1 CNN NEWSLETTER JUNE 2018 Website: mycnn.org Editor Ann Soares, HAPPY SUMMER! PRESIDENT S MESSAGE By Susan Baas Our Spring Tea was very successful. Thanks to all the food prepares, hostesses, runners and donators. We raised $ for our yearly donations. It was so nice to celebrate our Charter member Aileen Chaney s 90 th birthday at our luncheon at Castle Oaks. Thanks to Elaine Alves for a delicious birthday sheet cake, all the lovely cards for Aileen and to Sharon Quintana for arranging it I hope that everyone enjoyed their Memorial Day and for a cool summer to follow. NOTE FROM AILEEN CHANEY I want to thank all of you lovely people that made my 90th birthday celebration such a special day at Castle Oaks. You gave me a lunch, a beautiful corsage, many wonderful cards, and a delicious birthday cake! But most of all you ve given me your friendship over the years and I can t ask for more than that. CNN has been very special to me, and as I ve said before I ve left the town, not the people. Hopefully I will continue to see you at luncheons, Mexican Train or Canasta for a long time to come. Fondly, Aileen 1
2 VICE PRESIDENT MaryAnn Evans Sorry I had to miss our luncheon. Was in Arizona at a grandson's high school graduation. I am sure you all had a great time celebrating Aileen Chaney's birthday. Our Speaker in June is Barbara Kaleva. Her presentation may include, but not be limited to, pathway to compassionate, self-care, and ageless beauty. Sounds very interesting. LUNCHEON RESERVATIONS Sharon Quintana Important Note from Sharon: We prefer that you pay for luncheons with a check. Now that luncheons are $25, change is becoming a problem. I do not provide change for the cash box so, if at all possible, pay by check. Thank you. Our June luncheon will be Thursday, June 28th, at Highway House in Jackson. This place appears to be popular with our group. The social hour is at 11:00 am and lunch at noon. The cost is $25 (new rate) per person. The cutoff date to make or cancel reservations is Thursday, June 21st. Please contact me via at cnnreservations@gmail.com to make a reservation. Any special requests need to be submitted by the cutoff date. ***Please be aware that if you sign up for our Luncheons and are a no show you will be responsible for reimbursing CNN for the lunch. CNN has no control over this. Once we give the restaurant the number of attendees, we have to pay for that number. CNN does not have the resources to cover this expense. MEMBERSHIP by Sue Dorman We had no new members in May. Our Membership remains at 97! Please change/add the following to your new directory: Change of address: Nancy Cass [Charter Member] Our membership runs from February 1, 2018 through January 31, You can pay by cash or check. Prospective members may attend 2 luncheons as a guest before joining CNN. FOOD BANK We collected $ at the luncheon for the food bank! Her phone number is READERS CORNER MaryAnn Evans If you are a reader and would like to share your views on a book or an author, please send those to me, MaryAnn Evans, any time before each month s Luncheon. This month s submission is from Ann Soares: Allie and Bea Another bestselling novel from Catherine Ryan Hyde. An elderly widow with her beloved old cat sets out in her old van after her trailer burned down. Having no place to live, she aims north towards Canada. Fifteen year old Allie escapes from the group home where she is sent while her parents are in jail for tax fraud, and now has the authorities hunting for her. Allie and Bea s paths soon cross and both of them, very untrusting, but needing help begin their travels together with sometimes nerve-racking and sometimes humorous adventures. It was quite a fun and lively tale, with lots of action, I enjoyed it. ~Ann SOCIAL Judy Bruenn Thank you Sharon and Leo Quintana for hosting our May social. It was another wonderful evening with a great turnout, filling up their huge backyard deck and living room. The deck overlooked their meticulous large yard which Leo takes care of himself. Sorry, all my pictures on the deck did not turn out. The appetizers get better and better and were quite plentiful. There were even leftovers this time. See pictures below: Our next social will be at the home of Kathie and Tony Crivello on Friday, June 15, at 5:30 p.m. Their home is located at 7139 McCauley Rd., V.S. Please RSVP Kathie and Tony, or tkc7139@comcast.net if you plan on attending. Please don t wait until the last minute. Our hosts need time to prepare. Everyone is asked to bring an appetizer and whatever they prefer to drink including soda and water. Glasses, plates, ice, and napkins are provided by our hosts. 4
5 RECIPES AND MORE MaryAnn Evans Ladies, we want to hear from you regarding favorite recipes, cooking tips, and/or just to share kitchen experiences. Please send your info to me (MaryAnn) any time before each month s Luncheon. [NOTE: please be sure you send your recipe typed, NOT a copy of a page from a magazine, cookbook or newspaper, thanks, Editor] Following recipe is from Sue Dorman: If you've ever been to the Thai House in Valley Springs and had their Garlic Basa Fish, I've found a recipe that I think tastes very much the same. Hope all enjoy it as much as I do! ~Sue PAN FRIED BASA FILLETS WITH ASIAN MARINADE 2 basa fillets (large) Salt, pepper 2 tablespoons low sodium soy sauce Olive Oil (for frying) 2 tablespoons sweet chili sauce Panko Bread Crumbs 1 tablespoon ginger paste 1 large carrot (finely grated) 1 tablespoon garlic paste 2 spring onions (finely chopped) Directions: Marinate the fillets with the soy sauce, chili sauce, ginger paste, garlic paste and salt and pepper to taste for at least half an hour. (I omit the salt & pepper) Heat the oil in a frying pan. Shake off the extra marinade from the fillets and coat with panko bread crumbs. Fry on medium heat until cooked through. Remove and place on serving tray. Add the remaining marinade to the pan and heat through. Pour over the fillets and garnish with the carrots and spring onions. Serve with steamed rice. TIPS FROM SUE: *You should at least triple the sauce. I didn t have enough for my 2 fillets. *I couldn t find the garlic-ginger paste combined (which the recipe called for) but I found them separately in the fresh veggie section at SaveMart. *The sweet chili sauce was in the oriental section at SaveMart. Brand is Mae Ploy. *I didn t use salt or pepper. There s enough in the other ingredients. *Didn t give an amount for oil so I coated the bottom of the fry pan and it seemed to be enough.
