Of course we don t ever like to admit that what we had before this change could be better, but the reality is that yes, it can be made even better. And so we ve done it with these little envelopes of raviolis. We wanted to improve the taste of the fillings. After all, that s why you buy a filled pasta. Working with our supplier, we ve made many changes. There s more filling in every bite because we made the pasta wall thinner. Next we increased the amount of the filling by making the pocket bigger think bigger ravioli/ tortellini. We improved the fillings dramatically using fresher ingredients and more of them: more and better cheese, for instance. The pasta is now all egg instead of egg and water. The flour is 100% semolina, instead of a mixture of semolina and durum wheat, and that results in more tender pasta. There are multiple options pick your favorite: jumbo sizes, tortellini, tortelloni, fillings of spicy Italian sausage, or ricotta and basil or ricotta and spinach. There are fillings of portobella mushrooms or three cheeses and other tasty Italian-inspired combinations. There is also a Club Pack, to make the pasta more affordable for larger families. It s actually two 20-oz. packages bundled together. That makes it easy to have pasta tonight and then pasta again next week. There s a shelf life of several weeks, although our everything-italian merchant Dan Mezzoprete tells me these go really quickly at his house!
