Made from hite Muscat gres the desired style is achieved by cturing the natural fruit and spice aromas that exist in the gre. The fermentation of this ine is stopped hen partially complete to achieve to goals. The first is to keep this ine naturally loer in alcohol and the second is to allo the ine to have a higher residual sugar level, giving the ine its seet taste. The fruit as harvested in the cool of night and delivered in small batches. To preserve the delicate cool climate aromas and flavours, the fruit as gently crushed, chilled and pressed immediately.
