1 [For Immediate Release] Le Club des Chefs des Chefs Culinary Affairs of State Galaxy Macau to host charity event with the world s most exclusive gastronomic society (MACAU, 20 October 2017) Supported by the Macao Government Tourism Office and the Institute for Tourism Studies, Galaxy Macau is proud to join forces with Le Club Des Chefs des Chefs to host a charity Gala Dinner at The Ritz-Carlton, Macau Ballroom, Galaxy Macau on 29 October Five esteemed members from the club will design an exclusive menu with Galaxy Macau s award-winning chefs. Known as the world s most exclusive gastronomic society, Le Club des Chefs des Chefs is an elite club whose members are currently the personal chefs of heads of state. One of the society s primary purposes is to promote major culinary traditions and to protect the origins of each national cuisine, also aiming to develop friendship and cooperation between its members, who have similar responsibilities in their respective countries. The five jewels in the crown from Le Club des Chefs de Chefs visiting Macau this time include: 1. Fabrizio Boca, Executive Chef in the Palace of the Italian President 2. Christian Garcia, Executive Chef to Prince Albert of Monaco 3. Julien Dugourd, Chef pâtissier at the Chateau de la Chévre d'or à Eze, Monaco 4. Jerome Rigaud, Executive Chef to the President of The Russia Federation 5. Hu Tao Sheng, Former Banqueting Executive Chef at the Great Hall of the People of People s Republic Of China In the spirit of sharing in gastronomic culture, four award-winning chefs from Galaxy Macau will also collaborate to create dishes for the special menu. Participating chefs include: 1. Chef Bill Fu of the Michelin-starred Lai Heen 2. Chef Antimo Merone of Michelin-starred Otto e Mezzo BOMBANA 3. Chef Andrea Fioravanti of Michelin-starred Terrazza Italian Restaurant

Chef Akira Hayashi of Michelin-recommended-restaurant Yamazato The tailor-made menu includes Duck Foie Gras Terrine, Prune Chutney, Warm Brioche, Mediterranean Sea Bass, Provencal Vegetables, Barigoule Jus, and Medallion of Veal Fillet, Truffle Celery Mousse, Wholegrain Crust, Sage Jus. The dinner will be priced at MOP 2,888* per person. Every participation helps to enable the beneficiary Orbis Macau to prevent and treat avoidable blindness around the world. Terrazza A Love Affair with Italian Cuisine Fabrizio Boca has spent most of his working life in the kitchens at the Quirinale Palace, the official residence of the President of Italy, where he is now in charge as Executive Chef. Guests at Terrazza Italian Restaurant will be treated to a menu comprising classics that highlight the rich geographical diversity of Italian cuisine. The evening begins with a colorful Panzanella Salad served with octopus and crunchy celery, before moving on to a pasta course of Tonarello Cacio e Pepe square-cut spaghetti with Pecorino cheese and toasted black Madagascan peppercorns. His Lobster Salad reflects a Sardinian influence, while Oxtail Vaccinara is a distinctively Roman dish. A superb menu concludes with Boca s Signature Tiramisù. 3 A taste of the Cucina Della Riviera served to the Royal Household of Monaco comes to Belon for two nights, as President of the Club des Chefs Des Chefs Christian Garcia takes over the kitchen. On both evenings after a special Amuse Bouche diners will experience Chef Christian s Oyster Jelly with Eye of the Tiger Ossetra Caviar, followed by Royal Garden Pumpkin Soup with Truffle Egg. The main dish on Friday October 27 will be Macaroni Chartreuse Grimaldi with Coral Lobster Mousse and Lobster Nage, with a change on Saturday October 28 to Herb Crusted Lamb Loin with Chanterelle Mushroom and Stuffed Onion. Both dinners will conclude with the refreshing tang of Mediterranean citrus in the form of Chef Christian s Lemon Boule with Linzer Sour Meringue. His menu for Festiva harks back to his time as head of the Kremlin s kitchens. A mouthwatering dinner buffet in traditional Russian style will include classic dishes such as herring salad and the nation s signature soup -- borscht made with beets. Also on the menu is a starter of Olivier Salad with quail and crayfish, followed by a main of Beef Stroganoff with potato crush. Medovik, a layered honey cake, and Zefir, a marshmallow like fruit dessert, provide a final note of sweetness.
