4 SCOTLAND S LARDER AND KITCHEN Traditional Farmer s Market Stalls bordering the perimeter of the main room offering a wide selection of heart-warming and wholesome dishes served in china bowls, allowing guests to sample from market stalls and continue to move around. The stall set up will reflect the street food style you would find in open eateries across Scotland and allow guests to interact with our kitchen craft team. In additional to the dressed market stalls our friendly staff will circulate the freshly prepared locally sourced bowl food options and interact with your guests, detailing the ingredients and provenance of the food Fish Traditional East Coast haddock bound in an Isle of Arran wholegrain mustard sauce with a rich butter pastry Farm Slow cooked Borders lamb with russet dumplings, Rowan berries and rosemary and thyme jus Forage Cracked wheat and autumn vegetable pot with courgette, aubergine and tomato Fresh Homemade Soups Creamed free range chicken, sweet corn and smoky bacon velouté Mushroom with nettle cream (Forest mushroom & onion soup, handpicked nettles, cream) Served with Fingers of wholemeal & stone-ground bread Centred on the traditional Farmer s market stalls we will dress the stations with natural tones, baskets of home baked breads, hot soup urns, wooden vegetable crates filled with fresh seasonal vegetables and descriptive hand written menu boards. Incorporating barley sheaf s, fresh herbs and some seasonal vegetables to create the traditional Scottish pantry kitchen. No linen required on the Market Stalls however we will incorporate hessian table runners and arrangements of fresh herbs to decorate the poseur table we would recommend having in situ.

5 SCOTTISH SEAFOOD BAR Creating a crisp and classic well lit champagne bar, partnered with clean stainless steel fish monger style bar counters we will showcase some of the finest seafood from around our Scottish shorelines. Counters will be dressed with a wide selection of freshly caught fish and shellfish, presented on a bed of ice to create the look of a working fishmonger. Pre portioned dishes will be presented on taster size glass plates. Poached Salmon with Light Lemon and Caper Mayonnaise Prawn with Dipped in Seaweed Dashi, Yuzu Mayonnaise Seafood Clamato Shot Bar and food area combined white lit opal bar fronts to stainless steel units, L shape work benches with chefs preparation station behind.

6 STEWARTS BREWING ALE HOUSE Rustic Ale House serving street food using locally sourced produce from surrounding Farms and Estates. Top up with a selection of slaws, salads and super foods. Hot Boxes Highland venison and Buccleuch beef meatballs, served in a flat bread with crunchy vegetable salad, chilli and garden mint yoghurt Perthshire pork slow cooked with heather honey & Scottish ale, Edinburgh cuddy apple sauce served in a toasted sour dough roll Crispy falafel bites served in a flat bread with crunchy vegetable salad chilli and garden mint yoghurt Salads Celeriac & Carrot Slaw with Crunchy Pumpkin Seeds Arugula and Wild Mushroom Salad with Lemon Vinaigrette, Cherry Tomatoes Barbecue Gem, Sweetcorn and Pancetta Side salads will be served in large troughs Rustic Ale House, with a wooden fronted bar, whisky barrel poseur tables, wooden bench seating and blanket covered hay bales. Finishing the look with wheelbarrows filled with hay and seasonal vegetables, thistle table centre pieces and tartan blankets giving a warm and relaxed look to the station.

7 FROZEN COFFEE AND DESSERT BAR & CHEESE AND WHISKY WATERING HOLE Frozen Coffee and Dessert Bar Migrate back towards the chilled out black medicine style Coffee house where you will be greeted with a sweet treat and your coffee fix for the night! Approach the Decadent Glass tower of desserts and be tempted by: Chocolate and Single highland malt opera, milk chocolate cremeaux and salted pistachio Gooseberries compressed with elderflower syrup, gooseberry jelly, salted shortbread and Orkney cream 50% of each of the above pudding required Vanilla espresso shot, milk foam and cinnamon donut ~ for all guests Gathered around the central hub bar area where our baristas come to life with the creation of our speciality blended espresso beverages. Choose to have either a standard coffee or chilled over ice and relax within the comfortable surrounding of palet covered seating and low coffee tables. Whisky and Cheese End the evening with one of Scotland s guilty pleasures Whisky tasting allowing you to sampling some of Scotland's finest malts and blends Individual Wooden Boards with a Selection of Scottish and Island Cheese to include the following: Mull Cheddar, Arran Mist, Dunsyre Blue Served with Hebridean & Arran biscuits, plum chutney An old fashioned wooded cart set amongst whisky barrels and wooden bench seating.
