3 Campoberry An explosion of flavour! Campoberry, founded in 2008, is located in Güemes, Cantabria, in the north of Spain. The company remains faithful to its founding principles and has become a leading company in the production and sale of berries, especially organic blueberries. We work with a select group of producers who share our passion for organic blueberries and Campoberry has plantations in Cantabria, Asturias, País Vasco and Galicia, of approximately 80 hectares, the largest part of which are not yet productive or are at the start of the production phase. To meet the demand from our clients, we have a range of select plants with an extensive production season with the following dates: EARLY: From the start of the season to July 15 (ONEAL, DUKE, BLUECORP, REKA, BLUEJAI) MID SEASON: from July 1 to August 15 (BRIGITTA, LEGACY) LATE: from August 1 to September 1 EXTRA LATE: from September 1 until the end of the production season Testing and innovation has allowed us to extend our production season until the end of November.

5 Caprichos del mar Enjoy the taste of the sea We are a family business founded in Santander in the early nineties. The privileged setting in which we find ourselves, a beautiful coastline bathed by the waters of the Cantabrian sea, allows us to have direct access to raw materials of the highest quality. As a result we developed a range of pâtés whose main ingredient is fresh seafood that continually arrive at the factory. Lobster, crab, salmon, anchovies or Galician-style octopus are some of the references. Since we founded the company we have followed two fundamental principles: Our products are made following artisan tradition, born of the experience of many generations they bequeathed their knowledge based on hard work and common sense. A traditional scent that is part of pâté obtained following ancient seafaring local recipes. The taste should be 100% natural, paying close attention to the texture of our pâtés, as great companions and enhancing flavors of dishes, kebabs, creams, etc. Therefore we avoid adding any preservatives, colorings or additives that alter the final taste of pate. What comes from the sea must taste like the sea. Always concerned of consumers tastes, we investigate and brought to market those products that they claim to us. In this way new specialities have been launch like velvet crab pâté and sea urchin pâté. Both references, along with pâtés of lobster, crab, scorpion fish and Galician-style octopus, all of them bear the mark "low in fat ", for the public concerned about eating tasty and quality food but with a smaller number of calories. Definitely a distinctive sign with respect to similar products of the market. The seafood of quality, along with the benefits of extra virgin olive oil or Omega 3 fatty acids that they have, involve the consumers of our pâtés in all the healthful benefits of the Mediterranean diet.

9 ANCHOAS HOSTELERIA El Capricho Preserving the authentic taste of the sea El Capricho is a family business located in Santoña, small traditional fishing village with a rich history, known as the birthplace of canned anchovy. After a quarter of a century, we are commited to providing a healthy and nutritious product, and guarantee quality and excellence. We exclusively produce a high-level canned anchovy and white tuna, fished directly from the Cantabrian sea (Bay of Biscay, FAO27). Both our anchovies, caught during the spring fishing season, and our white tuna, caught in summer season, are highly appreciated. El Capricho products are part of the Mediterranean diet. They are heart-healthy due to their omega-3 fatty acids and also contain other essential nutrients, as proteins, vitamins and minerals. The production process is essentially traditional, and rely on the hand-crafted experience of skilled workers. This results on an outstanding product: anchovies with characteristic flavour, reddish colour and meaty texture, and white tuna with tender meat and mild flavour. They are ideal for both individual taste or for using on toasts and salads.

10 Why are so exclusive the anchovies of Conservas El Capricho? El Capricho anchovies (Engraulis Encrasicolus) are exclusively fished in the Cantabrian Sea (Bay of Biscay, FAO 27) The complete elaboration process (including evisceration, maturing, filleting and canning in oil is carried out in Santoña (Cantabria). Its process of maturing is long and slow, lasting -18 months minimum. After curing, anchovies have eliminated all grease and obtained its intense aroma, uniform reddish colour, meaty texture and exceptional taste. The anchovies are wringed out before hand-filleting, which produce a low-salt fillet (7.3 grams of salt per 100 grams of anchovy). This process also extends its lifetime, getting a months expiry date. In an age-old process, the filleting is carried out by quick-fingered women that manually deboned the fish and canned them. All our products are certified by the Quality Cantabria and the Cantabrian Anchovy seal, that goes and step further and focuses on the origin, the fishing season, and the production process of the anchovy, three key aspects in high quality canned anchovy. We only use fresh Thunnus alalunga, caught in the summer season. Unlike ordinary tuna, white tuna contains more omega 3 fatty acids. 12 Three oils Our aim is to offer the best taste experience. To achieve it, we offer different types of oils. For those with a refined palate we have the high oleic sunflower oil, with a neutral flavour and smell. It has a higher amount of fatty acids (Omega 3) than the standard sunflower oil and is appreciated in highend catering because of the fact that it liquefies quickly to its original consistency after being in storage. Alternatively, refined olive oil is an option to those who desire a soft smell and flavour, with low levels of acidity. Finally, a selected Castillo de Canena Extra Virgin Olive Oil, 100% arbequina, harvested in December with a well-harmonised, soft taste. Awarded with the Flos Olei 201, The Best Olive Oil Company in the world with a perfect score (98/98) for the fourth year running. We pack all our products into cans, protecting them against external agents as light or odours. What is Salmŭria? During the maturing process, heavy weights keep the fish compressed in the brine and then it soon leaches liquid from the anchovies. We have called it Salmŭria or liquid umami. It enhances food with its natural salty flavour and amber colour. It is very appreciated by chefs because of its qualities in high-end cuisine for enhancing flavour, curing, tenderize and modify food structure. And last but no least, the Salmŭria makes our dishes even more juicy than salt. 27 A new version: Cheese "Nevado de Los Picos" Our search for new flavors resulted in this cheese in With it we looked for a more balanced flavor so that those who do not enjoy strong cheeses can also know what the Picos de Europa tastes like. 29 SWEETS PASIEGOS What is a "sobao pasiego"? The "Sobao Pasiego" is a typical sweet of the Pasiegos Valleys, an area located in the southeast of Cantabria (Northern Spain). Our sobaos have the Protected Geographical Indication Sobao Pasiego. This valley has an ancestral tradition linked to the ground and its raw materials. While the men called "Pasiegos" gathered the harvest and tended the cattle, the women called "pasiegas" made craft desserts with the products that the valley provided. "Sobao Pasiego" is a sweet with resemblance to the sponge cake made with flour, butter, sugar and eggs. Its characteristic mold is a white paper called "gorro". It can be eaten for breakfast with a cup of milk, hot chocolate or coffee. It can also be consumed as an appetizer at any time of the day. Currently the Spanish Chefs are using it in their recipes. Tasting note: Nice and clear appearance slightly colored, refined nose, characterful floral taste with a nicely lingering finale aromatic persistency while alcohol fades away. 43 GINS AND VODKA Siderit Vodka Lactée Transport: Room temperature Siderit Vodka Lactée 40% Vol. FORMAT / UNIT (ml) 700 ml. Siderit Vodka Lactée is an ultra-premium vodka, delicately produced, out of the alcohol obtained from the fermentation of the milk sugars. After several distillations through a fractioning column, a very pure alcohol with different taste notes is obtained. To close the process, the distillate is diluted with spring water with the lowest mineral content in the Iberian Peninsula, from Ortigosa del Monte at the Northern slope of the mountains of Guadarrama. Quadruple filtration on a equipment worthy of the best laboratories, with natural filtering materials, that remove any impurity in its itinerary for more than 24 hours. Finally, the vodka is equilibrated in a tank for a minimum of two months to reach its maximum splendour. Tasting note: Elegant, pure, and clean vodka with personality and character, with a nice bouquet of aromas and flavours. Colourless, oily texture, fully transparent, refined nose, clean fragrance. Good structure and good gustatory quality, high alcohol level but well integrated, no acidity but only sweetness from the alcohol. Very long final aftertaste, spicy finish, good harmony. Siderit Vermouth Transport: Room temperature Siderit Vermouth 15% Vol. FORMAT /UNIT (ml) 700 ml. The product elaboration starts from a two month period maceration of a set of more than 100 herbs, hydro alcoholic solution. The product is aged in sherry casks to stabilize flavors and color. Tasting note: Vermouth has notes of red mahogany intense color with amber glows with low graduation and smooth clean product turbidity. The nose is very intense with notes of wild flowers, aromatic and spicy herbs and a touch of wood. We also found balsamic notes wich provide us with a nice bitter touch. The palate is soft but with a perfect balance with the product acidity. Long and unique aftertaste with intense bitter notes, that shows the high quality of the product.
