3 JUST THE FLAX MA AM Janet Brown, RD, LRD As we get deeper into the winter, it seems more difficult to be healthy. Challenges include less activity due to the weather and being surrounded by tempting treats. Not to mention all the health misinformation we come across in newspapers, the internet or from friends and family. What is one simple way to provide extra nutrition in a world of confusion and temptations? Just the Flax! Just the facts on Flax, ma am. One tablespoon of flax contains 37 calories and 2 grams of fiber. It is a seed with 3 major assets. 1) It is fiberrich! This makes it great for regular bowels and aiding in decreasing constipation. 2) Flax is full of phytochemicals (plant chemicals) called lignans. Lignans are very powerful antioxidants that aid in inflammation reduction. Some studies suggest lignans may reduce risk in certain cancers. 3) Flax is a great source of omega-3 fatty acids. Omega-3 s are a very healthy fat that make salmon and other fish so popular. They make our blood less sticky decreasing our risk for heart attacks and strokes. It is recommended to consume the flax ground as the gut can absorb the nutrients more efficiently. What do I do with the Flax, ma am? For starters, there are many products available with flax already in it: breads, peanut butters, cereals and cookies. Flax can be purchased in any store and stays fresh if kept refrigerated. Easy and simple ways to add flax: 1) Add a Tablespoon to your hot or cold cereal. 2) Sprinkle some flax and cinnamon on some peanut butter toast. 3) Add a Tablespoon to your yogurt. 4) Add flax to your favorite muffin, bread, pancake or other baked goods. 5) Add flax to a fruit smoothie. OR you could try the following recipe: Just the Flaxseed Muffins, Ma am 1 cup unbleached all-purpose flour ½ cup whole wheat flour 1/2 tsp baking soda 2 tsp baking powder ½ cup quick oats ½ cup ground FLAX seed 1 cup buttermilk 2 eggs 4 Tbsp honey 2/3 cup raisins Cooking Directions: Mix all dry ingredients (except raisins) in a large bowl. Combine the liquid ingredients in a separate bowl. Stir the liquid ingredients with the dry. Add the raisins. Stir until batter thoroughly moistened will be lumpy. Fill muffin tins, lined with paper or foil cups, until about 2/3 full. Bake at 400 F for about minutes. Serve with jam. Page 3

4 Rent Refunds and Property Tax Credits Available If you are 65 years old, or totally and permanently disabled, you may be eligible for a rent refund of property tax credit. Rent Refunds You may be eligible to receive a rent refund if 20% of your annual rent exceeds 4% of your annual income. Your income cannot exceed $42,000 for the year A refund cannot exceed $400. For a husband and wife living together, only one can apply for the refund. Only the spouse applying for the refund needs to be 65 years of age. A refund may not be made to a person who pays rent for any living quarters that are exempt from property taxation and for which payment in lieu of property taxes is not made. (You may have to check with your local assessor about the tax exempt properties in your area). For more information or to request an application, call the State Tax Commissioner at ext. 6. The applications must be filed with the State Tax Commissioner by May 31 st, Property Tax Credit The property tax credit will reduce the homeowner s taxable value according to your income. In order to qualify for a property tax credit, your income must not exceed $42,000 and your assets may not exceed $500,000 (including the value of your homestead). If you believe you are eligible for a property tax credit, you can file an application with your local assessor by February 1 (or soon thereafter) in the year your property is assessed and for which you request a property tax credit. When considering income for both rent refunds and property tax credits, all sources much be considered including but not limited to Social Security benefits, pensions, salaries, unemployment benefits, dividends, interest, profits, etc. Life insurance proceeds are not included in the act. Medical expenses are deductible from income if not compensated by insurance or other forms of compensation. U.S. POSTAGE PAID FARGO, ND PERMIT NO Giving Hearts Day We have been notified that Valley Senior Services will be a participant in Giving Hearts Day again in 2016! Giving Hearts Day is a joint project of Dakota Medical Foundation and Impact Foundation designed to assist non-profit organizations to raise funds to support their services. It will be held this year on February 11 th. Last year Giving Hearts Day generated gifts totaling $6.96 million from 30,528 individuals for 287 charities through online donations, match funds and incentive awards. This is the 9 th annual Giving Hearts Day hosted by DMF and Impact Foundation. This event has dramatically increased fundraising success by charities in North Dakota and western Minnesota. There are several ways to make donations to Valley Senior Services for Giving Hearts Day. The easiest, if you have access to a computer, is to go to the impactgiveback.org website and locate the Valley Senior Services link on their donation page and simply follow the instructions on making a donation. Another way would be to mail your donation directly to us. And the final way is to bring the donation to our office. Any donation of $10 or more will be matched by Dakota Medical Foundation or other generous donors. This year we will be using any donations we receive from Giving Hearts Day to support our Meals on Wheels program. Your donations will help us keep up with growing demand. So, please help us to fill the bowl for Meals on Wheels on Giving Hearts Day February 11 th, Thanks so much for your support of our mission of services to the senior citizens of this area!
