Local legend has it that to oceans tides meet at this point, confusing the fish causing them to jump out of the ater giving the pearance of complete madness. 8 To re-order your favourites phone Lamb Cutlets ith Macadamia Dukkah lamb cutlets / cup plain flour salt freshly ground black pepper eggs tablespoons milk cups soft breadcrumbs Oil, for shallo-frying Portioned serve of Macadamia Dukkah Trim any excess fat from the lamb cutlets. Mix the serving of Macadamia Dukkah ith cups of breadcrumbs. Add salt and pepper to the ½ cup of flour, and put on a flat plate. Beat the eggs and milk together ith a fork in a shallo dish. Coat both sides of each lamb cutlet in flour, shaking off any excess. Dip the cutlets in the egg mixture and then in the macadamia and breadcrumb mix, pressing the mixture on ith the palm of the hand to secure. Place the cutlets in a single layer on a tray, cover and refrigerate for minutes (this ill help to keep the breadcrumbs on during cooking). Preheat the oven to 80 C. Heat the oil in a large frying pan on medium heat (the oil is hot enough hen a cube of bread dropped in begins to bubble immediately). Cook four cutlets at a time for minutes on each side, or until the crumbs are light golden. Drain the cutlets on per toels before transferring them to a baking tray.
