Look for comfort foods with a twist (gourmet, ethnic, artisan, wood-fired) as well as innovation in familiar formats (sandwiches, wraps, pizza, pasta) rather than breakout items taken from less-familiar global cuisines. Commodities costs drive rustic fare made in-house: Commodity costs are rising, labor costs hold steady and diners demand rustic fare, the simple preparations of fresh ingredients. Result: operators will curtail purchases of value-added items in favor of cheaper cuts, beans, grains and produce that require more back-of-house prep to transform into honest, homestyle food. The next steps in local sourcing: The rising use of seasonal and local items suits the less-is-more culinary trend. 5 Appell Pie Always marry your Angel Howard Appell Today s Restaurant Publisher Before I get into the topic of this month s column, I want to wish everyone a healthy and Happy New Year. Now back to our regularly scheduled column. Back in July 0f 2011 I had severe pain in my lower left back and was taken to the hospital by my wife, Terri, insisting that I was passing a kidney stone. She had experienced kidney stone attacks three times before so she was familiar with the symptoms. After going through a battery of tests in the Emergency Room the diagnosis was a kidney or bladder infection. When Terri heard this opinion she insisted that I get a CAT Scan to check for the stone. The doctor said it wasn t necessary but he would do it anyway to satisfy us. Soon after taking the test the doctor returned to my bed with a big smile on his face and said that there indeed was a stone and the stone may have saved my life. But Terri did! Steve Jobs, the founder of Apple had an identical experience to mine except his test showed Pancreatic cancer and mine had shown a Mass on my left kidney. When you hear the word mass used in relation to something in your body your first thought is the C word. Jobs chose to treat his condition with alternative means which led to his passing in If I hadn t had the kidney stone and my wife hadn t insisted on the test procedure I would have followed Jobs. Frankly I was is in shock and went into a state of denial. My wife, Terri, on the other hand went into attack mode and began to schedule appointments with doctors who all agreed with the hospital and I was referred to the Chief of Urology at Miami University Hospital, Dr. Kava. We were told he was the only My New Years wish for you is to have an Angel. We all need one. surgeon qualified to do what I needed. We called for an appointment on a Friday and my wife had us scheduled for Monday, unheard of. The surgery to remove a portion of my left kidney was scheduled for Nov. 17th. The price reductions followed six quarters of investment in plant operations and the sharing of technologies between Homer Laughlin and Hall China specifically targeted at streamlining production capabilities. 11 Florida s oldest restaurant creates private label spirits Richard Gonzmart, a fourth generation family member of Florida s Oldest Restaurant, The Columbia, Ybor City (original), has created a private label spirits line honoring first and second generation family members of the 106- year-old Columbia. Don Casimiro Classic Silver Rum: In 1902 Casimiro Hernandez, Sr., the Don of the Hernandez-Gonzmart generations left his home in Havana for a new life in Ybor City, Fla., the cigar capital of the world, with his wife, Adela, and four sons, where he started the Saloon Columbia. Grateful to be in the land of opportunity, he adopted the name of his new café from the popular song Columbia, Gem of the Ocean. With Chef owner Angelo Masarin, formerly at Casa Tua, Sardinia Enoteca and SOHO House s Cecconi s, at the helm, the restaurant combines Northern Italy s rustic charm and Midtown Miami s vibrancy while serving impeccably authentic Italian food. After eight years, Angelo decided to make a move and relocate to Miami. Upon his arrival he served as Chef de Cuisine in Sardinia before getting the opportunity to work as Chef de Partie at Casa Tua under Executive Chef Sergio Sigala. Born and raised in Milan, Italy, Carlo Donadoni trained in his native land and received his Italian Professional Chef s certificate from the Istituto Alberghiero Ponte di Legno in Brescia, North Italy. In 1997, Graziano Sbroggio hand-picked him to be the head chef of TiramesU on Lincoln Road.
