This program was established to recover our investment in existing Rancho CASI de los Chisos facilities and provide funding for future expansion. CASI is proud to be debt free. It is a wonderful thing to have partners step up and help us maintain that status as we grow the quality of the Terlingua experience. This is also a worthy investment since it places permanent signage and recognition for the donor. It recognizes those who have come before, while we celebrate the present. It is also something to consider in your estate planning. Our two current Legacy Sponsors are Ancira and Bruce Foods. Ancira came first with the naming of the Ancira Pavilion. Here you can enjoy cold beverages, fellowship and our retail store. Even though Ancira has dropped off the radar as a current sponsor, their Legacy lives on. We wish them well and hope to see them return when conditions allow. Bruce Foods undertook the naming rights to our judging pavilion. The Mexene Pavilion is home to the serious wrangling that determines our Terlingua International Chili Champion each year. When those final judges are seated on a November Saturday, the Mexene Pavilion provides the setting for this great tradition. Mexene has made quality products for over a hundred years and TICC is still a youngster at forty five! Now some great news! We are in the planning stages for new Rancho CASI facilities that will be underwritten by another grant from Bruce Foods. We may have to establish a new level of sponsorship to honor the generosity of the extraordinary folks at Bruce. Their Mexene, Casa Fiesta, Original Louisiana Hot Sauce, and Cajun Injector banners that dot our grounds show a constant presence at our event. The Bruce representatives also come out in force and celebrate with us each year. Watch for more details as they develop. I hope to bring the news to the Great Peppers Meeting. Please make sure you support these brands and do not hesitate to recommend them to the places where you do business. The future of CASI is bright. Yes the country is not hitting on all cylinders. Once again, the Colorado Chili Pod hosted the State of Colorado Red and Green Chili Championships in beautiful/scenic Grand Lake, Colorado. In addition, this year we also hosted, for the first time, the State of Colorado Salsa Championship. The event was outstanding this year for a variety of reasons. The first being the outstanding number of chili and salsa cookers that we had from a variety of locales including Colorado, Nebraska, New Mexico and last-but-not-least Texas. I hope that wherever you are that it is not as hot and dry as it is in West Texas. It is time to think about the Great Peppers Meeting, which will be held in Kerrville, TX on September 10, This year is the Rule Change Year. We only do the rule change every 3 years. If you or your pod is proposing a change, be sure that it is sent to me no later than August 15. I will then gather all proposed changes and send them to the Great Peppers to share with their pod so that each Great Pepper is aware of the wishes of his pod when the change is introduced and voted. Also, remember that your Annual Credential Report is also due on August 15, It must be completed and sent to me for review. The report is a requirement for representation of your pod at the Great Pepper s Meeting. If there is corrective action required and not resolved by the August 15 deadline, it will be forwarded to the Credentials Committee for their recommended actions. Please make sure that all of your pod officers have their dues current to September 30, If you are planning to attend the Great Peppers Meeting and have not made reservations or have not sent in your registration, it needs to be accomplished immediately. It is important to the Texas Hill Country Pod to have an accurate account of those attending for the planning of not only the meals, but for the meeting requirements. Are you looking for some excitement in your life? Consider running for the CASI Board of Directors! There are four positions that are open for election at the Great Peppers Meeting this year. You will find a copy of the Nomination Package in the Resource Center on the web page. It is labeled CASI Director Candidate Form. Complete the package and forward to me by August 15. All of the above documents can be found on the web page ( in the Resource Center. We have posted the information sheet Services Available in Terlingua so that if you need to make reservations or other contacts, it is currently available to you. We will keep this document updated. It is very important that during the next 2 months the Results of each cookoff be turned into the Tally Master as quickly as possible. Those who are still chasing points want to have the records updated quickly when they get that point. If you plan to use the CASI logo, please be sure to contact me for it and be sure that you follow the requirements for its use. In the Resource Center on CASI s home page ( you will find a document titled Use of the CASI Logo Guidelines. This outlines the requirements for use of the logo. Stay Cool!!! Pray for Rain!!!! 14 Page 14 Terlingua Trails August 2011 CANDIDATES SEEKING ELECTION TO THE CASI BOARD As some already know I am seeking a position on the CASI Board of Directors. Like all CASI chili cooks I believe in what CASI stands for and am eager to tell everyone I meet about the organization. As a member of CASI from both the perspective of a ground level member and, through many conversations with seasoned CASI members, I have what I believe to be a good understanding of what does work and, in some cases, did not work in the past. I may listen without speaking but when an idea is presented that I feel would benefit the organization and its members I will speak and if needed champion the idea. New ideas and new perspectives can only add to any organization. I m what some may call a hardhead at times and at other times a pragmatist. The position I would most like to serve CASI in is that of Tally Master but will accept whatever position the current Board of Directors deems appropriate. Communication, promptness, an ability to be a team player and willingness to promote CASI at all times are assets needed in our CASI Directors. I believe that both my work history and personal history with my chili friends show I possess all of these qualities and many more that would be an asset to the CASI organization and its members. I d like to personally thank each and every CASI member for their support of the various charities throughout the year and hope to meet many of you on the chili trail in the near future. 15 August 2011 Terlingua Trails Page 15 Bad News with a Solution The CASI Board was advised at this weekend s Board Meeting that a burn ban is in effect for Brewster County. This ban prohibits the use of any outdoor fire sources, including propane stoves, grills, BBQ pits, fireworks, camp fires, etc. In other words, no chili or BBQ cooking. The County has been asked if they would approve our event if cooking were done in the pavilion & stage areas; they advised that would not be authorized either. Even though we are over 4 months from TICC, we would be remiss in not addressing this problem. It is our fondest hope and prayer that rain will fall in the Terlingua area, as well as in the many areas that are currently experiencing drought conditions and wildfires, but we must be prepared if it doesn t. As many of you are aware, CASI is required to obtain a Mass Gathering Permit prior to TICC. In the event this permit is not approved by Brewster County, we would be unable to hold the event. To ensure the approval of the permit, we must take action at the Great Peppers Meeting in September to allay any fears officials might have regarding TICC. The Board is prepared to request that the Great Peppers pass an emergency rule change that would allow cooking of chili in an enclosed structure, such as an RV or travel trailer, during TICC, if necessary. This rule change would not extend to tent structures. If this emergency rule is passed, it would also necessitate those chili cooks who have RVs and trailers to allow those cooks without such to open their homes to them so everyone is given an opportunity to participate. Knowing the generosity of the chili family, I m sure this would not be a problem. We would compile a list of those needing to be accommodated on the day of the cookoff and match them with chili cooks. TICC will NOT be cancelled. This is our 45th Anniversary and chili cooks are some of the most resourceful individuals in the world. We will keep you apprised of the situation. Seeing the volume of work that Board members do has to take its toll. I certainly understand that there are other things in life that must be done. Sometimes other things suffer in order to do the tasks entrusted by the people who elected you. The job of Talley Master does not give you a break but requires almost daily attention. Please consider running for re-election to the Board. I have spent the night with several Great Peppers who I would certainly use my powers on to see that you win. You have done an excellent job as Tally Master but I would understand if you needed to give that up and take on other duties as a Board member. Tell them your fans made you do it. - Melba Dear Melba: I hope you haven t been under the weather. I say this because I have missed your column lately. I have a question or two for you, and I prey it isn t too late for you to regurgitate your sound advice. I haven t made final table since I turned 50 last year and I m wondering just what the problem might be. I have noticed that my chili grind has been slumpin toward the bottom of the pot lately, and my onions aren t as perky as they once were. I long for the days when heads would turn as I proudly walked my cup to the Judge s table. Back in the day you could bounce a quarter off my cut meat. My onions brought tears to judges everywhere. You need to pick your cookoffs wisely from now on. Also congratulations go to the past recipients for continuing their education. I need to remind the CASI members to make contact with any of the recipients that they know and encourage the recipients to have a wonderful school year. I never fathomed the amount of expenses that go into a college education and the aid you provided to me helped in more ways than you could imagine. Besides the tuition, room and board, activity fees, and other school fees I never thought in my wildest dreams that I would spend $285 on a college anatomy book that would last me through the duration of one semester. I also didn t plan on spending $750 on student health insurance to last me through the year; in other words, I don t know how I would have been able to make it through the four years without the generosity of your organization. While attending Macalester College, a private liberal-arts school in Saint Paul, Minnesota, I was very involved within the school and I feel very privileged and rewarded now that I have graduated. When I enrolled I really had no idea what I wanted to major in, all that I knew is that I wanted to be an orthopedic surgeon so I figured choosing a major within the science field would be most beneficial. After taking Cell Biology and Genetics my first semester I knew that was where I would like to place the focus of my studies for the remainder of my college education. While at Macalester I also was a member of the MAC Fighting Scots football team where I was a four year starter on the defensive side of the field. My freshman and sophomore years I played outside linebacker and my last two seasons I was moved to the strong safety. I received team awards my freshman year for Special Teams MVP and also my junior year for Mr. Nasty, the big hitter, big hustler, etc. On the 2010 team, my final season, our team broke many records for school history as well as recorded the best season in 26 years. Being a member of the Macalester Football team was one of the most rewarding experiences in my life. Once again, I would like to thank CASI for all of the opportunities you provided for me and for allowing me to be as successful as I was able to be. I am so thankful that there are so many organizations out there that genuinely care about the further education of young men and women. I ve already began cooking chili with CASI and I feel so proud and honored to begin my involvement in such a generous and caring association. Sincerely, Matthew Elliott I am writing this letter to express my gratitude that you considered me as one of the recipients for your scholarships. I attended Macalester College for four years and received a degree in Mathematics this past May. As I m sure you all are well aware, college is relatively expensive in this day and age, so any financial help that a student is able to receive is always greatly appreciated. After having graduated, I am able to look back on my college experience and see that I learned a number of things outside of the classroom. I can safely say that my college experience will benefit me in many ways throughout my life, and I truly appreciate your organization s help in funding that for me. In attending Macalester, I was not only able to receive a high-end education, but I was also able to continue playing football as well. I was a three year starter on Macalester s team playing wide receiver. I earned the team s Offensive MVP in both my junior and senior seasons, and in my senior season I was included in the school s record book for touchdown receptions. Furthermore, I met a great group of guys that I played alongside and I was also able to play with my older brother which isn t something that everyone has the chance to do. I honestly had the time of my life playing football in college; it made the heavy workload of classes much more worth it. Currently, I am planning on staying in El Paso, TX and becoming a high school math teacher and football coach. I have recently started cooking chili at your cook-offs alongside my grandfather, Bobby Elliott, and in all righteousness, the CASI community is one that I truly enjoy associating myself with. They are a great group of people and a lot of fun to be around. Again, I just wanted to thank you from the bottom of my heart for providing me with four years of scholarship money; attending Macalester College was a very enjoyable, memorable and life-changing experience. Twenty three cooks gathered for the 21ST ANNUAL WELCOME HOME DESERT STORM COOK-OFF at the Independence Day celebration in Sierra Vista, Arizona. Because of the wildfires there were no fireworks this year but the day did include a 50 gun canon salute and a very impressive fly over from Davis Monthan. There were fireworks, however, in the mouths of the one hundred fifty tasters who came to support the San Pedro Kiwanis Club charity or, just to enjoy the festivities and taste some darn good chili. Roy Fisher, Arizona Men s State Champion and Norm Dunn, Arizona State Champion were present and stepped up the competitive juices of the other cooks. The results proved that the best chili and salsa truly turned out to be the best! Doug Bucky Seelig who was a bit under the weather the day before the cookoff rallied to take 1st place in the CASI red division! He was closely followed by a number of red chili cooks (mostly from Texas) including Carolyn Seelig, Tim & Connie Collier, Laura & Pat Moriarity, Alan Dean, Steve Nadeau (the world traveler still can cook good chili), Lyman Wilkinson (the top Colorado qualifier) and Margaret Nadeau. The other automatic Colorado qualifiers included Rocky Kimball and Amy Hardesty (she has learned well)! The green competition was won by Mike Dina. Mike was followed by Julie Ingerson (a regular top Green qualifier) and Joe Holt. The top three green places were Colorado residents! The first-ever State of Colorado Salsa Competition was won by Amy Hardesty (Colorado). Amy was followed by Sandy Williams (New Mexico) and Robin Darnell (Nebraska). The green places were spread around geographically! The showmanship was won by Karen Hendricks and her team called God Bless America. Sandy Williams/ Way Out West took second and Robin Darnell/ Jamaican Me Hot took third. Congrats to all the winners and to those that were a part of this annual event. We would welcome any of you next year for our 29th Annual event June 23, It will again be held in Grand Lake. To you cooks who live in hot summer locations (Oklahoma, Texas, Arizona, etc), Grand Lake is an outstanding place to visit in late June to escape the summertime heat. There were 37 cooks Saturday and 29 cooks Sunday. Fun was had by all cooking chili, relaxing and swimming in the river, riding four wheelers and golf carts around Harvey & Carol s 300 acre pecan orchard, a great fireworks show Saturday night with cooks party and, of course, the Ladies Catfish qualifying event. Renee Griffin won First Place chili on Saturday and Sylvia Riordon won First Place chili on Sunday. Janet Nash won Show both Saturday and Sunday. Cookoffs are tough in July unless you re at the Red River Valley Pod cookoff (even the trucks go swimming). STONEWALL, TX - Becker Vineyards was the site of the FIFTH ANNUAL ALL-AMERICAN CHILI COOKOFF on Monday, July 4. This celebration of Independence Day featuring showmanship, chili sampling, live musical performances, and wine tasting is an annual fundraiser for Habitat For Humanity. Hundreds of winery visitors made donations to Habitat in exchange for chili tasting kits. Each kit contained a ballot for People s Choice chili. The chili receiving the most ballots for People s Choice or best chili of the day, belonged to Kardon Blue Chili, prepared by Karen Foley of Houston. We truly appreciate the efforts of so many cooks who took time to prepare extra chili to satisfy the public demand and to raise funds for Habitat. Festivities began on Sunday evening with a cooks party in the winery tasting room. There was music, gourmet food, plenty of wine, and lots of great chili camaraderie. On Monday, forty-seven cooks competed in the CASI competition hoping to win points toward qualifying them to cook in the Terlingua International Chili Cookoff. The individual winner in the CASI division was Randy Pittman from San Antonio. Pittman was especially excited because the four points he earned qualified him for TICC for the very first time. Gary Whitford s Hippi Chili team won the showmanship competition. Texas Martini Girls were second. Andrienne Grant. Joel Bowman took top honors in chili with Barefoot s Toe Jam Chili placing first in show.

29 August 2011 Terlingua Trails Page 29 To all those that care: It seems the CASI BOD brings up issues that effect the CASI org as a whole and then votes on items that seem to me to be CASI business that the members and the GP s should be involved in deciding. The News letter recognition issue is one of those items. It would be easy to send a message to the GP s about issues and they can send it on to the members to see if there is a desire to be part of the discussion and decision. Yes I know many of the GP s do have but do not use it or do not send on the info to the members and yes I know many members do not read their own s about CASI. But it is an attempt to get the communications going. Please note I do not see any messages from each BOD s to the GP s about anything. That is just wrong. I bet only 9% of the members read the blog so I see it as not the only method of communications. So with this said I agree with Larry Velasquez that the news letter issue is a Great Peppers Meeting discussion and not just a BOD decision. Lets work together to make communication work. And lets make it clear that the running of CASI is the ED and the GP s job and the job of the BOD s is to do their assigned job s and run TICC. We have and will have many good people on the BOD and we do need to support them as they work with us to support CASI.
