9 A FEW THINGS TO KEEP IN MIND WHEN BATCHING: CRAFTED BY THE BATCH. BATCHING COCKTAILS BEFORE YOUR EVENT ALLOWS FOR ADVANCED PREP AND EASIER SERVING. When done correctly, you can replicate the same standards one would expect at a top mixology bar on a scale large enough for your guest list. YOU CAN BATCH THE NIGHT BEFORE. But only if all ingredients in the cocktail contain alcohol and there are no fresh juices, effervescent ingredients like ginger beer, or volatile ingredients like eggs or milk. FRESHNESS IS CRITICAL. Remember that batched cocktails change slightly over time. If batching the night before, proper storage is essential to maintaining freshness. ALWAYS USE YOUR PALATE. The taste or strength of certain ingredients can change in large quantities, so taste before you serve. For instance, with bitters it is often unnecessary to multiply the amount of dashes for one drink into a large batch

The tastes of certain ingredients intensify or diminish in large batches, so alterations should not be made to create different-sized quantities without prior testing. BY THE GLASS OR BY THE BATCH. COCKTAIL RECIPE: 2 parts GREY GOOSE Le Citron Flavored Vodka 4 parts premium organic tomato juice 1 part fresh lemon juice ¼ part Worcestershire sauce ¼ part dashes of hot sauce Pinch fleur de sel Pinch black pepper Build ingredients in a Boston glass. Top with cubed ice. Roll the cocktail by pouring it back and forth between Boston glass and tin. Strain into a highball glass and garnish with fresh cut celery, ground pepper and sprigs of aromatic herbs. BATCH MIX: 14 cups premium organic tomato juice ¼ cup lemon juice ¼ cup lime juice 3-4 Tbsp. hot sauce 7 Tbsp. prepared horseradish 7 Tbsp. Worcestershire sauce 1 Tbsp. celery salt 1 Tbsp. black pepper 1 Tbsp. paprika 2 tsp. salt Combine all ingredients in a one-gallon container, and stir vigorously. Prepare in advance and add GREY GOOSE Le Citron to each individual cocktail upon serving
11 THE FINISHING TOUCHES. Garnishes should always complement the flavors and aroma of the cocktail. Remember that it s perfectly acceptable not to garnish a drink, but when you do, garnishes should be immaculate. CHERRIES & BERRIES Always use fresh cherries. They are small and dark skinned in liqueur, not fluorescent red and candied. Alternatively, you can make your own using dark, fresh cherries soaked with spices and GREY GOOSE. WEDGES Wedges should be small, even, clean cut and neatly trimmed. RIMS Circle the edge of the glass, a half or full turn, with a citrus wedge. Carefully press the outside edge of the moistened glass into salt, spice or sugar mix, ensuring that it remains only on the exterior of the glass. Shake loose any excess and set aside to dry. OLIVES Select pitted olives or pit them yourself. Store in brine, not oil. ZESTING Use citrus zest to spritz oils and aromas on the rim and stem of the glass. TWISTS Twists should be cleanly cut (but with natural edges) and have the pith removed from the underside. They should be approximately one inch wide by two inches long. Bring to a boil, stirring deliberately until sugar has dissolved. Chill before using.
