Card to enjoy this great deal! by Lim Li Khee Morello Cherry Pie In this Gastronomia issue, we bring you to Windowsill in the Woods, a pie shop founded by a pair of siblings, Jonathan Gwee (24 years old) and Sean Gwee (21 years old). Though only in their early twenties, the brothers have reinvented the concept of pies and won over many pie-lovers with their unconventional pie recipes. We sat down with Sean to find out more about how they started their Life of Pie. It is hard to link private dining with pies until you meet the two brothers, Sean and Jonathan. Having dabbled in the fi ne dining scene during their early teenage years, Sean and Jonathan were no strangers to the culinary fi eld when they founded Windowsill Pies six years ago. In fact, they were making use of their school holidays to take up cooking assignments when Sean was just 14 years old and many of them involved preparing a full course meal. Jonathan and Sean taught themselves to cook through many trial and error sessions in the kitchen as they believed that physically experiencing the process and making mistakes would benefi t their culinary skills more than reading from cook books. While the brothers had good results with their fi ne dining assignments, the rising costs of the ingredients required made the duo think about switching to a more sustainable business model. Inspired by their father, Gorgeous pies on display. the brothers turned to the pie business and started their baking production kitchen in Jurong with a fi fty-fi fty capital start-up grant from their parents. Two years ago, they managed to open their fi rst brick and mortar Windowsill Pies shop and followed up with a second outlet, Windowsill in the Woods earlier this year. Different fl avours for different moods. Like any other entrepreneur, the Gwee brothers too had their fair share of challenges when they fi rst started up. One of the greatest obstacles they faced was the general public s perception of pies being costly and a less attractive option as compared to cakes. Sean had a different view and shared that pies are actually great for potluck and are appropriate for any occasion. Moreover, a slice of pie makes for a more satisfying snack than a slice of cake when shared among friends! All the pies at Windowsill Pies are original recipes stemming from the many hours the Gwee brothers put in to achieve the perfect texture and appearance. Take for example Sean s favourite out of their many creations Pecan Pie. We wanted the pie to have a kaya-like texture, so we watched tons of movie scenes with Pecan Pies just to emulate the texture! Then we experimented and adjusted our recipe and temperature during the baking process. Interestingly, Sean does not fancy Pecan Pie much except for the version they created. He suggests that new customers try other pies in the shop fi rst before starting on the Pecan Pie as their version tends to be thicker and sweeter than the usual. Windowsill Pies is the fruit of the brothers labour, six years in the making. Being in the food business together, the brothers have to contribute ideas to create and strike an in-between to ensure they meet the interests of their customers. Sean shared in the interview that he is the stricter one when it comes to areas such as fl avours and branding. When asked to dedicate a pie fl avour to his brother Jonathan, Sean decided on their upcoming blueberry pie because it is intense, just like my brother. Sean Gwee, co-founder of the Windowsill Pies and one-half of the brothers-team. Currently, Sean is taking a gap year to run Windowsill in the Woods full-time and intends to do this for at least another 2 to 3 months before returning to his post-graduate studies. Jonathan, on the other hand, is a medicine graduate and works in a hospital at the moment. He does more planning, administrative work and a bit of accounting but both brothers share the workload for designing from little details like the treeshaped door handle to the big tree in the shop. They also have a kitchen supervisor to manage the central kitchen and handle mass production of the pies. To all aspiring entrepreneurs interested in starting up their own businesses, Sean has some fi nal parting words of advice: Never go in alone; it is always good to have someone to bounce ideas off of and share the burden when the going gets tough. Sean quipped that another reason they wanted to create their own cherry pies was because they found the cherry pie picture on a particular brand of cling wrap to be too fake. In the brothers eyes, the Cherry Pie is very traditional and they took extra effort to ensure the one they created has a classic image to it. Another plus point about the Morello Cherry Pie is that its crust is almost identical to that of a butter cookie, perfectly complementing their specially designed cherry jam. The origin of their Strawberry Lemon Tart is the traditional lemon pie. According to Sean, lemon pies made by the French are more buttery yet balanced out by the sourness from lemons. On the other hand, Americans use cornstarch jelly as the main ingredient to give their lemon pies a richer texture. Windowsill Pies aims to have the best of both worlds the sensibilities of the balance from the French and the tastiness from the Americans. To give the tart some complexity, they added some strawberry for extra fruitiness. S mores Pie The S mores Pie is described as a campfi re treat. Here at Windowsill Pies, Sean explains that their S mores Pie is candy-bar like, with a bit of sophistication. Their homemade marshmallows have an extra smoky taste and melt in the mouth. Pure dark chocolate is also used to glaze the top layer of the pie. 6 Dreams Made of Music by Farah s winning performance at U Fame Awards. When I was young, I was never sure of what I wanted to be when I grew up. My ambitions changed far too many times, from a doctor to a policewoman to a vet. However, when my parents brought home a karaoke set, I knew that singing was what I wanted to do. My passion for singing continued to grow. I yearned to perform but couldn t fi nd the stage to do so until I discovered the nebo family. My fi rst event with nebo was to perform at their 4th Birthday Bash in July 2011 and since then, I have gained more stage experience. In June 2012, nebo gave me the opportunity to represent them at the Malaysian World Youth Rally, hosted by Hostelling International. I learnt about different cultures from the various countries and of course, made new friends through the fi ve-day exchange programme. Farah Erfi na Bte Mohd Music Community One of my fondest memories was when I took part in NTUC s U Fame Awards, an annual inter-union singing competition. Although it was unnerving, I did not falter and eventually emerged the winner. It was THE night of my life! After being a nebo champion for three years, I can confi dently say one thing nebo is willing and able to help youths fulfi l their dreams. Capturing Moments with nebo by Cham Wen Feng Lifestyle Community Photography is a hobby that anyone can pick up with the rapid development of modern technology. I was no exception and I soon realised that photography is my passion. In 2011, my friend Evon, a nebo champion in the Lifestyle community introduced me to a photography workshop organised by nebo. I wanted to hone my photography skills and the three-hour workshop gave me the chance to learn techniques of outdoor photography and meet fellow enthusiasts. be there. My personal interest is in Street Photography and as I alighted from the bus in Ipoh after the long journey, I told myself to cherish every moment that presents itself in the three-day trip. Over the years, I took part in many nebo photography events and as part of the photography interest group, Captura, I also had the chance to organise a photography youth symposium in 2012, PIXELS, together with four other committee members. My most memorable event, however, is the Travel Photography Trip to Ipoh and Taiping. When I heard that professional photographer Tristan Yeo was coming along on the trip as an instructor, I knew I had to Cham Wen Feng s fi rst shot the entrance of an old shophouse. Strong friendships were forged over the course of the trip built inevitably on one common interest - photography. My experience was valuable as I got to learn from a professional photographer and made new friends as well. Repairmen working by the side of the old building in Ipoh. My time in nebo has been well-spent, meeting people and picking up new skills. The food-loving writers of orange have left no queues unqueued, no Instagram photo unliked and no hashtag untagged in our hunt for the most calorie-worthy food under $5! #1 Where: Block 16 Bedok South Road (Opposite Temasek Junior College) There are more stalls to choose from in the afternoon but those open at dinner time already provide more than enough variety. It s a great place to visit if you re craving cheap eats in the East. The top recommendations are local fare but there are also stalls selling Western food, dessert and more. Editor s Note: Stalls close rather early (around 9pm) so do arrive earlier! #2 Where: Blk 724 Ang Mo Kio Avenue 6 (Opposite Broadway Plaza) Recently renovated for better air ventilation, this hawker centre and its stalls have been around for some time and have a base of loyal customers. Located in the heart of Ang Mo Kio Central, this hawker centre is wheelchair-accessible and is both wallet and family-friendly. #3 Where: Clementi 448 Mark T & Food Centre Just a stone s throw away from Clementi MRT Station, the airy hawker centre is bustling with the dinner time crowd. Snaking queues are a common sight and despite competition from the neighbouring Clementi Mall and various other hawker centres, it manages to hold its own, with crowds fl ooding in well past dinner time. Popular favourites such as Tanglin Halt Western Food and Nam Kee Hokkien Mee boasted long queues. Our advice is to beat the crowd by heading down early! Stall : Original Changi Ten Mile Fried Carrot Cake Food : Black/White/Mixed Carrot cake (From $2.50 for single, $3 for mixed) Our personal favourite! The uncle ensures that customers always get piping hot carrot cake by cooking only when you order. Prepared by the always-smiling uncle and well-fl avoured with just the right proportion of eggs and carrots, what s not to love? Stall : Ban Chuan Duck Rice Food : Braised Duck Rice/ Kway Chap set ($3/$3.50) It s almost impossible to not see a queue in the evenings but the food is defi nitely worth the wait! The braised duck is extremely tender and sliced neatly. Coupled with the gravy, you ll feel like there s always room for more. Another unique feature is the rice itself, which is cooked in gravy. For those preferring a lighter option, ask for plain rice instead. The stall also sells kway chap, a Singaporean favourite. Stall : Tanglin Halt Western Stall Food : Chicken Chop ($4.50) With the testimony of long queues by repeat customers, this stall is a must-try! The sauce is different from your average Western fare; not salty, but with just a hint of sweetness and sourness. The portions are generous and the chicken melt-in-yourmouth tender. When we reached at around 7.30pm, we were told that their coleslaw was already sold out.
