I ve enjoyed my eleven years on the Board. It s been challenging and rewarding. I m not going away, simply stepping back and taking a deep breath. It s been a great ride! I attended the U.S. National Open Chili Championship on August 13. This was the 2nd year for the cookoff and it continues to get better. Hats off to Larry & Janie Burruss for all the hard work they put into this cookoff. Congratulations to Pat Krenek, this year s winner, and all those in the top 10. The top 3 cooks automatically qualified and they all needed points. This Cookoff also had a true international flair. The 19th place cook, who was also a member of the 2nd place show team, was Maria Palou from Spain. The Kinnisons introduced this delightful young lady to the world of chili. I hope all the Pods have reviewed the rulebook and submitted proposed rule changes for the Great Peppers Meeting. This exercise only occurs every 3 year, and we need to take advantage of it. While new rules aren t necessarily needed, we can always simplify the rules we have. I hope you all continue cooking and supporting the charities. I look forward to seeing you at the Great Peppers Meeting in Kerrville and, if not, at TICC! Much love and thanks to all of you for a wonderful 11 years! Renee Reflections from the ED By the time that you each get this Terlingua Trails, we will be packing and getting ready to attend the Great Pepper s Meeting in Kerrville. I anticipate that this will be a lively and very successful meeting. The Great Pepper Meeting committees have worked hard to make this a great meeting and a fun event for all of the attendees. It is with sadness that I report that we have 3 pods who have notified me that this year they will not be submitting their Annual Credential Report. Here is hoping that during this next year, they can gain new enthusiasm and regenerate before our next Great Pepper s Meeting. I am excited to announce that the State of Alabama Pod, who did not submit a report last year, has gained new life and is going strong once again. They have even planned their Alabama State Open Championship Chili CookOff to be held next March. Congratulations to you guys! This is the last month of the Chili Year. There has been many successes for individuals as well as many of our Pods. Let s begin planning for the Chili Year for even bigger and more successes! There is still time for you to get the last points that will qualify you for TICC. There are several Last Chance Chili Cookoffs this month. Check the CookOff Calendar. There is probably going to be one very near to your area. These are always a lot of fun and it is always exciting to see somebody get that last point. As we begin the new chili year, there will be several changes. We are going to try to work the Referee issue before a Chili CookOff is accepted and placed on the calendar. Hopefully this will prevent several cookoffs on the same day in the same area. This should help increase the size on some of the cookoffs and it will increase the amount of money raised for the charity. It will also take some planning on each of the promoters and the pods scheduling these cookoffs to plan far enough ahead to have some flexibility with the date. This is worth a try, especially for the metro areas where there are several pods and lots of cookoffs. This has been a problem that I have heard about for the last 3 years. Maybe we can streamline the process. Here s hoping that you each have all the points that you need to qualify by Sept4ember 30. Remember our motto Chili, Charity, and Fun! Pray for rain in West Texas! Janice

Darin Jester Membership Director Hello my Friends, in case some of you may not have noticed we are just 2 months away from TICC. I ve heard it said that the older one gets the faster time flies. I really can t attest to that, as I haven t reached the point of being classified as OLD but, for the life of me I can t remember at what age a person reaches that classification. My Motto is Live life every day as if it were my last day. With that being said, I ll get down to business with my Annual Old 320 requests. If you will not be using your cooking site in the Old 320 Arena and are willing to let someone else cook on it, please let me know, or if you have given someone permission to use your site, I need to know either way. We have many new qualified cooks that are coming to Terlingua and they would like to cook in the Old 320 Area. All Pods that have an Old 320 Site, I need to know whom the POD MEMBER is that will be cooking on the Pod s Site. Cooks that do not have their own Old 320 Cooking Site yet want to cook in the arena, please come see me after you register to cook. I will be located in the Registration Area. We are still taking orders from Pods for The Wall Plaques. The cost of the plaque is $ and it dresses up the wall to the North side of the Old 320 Area. I will have forms available at the Great Peppers Meeting; or if you want, you can call me and I will mail you one. Volunteers are needed to help with the marking of the cooking sites in the Old 320 Arena on Wednesday, November 2, around 9:30 a.m. I appreciate everyone s response to my request in the past years and hope I can depend on you again this year. We will be giving away two Wendell Rankin stoves again this year but you have to cook in the arena to be eligible for the drawing. I would appreciate two volunteers, preferably not cooking, to pass out the raffle tickets after the cooks have set up, approximately around 9:00 or 10:00 a.m. You do NOT have to be an Old 320 Member to cook in the Arena. There will be an Old 320 Meeting in the judging area on Friday, November 4th, immediately after announcements of all Scholarship Cookoff Events. I am still lacking Profiles from some of you members. You may not consider this as an important issue, but these Profiles are a huge help to the Alcalde and CASI. The Profile Form is located in the Resource Center on the website at Please complete the form and return it to me as soon as possible. Thank you all. May everyone have a safe trip to the Ranch; I can t wait to see you. Ralph Hay Alcalde Rhay16@comcast.net ALCALDE REPORT

8 Page 8 Terlingua Trails September 2011 WELCOME WESTERN SPIRITS SPONSORSHIP We are very pleased to welcome Western Spirits as the newest CASI Gold Sponsor. Their fine family of brands will be formally introduced in Kerrville, TX at the upcoming Great Peppers Meeting. Of course, we will be tasting and sampling. Salud!! The period leading into the Great Peppers Meeting is a great experience for sponsorship. I get the opportunity to travel and interact with sponsors as we make plans to mutually benefit their products and the goals of CASI. We have a diverse group of sponsors, so there is not a template that applies to everyone. We are fortunate that most of our sponsors come to Terlingua and experience it first hand. Our membership has always welcomed them to our little corner of the desert. We are celebrating a record year for sponsorship with a record number of sponsors. We are now fortunate to have forty four sponsors of various sizes. With Western Spirits coming on board, we now have seven Gold sponsors. The tremendous increase in our Friends of CASI program has been extremely gratifying. The Legacy Program is alive and well with new building projects on the drawing board. The TICC winner will receive a treasure trove of Jim Ezell presenting a CASI sponsor plaque to legacy sponsor Si Brown at the Bruce Foods World Headquarters in New Iberia, LA items that have been contributed to ease the pain of winning the Title and that big old pepper. It has been great to serve CASI as Sponsorship Chairman. I look forward to expanding my role through a new commitment to the Board of Directors. We have a wonderful organization with honorable goals and a great history. Colorful, yes, but we have Walked the Walk to back up our Talk! Thank you for your support. 15 September 2011 Terlingua Trails Page 15 Big Ole Tears in My Eyes Lyrics by Chuck Parrish Rebel Yell Chili Show Team Emory, TX (To the tune of Louvin Brothers song Must You Throw Dirt in My Face ) You ve already put big ole tears in my eyes, Must you throw dirt in my face. I sit here a listening, as the numbers are called out Hoping for at least tenth place. I hear others yell, when their number s called And I see the joy on their face, But one after the other, that numbers not mine A tear forms upon my face You ve already put big ole tears in my eyes, Must you throw dirt in my face. The judges at cookoffs, have my world in their hands I try each week just to place. I drive the miles, I set up my stove Hoping for some twist of fate But try as I might, I just can t seem to win, Oh, how fun would be first place. You ve already put big ole tears in my eyes, Must you throw dirt in my face. I ve made many friends, while stirring my pot. They tried to give me advice Add way more cumin, pour on the salt, Cayenne is an overrated spice. They say, Just cook your recipe and you ll finally win, But I won t qualify at this pace. You ve already put big ole tears in my eyes, Must you throw dirt in my face. (Chuck is a new cook and states, I m brand new to all this fun, but am having a great time. I started in April of this year and have been in about 10 cookoffs so far. I m having a great time and meeting a lot of really good people. Listen for Chuck to be singing his songs during showmanship at cookoffs.) There are still cookoffs available with three last chance cookoffs on September 30 in Amarillo, Garland, and Montgomery, Texas. A big toast to Larry Burruss and his team that put on the 2nd Annual US National Open Chili Championship last month. And, another toast to the Champion, Pat Krenek of Houston who just might be on the NASCAR circuit this month. This month is highlighted by the Great Peppers Meeting in Kerrville, TX. Those darling gold dust twins Traci and Tricia plus Debbie LaLanne have worked all year setting this meeting up. Those of you going to the meeting be sure to thank them. One last toast to their husbands for lending them to CASI. Dear Melba, Now that pretty much every cookoff, and I guess all the chili cooks, have abandoned the traditional cut meat for their chili, and cookoffs are advertised as Chili Grind Only, I see a lot of cooks using what they call tube meat, which is your basic hamburger grind, very small grind. In the stores, I see a chili grind package with very large strips. Please explain the difference between tube meat and chili grind and, if there is one, why are the cooks not adhering to the Chili Grind Only rule? - Blu(e) in East Texas Dear BET, I feel your pain. In fact, I d like to take a switch to the first person who decided to use hamburger meat in competition chili. And, give another switch to the monitors and head judges who allow it. It seems the answer now is to legalize hamburger meat by calling for Grind Only in the notice. The easiest thing to do now is take your leftover chili home, add some oregano, and serve it over pasta. - Melba Dear Melba, Your reputation as the premier rising star, start-up advice columnist in the Terlingua Trails helping chili cooks everywhere and their groupies is second to none! That is why I have sought you out..your answers are to the point, on target, and you don t beat around below the belt. I am a long time, burned out, reporter for a great metropolitan newspaper, and am hoping you can give me some sound advice on women, one newspaper person to another. It s about this girl, L. L., I like very much, but she, as everyone else, can t seem to see beyond my glasses; can t see me for who I really am. She likes this other guy I ll call S, and I can t seem to get her attention away from him. It s depressing the way she gets all ga-ga when ever S enters the room. When he leaves, and I re-appear, she just walks away, making me want to run and hide in a phone booth! S is a real super kind of guy, a man of action, a man of steel, whereas I am just a mild mannered reporter. Do you think that makes the difference, or is it just true girls don t make passes at men wearing glasses? - Sign me Just Clark Dear JC, Sounds like I need to visit the big city and give L.L. some competition (just kidding Clark). You could wait for S to rust away but have you thought about showing L.L. your Pulitzer? Some girls like that. - Melba Be sure to hug a chili cook, especially the old ones. - M

16 Page 16 Terlingua Trails September 2011 CASI Scholarship Program 1 2 I would like to take this opportunity to congratulate again the 2011 CASI Scholarship recipients. Also congratulations go to the past recipients for continuing their education. I need to remind the CASI members to make contact with any of the recipients that they know and encourage the recipients to have a wonderful 3 school year. There was a wonderful response from the Great Peppers or Pod Representatives who presented this year s awards. I received several pictures of the presentations which have been printed in the Trails. Also, several of the recipients 4 have written either updates on their school year or thank you notes for the scholarship money. We are beginning to have more communication from the recipients which was our goal. Barbara Herrin CASI Scholarship Program Administrator SCHOLARSHIP PROGRAM Hello, I am writing in regards to my CASI Scholarship. Now that the new school year is approaching I just wanted to touch base with the CASI organization. This is the beginning of my final semester (!!!) at Boston University and I will be spending it in London at their satellite campus. Needless to say, I am extremely excited. While abroad, I will also be placed in an internship position with an organization (yet to be decided) that will assist me in furthering my goals past undergrad. As I have mentioned previously, I am a Psychology Major with aspirations of earning a Masters of Social Word, so my hopes are to be placed in a clinical setting in order to observe the field that I worked for 3 years to enter. None of this would be possible without the assistance and support of CASI in the obtainment of my education. Thank you, again, for everything. Best regards, Samantha Sievering CONDOLENCES Please keep these families and friends in your thoughts and prayers. Dear Barbara Herrin and other CASI board members. I just want to start off by saying on behalf of my family and I, thank you so much for such a wonderful opportunity and I truly appreciate it. All the hard work I have put into my high school years is now truly paying off. This is such a great offer and will go to such great use as I work towards getting my degree in criminal justice at Our Lady of the Lake University in San Antonio, Texas. 17 September 2011 Terlingua Trails Page 17 Dear CASI, Dear CASI, Thank you so much for the scholarship money. I will now be able to graduate with my Bachelor s degree in December and begin the Masters program. This money made it possible. Thank you, Balli Scarbrough San Angelo, Texas With pride, grandmother and Great Pepper of the Concho Valley Chili Pod, Sherry Maus, stands with granddaughters, Balli (left) and Kelli Scarbrough First, I would like to thank you for choosing me for a scholarship, but I would also like to thank you for all the money you raise for others in need. The money that my scholarship provided assisted me in buying all of my books for nursing school. I was able to graduate from Howard College Vocational Nursing program in May and two weeks later start summer classes at Angelo State University for my continuing education to become an RN. I also began working fulltime at San Angelo Community Medical Center as an OB/GYN nurse. Luckily my employer is anxious for me to get my RN so they are going to work around my school schedule this next year while I am at ASU. Thank you for granting me another year of scholarship so that I can complete my education and get my BSN. 18 Page 18 Terlingua Trails September 2011 OUTLAW CIGAR LIGHTS UP CASI OVERLAND PARK, KANSAS - The new Outlaw Cigar South hosted a great CASI event that featured the best Midwest chili cooks, cigar aficionados, calendar girls and celebrities from cigar manufacturers. The marketing genius of the owner, Kendall Culbertson, has made this store a cigar smoker s version of Cabelas or Bass Pro Shop. It is a worthy tourist attraction for the area. Supporting charity, especially our Military, is a cornerstone of the marketing strategy. Top honors in chili went to Roger Foltz of Mesquite, TX, Cecilia Rivera of Lenexa, KS, and Erma Smith of Fort Smith, AR. The showmanship winner was Steve Stewart of Wichita, KS. The growth of this cook off will be assured as the word gets around. I am very pleased to welcome Outlaw Cigar as the newest sponsor of the Terlingua International Chili Championship and CASI. Specifically, Outlaw Cigar will be co-sponsoring the famous Tequila in Terlingua Society along with Tarantula Tequila. This backstage Wednesday night event brings the gentlemen at Terlingua out for an evening of cigars and tequila. Premium cigars and many great door prizes will further enhance this fun party. Kendall has also committed a box of fine cigars to the TICC Winners Table that will be personally signed off by a famous cigar maker. Our family of great sponsors continues to grow and I look forward to presenting them at the Great Pepper s Meeting. Until then, Thanks as always for the wonderful support of our members and sponsors.
