4 TASTING TABLE 3: FRUIT, EARTH, SPICE & OTHER 2013 Long Meadow Ranch Farmstead Pinot Noir; Sonoma Coast Aromas of fresh red and black cherry, earthy strawberry, subtle cardamom, clove and cedar box. The palate has zippy red berry fruit in the entry, and a supple, perfumed and velvety mid palate with nuances of baking spices. The acid structure of the wine gives it life, length and versatility in food pairing Viñedos Altamira Valley VAV Malbec, Uco Valley Grown at 3,500 above sea level, this wine presents with a deep purple color. The nose and the taste are definitely Malbec, with an abundance of red and blue fruit. Soft on the palate, the wine shows good acidity and structure with a clean finish Ricossa Antica Casa Barolo DOCG This wine has a bright garnet color with brick-orange hues and the scent of alcohol-drenched fruit. On the palate, mulberry and sour cherry flavors abound with zesty acidity, chewy leathery tannins, and a persistent finish Vignamaggio Terre di Prenzano Chianti Classico DOCG Produced from 100% Sangiovese grapes, this wine shows a rather intense red color. The aromas are characterized by the cherry and raspberry notes typical of this variety, and a characteristic, round flavor, well balanced Starry Night Winery Zinfandel; Lodi This wine is well structured with fresh flavors of blackberries and cherries with hints of pepper, spice and eucalyptus. Our Lodi Zinfandel can be paired with many dishes, but is especially good with pasta, steak, lamb, burgers, pizza, stinky cheese and chocolate flavored breakfast cereal. TASTING TABLE 4: FRUIT & FLORAL 2015 Alamos Torrontés; Salta, Argentina This wine is crisp and extremely fragrant, offering striking floral aromas of orange and jasmine blossom. On the palate, vibrant notes of white peach, ripe pineapple and fresh herbs lead to a refreshing zing of acidity at the finish. Torrontés is ideal for pairing with spicy, flavorful foods like empanadas or Thai Jacob s Creek Riesling; S Eastern Australia This Riesling presents a pale green straw color. The bouquet is of fragrant lime with hints of white florals and citrus blossom. The palate shows classic floral lemon-lime citrus flavors with fresh green apple notes, framed by a soft acid backbone that provides structure and persistence on the finish. Castello del Poggio Moscato; Provincia di Pavia IGT Straw yellow in color with golden reflections. Aromas of stone fruit and honey lead to a refreshing experience of soft delicate mousse and ripe peaches Billhook White Wine; Santa Barbara This blend of Viognier (45%), Marsanne (25%) Grenache Blanc (20%) and Roussanne (10%) offers crisp citrus aromas and refreshing flavors of pear, apple and fig and is the perfect complement to calamari, grilled ahi or herb roasted chicken. 5 Making Scents ofwine GLOSSARY OF WORDS THAT FREQUENTLY OCCUR IN WINE DESCRIPTIONS Aroma: The fragrances of wine which come directly from the grapes and the winemaking process. (See also bouquet). Balanced: Having the acidity, tannin, and other natural components of a wine in pleasing proportions. Big: Having a very full body. Often refers specifically to high levels of tannin, especially in red wine. Body: Relates to how the wine feels in your mouth and to the sensations of richness, thickness and heaviness that the wine creates. The fact is some wines just seem fuller, heavier or bigger when they are in your mouth Bouquet: The fragrances that develop in wine trough bottle aging. Making Scents ofwine GLOSSARY (CONTINUED) Fruity: Having aromas or flavors of grapes or other fruits, such as apples, cherries, lemons or pineapples. Fruit in wine can often give the illusion of sweetness, even when the wine is completely dry. Herbaceous: Having aromas or flavors that resemble herbs, vegetables, grass or leaves. Often used to describe Sauvignon Blanc and Cabernet Sauvignon. Hot: Having abnormally high alcohol content. Since alcohol creates a feeling of heat in the mouth for many people, high alcohol wines can actually seem hot. Soft: Generally refers to wines with little or no tannin. A textural effect in which the wine feels smooth in the mouth. Complex: Having many different types of aromas or flavors, such as fruit, herbs spice and wood. Complex wines taste interesting and multi-dimensional. (Wines that do not are called simple as in simple jug wines. ) Creamy: Having a smooth texture in the mouth; can also describe actual aromas and flavors that resemble those of cream. Often used to describe Chardonnay, especially those that have been fermented or aged in oak barrels. Crisp: Pleasantly tart; having good acidity. Generally, but not exclusively, used for white wines. Dry: Having little or no sweetness (residual sugar). Finish: The finish or aftertaste is the final impression that the wine makes after you have swallowed it. Tannin: An astringent substance, found mostly in red wines, which comes from grape skins and seeds and from the barrels used for aging. Tannins give a wine complexity and aging potential, but high levels of tannin can give a harsh mouth feel, actually coating the teeth and tongue to create a rough, gritty sensation. Bottle aging enables tannins to soften over time.
