2 SMWS & VICTORIA CRAFT BEER A MATCH MADE IN HEAVEN Beer and whisky go hand in hand. You literally can t make whisky without making beer first. It s been a Scottish tradition for centuries to drink a hauf an a hauf - a wee dam of whisky and a half pint of ale. From my time working the bars of Edinburgh, I ve experienced many combinations of whisky and beer - but I honestly never thought too much about which beers go with which whiskies. It seems that there isn t really a set list of rules that have been written either. So I ve enlisted The Strath s resident beer man Mr Dan Cox to help us compare, contrast and combine. 3 JUICY, OAK & VANILLA UNCLE DUNKEL S Odyssey dunkel CASK NO An Odyssey of flavour Complex beyond its years, the panelists were delighted to find fruity ripe mango with spiced sugar syrup, quince jelly and tart black cherries integrating most wonderfully with liquorice cake, treacle tart with soft short crust pastry and creamy custard. In the background appeared an interesting woody backbone of a French polisher's toolbox, damp forest floor and sweet balsa wood. Water released dried herbs in a farmhouse kitchen with welly boots and wax jackets by the door, fennel and coriander seed, fresh sweet carrots and homemade ginger beer with dandelion and burdock. After 12 years in an ex-bourbon hogshead it was transferred to a virgin oak hogshead for the remainder of its maturation. When you are in no hurry and can give it the time and contemplation it deserves. SOLD OUT MOON UNDER WATER CREEPY UNCLE DUNKEL Sweet aroma of toasted malt, caramel, bread, nuts and raisins. Flavour of roasted malt, caramel, molasses, dark fruit and nuts. 4 SPICY & SWEET Entre Punch CHERRY WIT CASK NO Flaming red wine punch HOYNE ENTRE NOUS The aromas neat gave us a warm glow in our hearts, boozy rum baba with Chantilly cream, a seriously sherried jelly berry trifle and a Feuerzangenbowle (flaming red wine punch!). The taste, fruit and spice and all things nice like gingerbread cupcakes with creamy brown sugar frosting. Water added a spicy sponge cake with rum soaked raisins, candied oranges and kumquats and on the palate, a rum rich Planter s Punch! After 14 years in an ex-bourbon refill hogshead, we transferred this whisky directly into a Sauternes cask for the remainder of its maturation. For those cold, dark, dreary days. BOTTLE PRICE $ Fresh cherry! A slight waxy surface to the sweet and tanginess in the cherry scents. Thanksgiving stuffing! A slight wateriness once it coats the entire palate. 5 SPICY & SWEET NAUGHTY & CURIOUS CONUNDRUM ESB CASK NO A curious and eccentric conundrum This nose was a curious and eccentric conundrum - earthy bass notes of pepper, burnt twigs, tarry wood and salty sweetness growled resonantly with sugared almonds and meatballs, yet we also found trills, triplets and tremolos of fruit (pomegranate, banana, wine gums) and even flowers. The palate also had this odd salty/sweet combination chocolate, toffee and ice-cream ricocheting off seasalt, sardine and salted caramel. The reduced nose suggested salt and vinegar chips, lavender and a Bloody Mary sprinkled with celery salt. The palate remained mouth-tingling, with dark honey, salt and wood odd as three different socks but very tasty. Something to keep you amused while preparing dinner (or washing socks). DRIFTWOOD NAUGHTY HILDEGARD Floral and leafy hops, caramel malts, and tropical fruit. Toasted bread, liquorice sweetness, bitter floral and leafy hops. Finishes smooth with the hops lingering. 6 SPICY & SWEET DUBBEL SHERRY dubbel CASK NO SHERRY, SHERRY BABY Category 12 INDUCTION Looking at the colour, noting the age and nosing it this one could not hide its provenance. Aromas of powdered ginger, ground cloves and cinnamon mixed with blood orange segments, dark sour Morello cherries and bacon frazzles making this quite an experience. Just wait until you ve tried it! Full-bodied with plenty to tell; wood spices, tart apples and plenty of sour cherries, but at the same time dark bitter chocolate notes. Diluted, spicier with slightly herbal aromas appeared as well as honey- like syrup from sun drenched figs and on the palate, goat cheese blended with mascarpone, roast beetroot and walnuts. Is it Sherry o clock yet? Sweet, with hints of Belgian yeast. Toffee, caramels,and bready hints. 7 peated KEEKEN KITTY PILSNER CASK NO BIG PERSONALITY (NO PUSSY-CAT) The nose was deep and rich (like a millionaire s pockets), with tarry ropes and wetsuits on a pier, a night-club bouncer s leather trousers and sneakers, struck match, Germolene, syrup of figs, Branston pickle, balsamic and embers from a seafood barbeque. The neat palate was salty, smoky and sweet a big personality of a dram delivering sweet pickled onions, anchovies, burnt raisins, treacle, bonfire ash, sherry and biltong. The reduced nose found mussels, sea water and wet sand with a hint of new leather. The palate became softer and sweeter (but still no pussy-cat) raisins and lemon peel in a fruit cake. With food even a fish and chip shop takeaway. twa dogs keekin glass Sweet, soft grains, refreshing floral citrus. Light fruit, subtle hops crisp.
