4 EXECUTIVE CHEF SHAWN APPLIN A native of upstate New York, Shawn Applin s first culinary influence came from his grandmother and the rustic Sunday suppers she used to prepare for the family. Later, after graduating from the Culinary Institute of America in New York, Shawn moved out west and put that ethos to work at restaurants including San Francisco s Fog City Diner and Scala s Bistro, and Seattle s Flying Fish, where he worked alongside James Beard Award-winning chef Christine Keff. When he s not in the Outlier kitchen, Shawn prefers to spend his time hitting the links or sailing the Caribbean.

13 EVENT GUIDELINES CATERING CONTRACTS Once a contract has been drafted for your upcoming event, please read and confirm all details are correct (including contact information and event details.) Once we have the signed contract, completed cc authorization and deposit amount, the space is confirmed for your event. PAYMENT PROCEDURE A 25% deposit is required to hold the space. Our accounting team will reach out after receiving the credit card authorization form for your full credit card number. Unless otherwise noted, the card on file will be charged for the remaining balance (1) business day post-event. Once your card has been charged, you will receive a zero-balance folio for your records. EVENT ORDERS Any and all updates to menu item selection and/or final counts must be received no later than 3 business days in advance of event date. No reduction in guest count will be accepted within 3 business days of event date. We do understand that plans change, the catering team will do our best to accommodate any last minute requests. Any changes made to menu item selection within 3 business days of event date will reflect an additional $5.00 per person fee. Should menu item selection and/or final counts not be received 3 business days in advance of event date, menu item decisions will be made at the chef s discretion and feature no more than three entrée selections. SETUPS + F&B MINIMUMS Page 2 or your catering agreement outlines the contracted food & beverage minimum you agree to pay. This page also lists our agreed upon room layout. Changes to the agreed upon layout within 3 business days of your event could result in room reset fees.
