15 Services & Policies EXCLUSIVE CATERER Ovations Food Services maintains the exclusive right to provide all food and beverage and concession services at AutoZone Park. AutoZone Park facility rental can be arranged through: Kellie Grabert Special Event Coordinator Memphis Redbirds 175 Toyota Center, Suite 300 Memphis, TN OUTSIDE FOOD AND BEVERAGES No food or beverage of any kind will be permitted to be brought into the facility by the patron or patron s guests or invitees without prior written approval of the General Manager or Food & Beverage Director. Food items may not be taken off the premises; however, excess prepared food is donated under regulated conditions to agencies feeding the underprivileged at Ovations sole discretion. CATERING FEE AND TAXES A 20% catering supplement fee and 9.25% state sales tax will be applied to all food and beverage purchased. The catering supplement is used to defray labor, linen and equipment costs associated with the event.. Tennessee law states that the catering supplement is subject to sales tax. Taxes are subject to change. BEVERAGE SERVICE Ovations offers a complete selection of beverages to compliment your function. The Tennessee Alcohol and Beverage Commission regulate alcohol and beverage service. As the licensee we are responsible for the administration of these regulations. Alcoholic beverages may not be brought onto the premises from outside sources without prior written consent of the General Manager or Food & Beverage Director. In compliance with ABC regulations we reserve the right to ask patrons for proper identification for alcoholic beverage service, we reserve the right to refuse alcohol service to intoxicated or underage persons. Alcoholic beverages may not be removed from the premises. LABOR Catering personnel are scheduled in four-hour shifts for each meal period. These shifts include setup, service and breakdown. Events requiring additional time for service will incur an overtime charge of $25.00 per waiter per hour. DIETARY CONSIDERATIONS Ovations is happy to address special dietary request for individual guests with a 72-hour advance notice LINENS All banquet prices include white table linens. Additional colors are available for both table linens and napkins. Ask your Catering sales Manager for details. 16 Services & Policies MENU SELECTIONS Choose a menu from the preceding suggestions or have us custom design a menu for your particular needs. All enclosed menus are designed for a minimum of 100 guests for two hour service. Additional labor and staff charges for groups under 100 may apply. Menu prices may be adjusted to reflect longer service times. Menus for food events must be finalized (1) month prior to the event. GRATUITY Staff gratuities and tips are lest to the discretion of the client and host. Unless otherwise notified, Ovations will distribute assigned gratuities among all staff present for the event. GUARANTEES A final guarantee of attendance is required (3) working days prior to all food and beverage events. Billing will be based on your minimum guarantee even if fewer guests actually attend. The guarantee can be increased up to (2) working days prior to your event with a 5% surcharge. BILLING A non-refundable deposit of 50% of estimated food and beverage charges is due upon signing the catering contract. The remaining balance must be paid in full within 14 business days of the event. All incidentals billed during the event are due 10 business days after issuance. If payment of the balance due is not received by the appropriate date, a delinquent charge of 1.5% per month will be added to the balance. CANCELLATIONS Cancellation of food function must be sent in writing to your Ovations Sales representative. Any cancellation received more than 30 days of the scheduled event will result in a fee equal to 25% of the estimated food and beverage charges. Any cancellation received less than 30 days in advance of the scheduled event will result in a fee of 50% of the estimated food and beverage charges. Any cancellation received after the Final Guarantee has been provided will result in a fee equal to 100% of the charges on the affected Banquet event order(s).inform our clients of these substitutions.
