1 May 2012 Web Page Volume 25 Issue 5 Who the Hell is Ray King? I met Ray King in the mid-70 s at the Honky Tonk Hilton Chili Cookoff and have considered him a great friend ever since that day. I became Great Pepper of the Cowtown Pod in 1978 and Ray King served as Pepper Popper and Vann York as head judge. In the late 1970 s after competing in a chili cookoff in Oklahoma where there were no judging cups and the cooks were asked to turn in their entire pot of chili with the cooks name and city written on a piece of duct tape attached to the lid of the pot, Ray and I discussed the need to have fair judging for all cooks involved. Ray King lead the movement to formalize cooking and showmanship rules where all competitors could have a Photo courtesy of Steve Nadeau fair judging and earn their way to compete in the CASI championship in Terlingua each year. In a motorhome at a cookoff in Flatonia, TX, Ray lead a small group to write the basic rules which are still used today by the CASI organization. Ray then organized CASI into a corporation and developed the structure for the first Board of Directors which is still the business part of the CASI organization today. Serving as the first president of CASI, Ray then organized the first Great Pepper s meeting at Paul Smith s Sky High Ranch in Mineral Wells, Texas. At this first Great Peppers meeting the first CASI memberships and first sanctioned cookoff fees were developed to begin the revenue stream which is still the backbone of the revenue needed to conduct CASI s business operation on a day-to-day basis. Last month CASI lost a true fighter for the rights of all CASI cooks to be judged fairly, to have their points recorded, and the right for all cooks invited to Terlingua to be qualified by CASI rules. Ray was truly a CASI Pioneer and a great friend, I will truly miss the few times we saw each other during the years, but the memories will always be with me. Bucky Wins Texas Men's State What a weekend it was at the Texas Men s State Chili Cookoff! The Blanco County Fairgrounds in Johnson City was filled with RVs, tents, vendors, and public from March 30 April 1. Perfect weather welcomed a record competition of 155 chili entrants, 79 beans, and 52 wings, chicken ribs, and brisket on Saturday and another 83 chili entrants on Sunday for the Pod On The Pedernales cookoff. This year s Chili Champion is Bucky Seelig from Fredericksburg. There was also a local business competition with Photo courtesy of Donn Shands judging done through people s choice. After the votes were in the winner of the business category was L & L Drilling. Congratulations! Thanks to our generous sponsors and local partners, a record amount of proceeds were raised for Johnson City and Blanco County charities and nonprofits. If you didn t attend the cook off, you missed out on a lot of fun. I know it was beautiful in Johnson City for the Texas Men s State Open Championship. There were lots of great cooks, lots of effort by the Host Committee and a great weekend overall. Congratulations to Bucky Seelig for his victory. It is always nice to see someone who has dedicated so much of their life to CASI to step up and claim the victory. On a personal note, the second place winner was Mayo and my son Darren Moore. To the best we can figure, he has cooked Men s State four times and placed in the Top 10 three times across three decades going all the way back to Chilympiad. It is a good thing we got the big motorhome from Ancira, because otherwise I don t think he could have gotten his head inside to sleep. Now if I can just figure out that secret ingredient he used so effectively. Grin! By the time this Trails is widely distributed, the Texas Ladies State Open will be history. It is nice that it is after the first round of tax season is over, so that everyone has had the opportunity to get their refunds in hand. I hope everyone gets a chance to get some serious cooking done before the hot weather arrives and the gas prices go through the roof and into the stratosphere. Your Board is working behind the scenes to get the Ranch ready and to organize for this year s TICC. It will be our 46th annual cookoff. There have been a lot of cooks that have participated, none of which have probably had any greater impact than Ray King. We will miss you Ray. May God be with all of your family in celebrating your life and passing. Hopefully each pod has scheduled or has had their Pod Chili Cookoff! That is one of the annual requirements for a pod. If you have not accomplished this, you need to take the time and get it scheduled. You will also need to think about your officer s for next year. I will need that information as well. Also, please remember that all of your Officers to include your Regional Referees and Area Referees must have their dues paid up to October 1, You may send the money for those dues to me with your hard copy, send only the dues to me or to Darin Jester, Membership Director or you can use PayPal. PayPal gets the dues to us immediately upon completion of the transaction. The report will be due to me no later than August 15, 2012, but I would appreciate it completed and returned to me as soon as possible. It is important that I can tabulate the information and have it ready for the Great Pepper s Meeting. I would also like to have all reports in final form to pass to my successor making this a smooth transition. Remember that when you nominate a Regional Referee, this person must know the Rulebook and is willing to work with Promoters guiding them as they plan and execute a CASI Chili Cookoff. There often are several nominations for a specific area. When we get these nominations, we try to choose the best person for the job. I also like to make contact with the nominee and make sure that they are willing to do the job and know the expectations of this job. Now to another subject! I am not going to run for reelection! There are many talented and creative CASI Members who can do this job and enhance the method currently being used. They can bring in new ideas, better interaction and give direction for CASI and its membership. I am willing to work with this person and give any assistance. If you know of someone who would be a good candidate for this CASI Board Position, encourage them to fill out the nomination form and run for election to this job. Forms for the Annual Pod Report and for nomination to the CASI Board position will be in Resource Center on our web page ( and can be downloaded. I am hoping to do as much of this electronic as is possible. This has proven to be a good method. I will be sending by to each current Great Pepper (current in our present record) an electronic copy of this report. I am working on developing this report so that it can be easily answered electronically. With the problems that CASI has had this past year with the US Postal system, this provides a way to get it to me and on time. I will also accept hard copies. Once again I will remind you that if you want a CIS log in, please send me your request. You must have your dues current to get this log in. Darin Jester Membership Director Ray King Tribute Given by Doris Coats at Texas Ladies State Chili Championship April 21, 2012 Ray King was a redheaded preacher man, loving husband, father, grandfather, and great-grandfather. He was a graduate of Hardin Simons University and an ordained minister. It is said the some of us are put on the earth as a blessing and some as a lesson; I am not sure which one Ray was. He was instrumental in promoting growth in CASI chili and writing many of the rules that make every cookoff as fair as possible. He understood the importance of sponsorship in our organization and obtained Gaviscon and Rival Cookware as two of the first MAJOR sponsors of CASI. In 1988 he fought the CHILI WAR'S in Pecos, TX in Judge Lucius Bunton's courtroom that freed CASI from the Tolbert Estate. When the Texas Ladies State was in Luckenbach it was an invitational. Invitations to cooks went out in the mail and the first 50 ladies to register were the ones to cook. WHY he said when the Men's State in San Marcos had about 300 cooks. So he went to work on a rules change that said all Regional, Open, and State Championships would be open to those that registered and paid the fee. It passed at the Great Pepper s Meeting so he went to work on finding a location. Pat Irvin was the CASI ED at that time so with her help they were able to secure Starke Park here in Seguin. The first Texas Ladies State Championship on this site was in 1991 with a hay hauler flat bed as a stage and porta potties. There was NO treasury so he financed it out of his own pocket. In order to recover his investment he purchased a Rossi brushed steel 38 and sold a deck of cards for $10 a card. The event was a success and he-recovered his investment and established a treasury for the event. What started as a cook off with no funding due to Ray's dedication and hard work is the premier event we have today. There are too many accomplishments to list everything Ray did for the cooks and CASI in the short time we have today. All I can say is he gave himself, his time, and his knowledge so CASI would evolve into what it is today. He was truly a visionary and a CASI PIONEER. One thing I can remembering him saying several time is "Nurture the new cooks in CASI. Give them your time, knowledge, expertise and even a recipe. THEY ARE OUR FUTURE. With his dry sense of humor, I can hear him say "Do not shed a tear for me. Instead save it for when you drop you beer" and then laugh at his own joke. Instead of closing with a moment of silence, let's stand and give the redheaded preacher man a round of applause for what he has done for us and for CASI. "A LIFE WELL LIVED"

They jumped from 10,000 feet and opened their chutes at 5,000 feet. They reached a speed of 120 mph and all four landed on their feet. I was recently approached by someone I trust and respect to run for CASI director and after a discussion with this individual and others, along with much thought, I decided to be a candidate. I graduated from Fredericksburg High School in I obtained my Associates Degree in Business from San Antonio College in 1978 and my Bachelor of Business Administration degree concentrating in Accounting from the University of Texas at San Antonio in December You may ask why it took me twelve years to obtain my bachelor s degree. I started working full time in 1978 and then in 1986, I decided to complete my education. I continued to work full time and went back to school attending night classes during the spring, summer and fall until I graduated in December 1990 with my bachelor s degree. My work experience includes two companies American General Fire & Casualty Insurance Company ( ) and The Hartford (1982 to present). I have held the position of Premium Audit Telephone Auditor at The Hartford from June 2001 until the present. I deal with individuals, partners, members of Limited Liability Companies (LLC) and corporations on a daily basis with my job. On the CASI side of my life, I have been Treasurer for the Texas Hill Country Pod for the past 10+ years and Texas Men s State Chili / BBQ Championship for the past 4 years. I have been Regional Referee for the past 4 years and Area Referee for approximately 9 years. I was also Treasurer for SAP-CASI for 4 years. I started cooking chili in December 1999 and have qualified to attend TICC for both chili and showmanship every year except one or two. Even though I did not qualify to participate, I went to Terlingua almost every year since I started cooking and volunteered to work on various jobs that needed help. I consider myself a good candidate for the board due to my work history, my commitment, my ability to accept change and willingness to work hard. I have learned from friends to listen to what people have to say, do not react to situations when you are upset and do your homework before you confront anything in life. I have also learned that you must take responsibility and be accountable for anything you do in your life work and pleasure. 21 May 2012 Terlingua Trails Page 21 Cooking With CASI Greetings! The job of Upcomings Director is very enjoyable because you get to meet so many great people devoted to CASI chili. Many of you have been cooking chili for several years, and submitting an upcoming cookoff is old hat. For others the process can be something quite different. Now that I have a few months under my belt in this role I would like to share some tips and recommendations for submitting a cookoff. Think of them like 4 frequently asked questions or 3 common frustrations to avoid. At any rate, here are some guidelines to make the experience a positive one for all involved. 1. Use as your number one choice to submit a cookoff. Years ago was new and different, but nowadays it s just the easiest way to communicate - plain and simple. Send your to me at lee.kroencke@gmail.com. Just type the answer to all the questions found on the Cookoff Registration Form right in the body of your . You may have a form from a past cookoff or you will find one on the website. Click on Resource Center. Then click on Cookoff Registration Form. Advantages: it s by far the best means of submitting your cookoff. You have a record that you have done so. And on the receiving end, if there is a question I know how to get back in touch with you. Oh and by the way, it s by far the most popular method currently used by your fellow chili cooks and promoters. 2. Use the telephone. It s not as good as , but it will still get the job done. You can reach me at It s my cell phone and I have it with me. If you miss me please leave a message and I will call you back as soon as possible. Keep in mind when I call you back you may not be available, and thus can begin a series of calls back and forth. Nonetheless I will call you back. Phone tag the reason most people today try to avoid this method and use choice number 1; Use good ol snail mail. That s right the United states Postal Service. But here s a tip. The USPS is not what it once was. Ask anyone and they will tell you about misdirected mail and missing letters, slow delivery, well you get the idea. In fact I recommend that you go to great length to avoid using this choice. It is the least reliable and has led to the biggest frustrations your Upcomings Director has experienced since taking over the responsibility. If you must use it, and I emphasize must, fill out the form and find an envelope and mail it in. The address is CASI Upcomings, P.O. Box 15239, Lenexa, KS As you have often read in the fine print on more and more items these days...please allow extra time for delivery. How much time you ask? None of us can answer that. There is the biggest reason to use choice number 1; Enter the cookoff in the CIS system yourself. This is an option, but it requires some knowledge of the system and is best left up to those who have had additional training because you may think you have submitted a cookoff when in fact you haven t. It is easy to make a mistake and there is considerable room for errors. There is a lot of time spent correcting entries people thought they had done correctly. Even if you use this method I recommend using along with it as well to confirm your submission and know your cookoff is ready to be confirmed and approved. Send me an if you would like more training and we will get you squared away. If there is enough interest, I will be happy to conduct a training session at this year s Great Pepper Meeting. Once again avoid these headaches and use choice number 1; . Now for the regular monthly notice most of you are familiar with. If you have a cookoff coming up in the month of July your cookoff information must be turned in, confirmed, and approved by May 15th to meet the CASI Cookoff requirement. Do us all a favor and have it in by May 1st. Late advertisements mean your cookoff is on advertising probation, which is not the designation of choice for those of you interested in a good impression. But more importantly it generally means that your plans were not solidified, and the steps needed to make your event appealing to new promoters, sponsors, judges, and cooks have either been missing or were rushed. We owe it to our charities and CASI s future to do a better job of planning than that. Each month there are fewer and fewer people who have waited to the last 48 hours to submit their cookoffs. Thank you so much since that means your event has been more thoroughly planned and thus the kind of event that draws excitement and continued CASI growth.
