his distillery in a single year. Their hard work was rewarded on Christmas Day 1887 when the first drop of spirit flowed from the small copper pot stills. William named his distillery Glenfiddich, Gaelic for 'Valley of the Deer'. Over 120 years later, Glenfiddich is one of the few single malt distilleries to remain entirely family owned and the whisky has become the world's most awarded single malt, a true reflection of the passion, integrity and innovative spirit that have been passed down through the generations. 755 Glenfiddich 12yrs 40% The first whisky to truly market itself as a single malt, Glenfiddich now accounts for about 30% of all single malt sales. worldwide. 704 Glenfiddich 15yrs Solera 40% Three different types of casks is married together in a wooden vat, which is constantly topped up in solera style. 851 Glenfiddich 18yrs 40% An elegant nose, faintly sweet, scented with apple and wood. 17 Glenlivet is a special place in Speyside. Translated from Gaelic, the name means valley of the smooth-flowing one. Those who christened it were most likely referring to the River Livet, which surfaces high in the Ladder Hills and meanders down to join the Avon. But something altogether more sought-after has been flowing here for centuries: whisky. 711 The Glenlivet 12yrs 40% 8.95 Fresh vanilla and caramel aromas mingle with the scent of cooked fruit. Delicate in texture, a hint of spice, smoke and butterscotch is followed by a subtly spicy finish. 712 The Glenlivet 15yrs French Oak 40% Rich vanilla and floral nose with, again, cooked fruit showing through in the palate. Custard, fudge and citrus zest with an oaky spice finish. 823 The Glenlivet 18yrs 40% Elements beautifully combined. Depth of flowery aromas. Very light touch of fresh peatiness. An intricate array of wood and fruit: Christmas cake, sultanas, maraschino cherry. Water enlightens the fruity bouquet and brings out vanilla and lighter notes of ripe peaches. Pear and marzipan pie. Luscious barley sugar aromas. This full-bodied whisky is unctuous and mouth coating, almost syrupy. Oak holds the reins back, releasing a drying spiciness of cinnamon, ginger, walnut and dark chocolate. Seriously smooth whisky! 17

18 814 The Glenlivet 25yrs 43% The Glenlivet XXV is the perfect tribute to the skill and judgement of the craftsmen involved in making this special whisky. The original new spirit character, fruity and floral, has been faithfully retained during years of careful maturation. The final finish in rare ex-sherry butts yields a sublime, intense whisky of powerful yet elegant character. The sherry shows itself with luscious fruity and spicy note with creamier notes rising. Orange crème brûlée; candied fruit; pineapple. Silky and caressing the palate is sweet at first then releasing a full bunch of spices; ginger, cinnamon, allspice, nutmeg. Developing dark chocolate and orange peel. 819 The Glenlivet 1964 Cellar Collection 45.1% Hand selected from The Glenlivet cellar by Master Distiller Jim Cryle. Notes of sherry and walnuts interplay with a spicy oakiness. Full and wonderfully smooth on the palate with the perfect balance of sweet plums and the deep floral extravagance of heather in bloom. 648 The Glenlivet 1973 Cellar Collection 49% The 1973 Cellar Collection is a rare style of whisky thanks to its age and cask profile: a single ex-sherry butt and two refilled American oak hogsheads have been hand-selected as the absolute zenith of the stock available from that vintage and the result is a rich, sherried expression.
