A U S T R A L I A S W I N E R E G I O N S 65 registered GI wine regions. Most of the key grape growing regions are located in the South Eastern part of Australia. South Australia (the home of Jacob s Creek) is the major wine producing state, comprising 48 % of vineyard area, 43 % of grape crush and 49 % of wine production in Australia in PAGE 10

AUSTRALIA S CLIMATE FOR VITICULTURE The climate of all of the South Eastern area of Australia is temperate which is suitable for growing grapes. In particular, the Mediterranean-like climate in parts of South Australia and Western Australia is excellent for viticulture. Different areas are described as being warm, moderate, cool or cold climate viticulture regions. This thermal map shows the daily maximum temperature during January, the critical time when veraison (the onset of grape ripening) occurs in Australia. 12 V I T I C U L T U R E & W I N E M A K I N G For Jacob s Creek the primary focus of our viticulture effort is on GRAPE AND WINE QUALITY. We believe that wine quality begins in the vineyard, so we have EXACTING STANDARDS for quality and we adhere to them strictly. Our winemakers and viticulturists COLLABORATE with our growers to ensure the right quality specification grapes are being grown. Jacob s Creek winemakers spend a lot of time in our own and grower vineyards discussing STYLE, QUALITY & ASSESSING fruit PAGE 12

W I N E M A K I N G P H I L O S O P H Y HIGH QUALITY WINES IN CONTEMPORARY AUSTRALIAN STYLE, THAT ARE FRESH, ELEGANT, GREAT TASTING AND EXPRESS TRUE VARIETAL CHARACTER. HIGH QUALITY At Jacob s Creek, quality comes from having high standards in everything we do. As always with wine, quality starts in the vineyard, and an important aspect that differentiates Jacob s Creek is our focus and dedication at this critical stage. Our grape purity standards are among the highest in the industry, and we work closely with our growers to achieve these each vintage. Our viticulture team makes multiple trips to all the vineyards commencing 3-4 months before harvest begins, and every single vineyard that we source grapes from is visited and assessed by one of our winemakers during vintage. In fact, we give every block equal attention, regardless of whether the grapes are destined for our Classic range or for our icon wine Johann. It is one of the reasons that Jacob s Creek wines have always delivered excellent quality at every price point. After harvest it is the winemaker s job to ensure that all the hard work done in the vineyard is reflected in the bottle. Here the talent and combined experience of the winemaking team is vital, requiring incredible attention-to-detail and thousands of micro decisions ensure the quality of the finished wine. Led by Chief Winemaker Ben Bryant, the team is focused on delivering attractive varietal wines of the highest possible quality every vintage. CONTEMPORARY AUSTRALIAN STYLE The winemakers at Jacob s Creek are quintessentially Australian. We respect tradition and history but we have always looked for new and better ways of doing things. In the 1950 s our winemakers introduced temperature-controlled pressure vessels to make fresh vibrant white wines. This was a catalyst for the development of many modern winemaking techniques used in Australia today. Regardless of process, it is the end product that counts. At Jacob s Creek, contemporary Australian wine styles means making approachable wines that are enjoyable to drink. They are wines that can be trusted and relied upon for their consistent quality, but not their sameness. They are wines that deliver excellent value, not measured by their price, but in the way they deliver exceptional quality at every price point, against expectation. It means going the extra mile to satisfy our customers. PAGE 13

W I N E M A K I N G P H I L O S O P H Y continued FRESH, ELEGANT, GREAT TASTING We dedicate significant effort to ensure the freshness of Jacob s Creek wines. This means picking the fruit at optimal ripeness, delivering it rapidly to the winery, monitoring it through fermentation, and then storing the wine in controlled conditions until it is ready to bottle. The use of screw-caps helps ensure that the wine which reaches the customer is as fresh and bright as it was when it was made. Elegance comes from restraint in fruit selection and judicious use of oak. Our winemakers prefer fruit that is perfectly ripe in terms of flavour and tannin profiles, rather than pursuing maximum sugar ripeness. Our focus has always been on making balanced wines, so the oak should support the fruit intensity not over-whelm it. The result is wines that taste great, with the varietal flavour of the fruit shining through. MADE BY Our wines are an expression of what Jacob s Creek is Made By. We celebrate the individual character of each grape variety the unique combination of aromas, flavours and texture that make Shiraz wine taste like Shiraz grapes, or Chardonnay like Chardonnay grapes. During the growing season our viticulture team works with our growers to nurture the vines to fully develop its varietal flavours. Our winemakers taste the fruit in the vineyard, and make the decision to pick it on the day it has achieved its optimal varietal character. Then they focus on retaining all those characteristics throughout the winemaking process, using special yeasts and fermentation regimes to maximise varietal expression. That is why we proudly label our Classic wines with their varietal names each is a true reflection of the grape variety on the label. For our Reserve wines, we source grapes from those regions that are best for growing particular varieties, delivering even more distinct varietal character. ALL OF OUR JACOB S CREEK WINES ARE MADE WITH THIS FUNDAMENTAL WINEMAKING PHILOSOPHY IN MIND PAGE 14

An early sprout to a flourishing vine Ben Bryant has come a long way since his student days when he earned a little extra cash pruning vines in the Central Ranges of New South Wales. Now Chief Winemaker for Jacob s Creek - one of the world s largest and most respected wine brands - Ben s hard work and intuitive understanding of premium winemaking has seen him anointed with one of the most coveted roles in Australian wine. Formative years take root Ben s wine adventure began in the small town of Mudgee NSW, close to where he grew up on his family s property. After deciding not to pursue a career in sports physiotherapy, his first position was as a cellar hand at the local Poet s Corner Winery, which was then owned by Orlando Wines. Working closely with an array of ferments during my first vintage, I was immediately intrigued by what was happening in the process, from vine to wine. As I began to understand the fundamental elements of winemaking, my appreciation grew into a deeper passion. Ben reflects on that time: The work was very peripheral in those days; the appeal was in the agricultural way of life. But as Ben started working more closely with the winemakers, he soon developed a fascination with the intricacy of the winemaking process. Working closely with an array of ferments during my first vintage, I was immediately intrigued by what was happening in the process, from vine to wine. As I began to understand the fundamental elements of winemaking, my appreciation grew into a deeper passion. Dedicating himself to this passion, Ben enrolled in oenology at Charles Sturt University. He completed his winemaking degree over the next 5 years at Poet s Corner, by which time he was Winemaker and Winery Manager. This was a heady responsibility for a young man, but one that he has very fond memories of. The craft of winemaking begins to ferment In the years to follow, Ben made wine in numerous regions across Australia, including the Barossa Valley, Mudgee, Hunter Valley and Riverina. Each role offered a deeper understanding of the industry and Australian regionality. He has also enjoyed experiences overseas - not least his 2007 vintage whilst in China, where he oversaw the winemaking operations for the then 13,000T Helan Mountain winery in Ningxia Province.

In 2008 Ben joined the winemaking team at Wyndham Estate, before being appointed Chief Winemaker in 2010, where his passion for Shiraz winemaking was given a platform to shine. In 2012, Ben took on the role of Global Marketing Manager for Wyndham Estate, in addition to Chief Winemaker. Ben managed the global marketing strategy for the brand and its implementation across domestic and international markets. His exposure to and success in global marketing led to his next appointment in 2013, as International Brand Development Director for Asia at what is now Pernod Ricard Winemakers. Based out of Hong Kong, Ben was tasked with accelerating growth for the company s portfolio of premium wine brands across Asia. Aged to produce the finest Australian wines Ben eventually returned to the Barossa Valley at the end of 2014, where he took up the role of Winemaking and Supply Manager Australia for Pernod Ricard Winemakers. Now in his fifteenth year with the company, Ben is responsible for the winemaking process from grape through to bottle across all of the company s Australian wine brands. Every wine should depict a story. When I taste a wine, I want to taste where it s from, and be captivated by the experience. Wine is an adventure for me it is enchanting, intriguing and exciting and all of that should be reflected and celebrated in each glass. Commenting on his appointment, Ben said: The industry of wine is one in which you never stand still, and you never stop learning. I haven t stood still for fifteen years, and I am eager to see what the next fifteen have in store. I have inherited not only a world-class brand in Jacob s Creek, but a world-class team of individuals who together have worked tirelessly to make the brand what it is today. From grape sourcing to winemaking we all live and breathe our passion for wine, and we are united by a common, simple goal to make great wines that people love. I look forward to being part of the team on the next stage of the journey. A husband to wife Kate and father to three young children, Ben is a keen golfer and has a self-confessed weakness for great Chardonnay. He has a great respect for the previous generations of Jacob s Creek winemakers. Ben sums up his outlook on wine: Every wine should depict a story. When I taste a wine, I want to taste where it s from, and be captivated by the experience. Wine is an adventure for me it is enchanting, intriguing and exciting and all of that should be reflected and celebrated in each glass.

From finance to fermentation Exchanging accounting for vineyards, Trina Smith followed her heart and has never looked back. Having travelled the world creating vintages and experiencing ways of winemaking from all over, Trina arrives to Jacob s Creek to inject her international knowledge, exceptional skills and remarkable understanding of sparkling into one of Australia s leading sparkling and still wine portfolios. The time when wine came calling Trina was studying accounting at university when she decided to undertake a variety of short courses with a friend for fun. One of them was a wine appreciation course, which she enjoyed so much that she chose to apply for an Oenology degree at the University of Adelaide. Upon completion of her degree, Trina travelled overseas where she completed international vintages in California, South Africa and Italy, with a focus on red wine. During this time, Trina was exposed to a myriad of varietals and blends from around the globe and gained inspiration from the diverse approaches to the art of winemaking she encountered along the way. A passion for sparkling bubbles up My first permanent role when I came back to Australia was with Brown Brothers, where my love for sparkling came about. I had a fantastic mentor, Terry Barnett, who really instigated and cemented my love for sparkling. From there, Trina had a brief interlude in the Yarra Valley at contract facility MasterWinemakers, before moving on to work on the sparkling wine portfolio at Treasury Wine Estate in While Trina has had a dominant focus on sparkling over the past nine years, she has always held an appreciation for white wine with a particular fondness for the varietals that go into sparkling Chardonnay and Pinot. For Trina, the quality of the palate line and texture is what makes a wonderful table wine.

Leading a world class portfolio to new heights In October 2016, Trina was announced as the new Jacob s Creek Group White & Sparkling Winemaker and is elated by the opportunity to continue specialising on her greatest passion with Australia s largest wine brand. Of her appointment, Trina says, Jacob s Creek is a proudly Australian brand of world-class standards, with a strong heritage of some of the finest winemakers in the country, who continually share their knowledge into crafting and building the brand into what it is today. If I wasn t a winemaker, I d have no idea what else I d do because I just love winemaking. The whole aspect of winemaking vintage, blending and putting the wines together, it s tough thinking of doing anything else. So long ago I chose to make a change from accounting to winemaking and I just knew I made the right decision then and there. I am thrilled to be a part of this team and look forward to bringing my experiences to the table and help continue to bring Jacob s Creek into the hands of wine lovers around the world. Trina is based out of the brand s home in the Barossa Valley, where she will be responsible for ensuring the white, rosé and sparkling wines are produced to exceptional standards. Delighted to share with her new Jacob s Creek family the wealth of knowledge gained from her time abroad, Trina is dedicated to driving advances and innovation across all aspects of the brand s Australian operations and wine portfolio. Jacob s Creek has so much to offer the world, the breadth of the portfolio still astounds me. As a brand, they are constantly looking developing and breaking new ground in winemaking and that s something exciting to be a part of. Being able to play around with so many different types and styles of wines and varieties makes life a lot more interesting. In ten years from now, Trina is determined to still be in love with her craft. The beauty of being able to innovate and try new things is it helps keep the passion alive, she says. As long as I m still passionate about what I do, I ll be happy.

This in addition to being a multiple winner at the South Australian Tourism Awards for Best Tourism Winery and Best Tourism Restaurant (2007, 2008, 2010, 2011) and Best Major Tourism Attraction in South Australia for three consecutive years (2008, 2009, 2010) which earned the Visitor Centre a place in the SA Tourism Hall of Fame. Designed to be ENVIRONMENTALLY SENSITIVE, Jacob s Creek Visitor Centre incorporates recycled materials in its construction, utilizes solar hot water and solar generated electricity and has an onsite water treatment plant.
