1 August 2010 Web Page Volume 23 Issue 8 High Desert Pod's 20th Annual Welcome Home Desert Storm Chili Cook Off 1st Place Winner Cindy Dunn with Penny and Norm Dunn The High Desert Pod s 20th Annual Welcome Home Desert Storm Chili Cook Off was held on July 4th at the Veteran s Memorial Park in Sierra Vista, Arizona. Twenty five cooks gathered to cook their favorite chili recipes and celebrate the birthday of America. Patriotic shows were abundant with Jill Johnson, (Jilly s Silly Chili) of Sierra Vista winning as she and her team drew in the crowd with games that included throwing the spoon in the chili bowl. The prize winning chili belonged to a very happy Cindy Dunn from Cornfield, Arizona. The charity for the cook off was the San Pedro Kiwanis Club who sold 174 tasting cups in twenty minutes, turning away around 80 potential tasters. The Kiwanis Club charities include a program for Just Kids and Stocking Stuffers during the Christmas holidays. The organization puts in a lot of work making trophies and giving each cook a memento for the day. The High Desert Pod appreciates all that they do to make the event successful year after year. On Friday evening the cooks gathered for a pot luck dinner which included fried chicken with all the trimmings, watermelon cake and apple pie. What could be more American than good food and good friends who enjoy making good chili. ANNUAL REPORT: Great Peppers: I hope that each of the Pods has completed the Annual Report and have it on its way to me so that we can get the credentials completed and have all our information ready for the Great Pepper s Meeting. If you have not sent your Annual Report to me, remember that the deadline is August 15. A completed report is required for you to be seated at the Great Pepper s Meeting in Salado, Texas, on September 11. If you cannot find the original that was sent to each Great Pepper the last part of May, you can either contact me or you will find the Report in the Resource Center on our web page ( The Great Pepper s Meeting is right around the corner. I hope that you have made your reservations and have submitted your registration. I want to encourage all of the CASI members to attend this meeting. The decisions made here affect every CASI member. It is also a great place to share ideas and meet other CASI members from various parts of the world. A lot of good discussions happen, not only in the meetings, but in the Hospitality Room and during breaks. If you have an idea that you would like to share with this group, please send that information to me and I will make sure that it is included in the packet. This information needs to be to me by August 25. This gives me time to get the information together and prepare the packets. If your Pod has a handout that you intend to pass out, please provide them to me so that they can be included in the Registration Packets. If you are planning on requesting a New State Open, New State Men s Open or a New State Women s Open, please submit the application with your Annual Report. I want to send an to all of the Great Peppers with all of the proposals so that they have reviewed these documents and are prepared to vote. Regional Referees: If you appoint someone to be a regional referee for a CCO and that person is not on our list of referees, please send me your request so that I can identify and approve them. 3 August 2010 Terlingua Trails Page 3 From the President Can you believe that by the time this issue of the Terlingua Trails comes out that summer will almost be over at least that part of the summer when kids are out of school. I m afraid the hot weather will linger for quite some time though. I had the good fortune to attend the Marathon Cookoffs over July 4 and spend a week on Spring Creek Ranch in South Brewster County. The Cookoffs were great; the weather couldn t have been nicer except for the occasional monsoon. I got to visit with cooks who I haven t seen in a long time and met new cooks who will be on the chili trail soon, if not already. Granted, I haven t spent a lot of time in Brewster County, except during October and November of each year, but I have to say I m sure they don t normally get that much rainfall in July. When traveling through Fort Stockton on June 30, the water was running curb deep in the streets I went prepared with sunscreen, a big floppy hat, and plenty of sleeveless shirts and shorts to ward off the heat of the day. I made sure I took paperback books to read as siesta time rolled around when it was unbearable to be outside. To say the least, I got very little reading done, used no sunscreen, and wasted money on the hat. The weather was absolutely wonderful! The desert landscape changed overnight. Plans are being made for the Great Peppers Meeting and TICC. I encourage those interested in attending the Meeting in September to come and see the inner workings of the CASI organization. Please get involved in your Pods, too, as this is your organization. I encourage those interested in serving to run for the Board of Directors. When TICC rolls around, I ll be in my last year on the Board. While challenging at times, it has been a rewarding and gratifying job. I only wish more individuals would become involved. Jim Ezell, Sponsorship Chairman, has presented several proposals to the Board which will be voted on by the Great Peppers. These proposals could change the face of our organization and take us into the future. John Goforth Membership Chairman Don Hoy Announces Candidacy To all chili enthusiasts, I Don Hoy am pursuing a position on the CASI Board of Directors to strengthen our goals with all involved. I have been a participating member of CASI for 25 years and growing. In my locality with the VASA Pod, my roles encompassed being a referee, Pepper Popper, expanding to a Regional Referee in the Gulf Coast region for 17 years, including assisting in numerous other areas at TICC for the past 7 years. In the past 2 years as a Krazy Flats Coordinator I have accomplished an expansion assisting the Main Concession arena to enable further promotional sponsorship progress in the growth of the TICC experiences. In continuation by attending Board of Director meetings over the past three years and gaining comprehension of the functions involved to what each director s positions task involve. I have found in my experiences needed expansion in communication between the Board of Directors with the Great Peppers and all members, for it takes numerous inputs to increase membership and participation by showing both the young and old for organic growth to facilitate our organization to thrive rather than just survive. Without sharing, our great organization cannot succeed when elders are the only ones being participating members and succession is not assisted, as well as created. I know numerous tasks are involved to any organization s survival. It is in our diversity through family and friends with continual additions inviting and welcoming all to become CHILI Heads as my family, friends, and I are now and forever. 7 August 2010 Terlingua Trails Page 7 Alcalde Report Thank you so much to all the Old 320 Members that took the time to fill out and return your Ballot to me. For those of you that have not heard the results on our Ballot here goes -320 Ballots mailed out; 174 Ballots returned to Alcalde in time allotted; 92 voted YES, 81 voted NO and 1 SUSTAINED. This issue, in accordance with the majority vote, was brought before the Board of Directors at the June Meeting. After discussing this issue, the Board elected not to make a change at this time. A great big THANK YOU to each of you who completed and returned your updated Old 320 Profile form. Some of you have no idea how important this information is to your Alcalde and CASI. Why is it so important some of you may ask? The new Old 320 Profile form includes a line for you to put to whom you wish to bequeath your site to upon your death. The first profile form that many of you sent in does not have that information. I m just looking out for you, Members. My feelings are this information is personal and should be decided by you and not the Alcalde or CASI BOD. If you need a form, you can go to the Resource Center on CASI s website, look for Old 320 Documents and Information, and download a copy from there. Next, but certainly not least, is the setting up of canopies in The Old 320 Area at TICC. We are all aware that our Sites are 8 X 8. These days, the majority of our canopies are 10 X 10 and, now a few 12 X 12 canopies have been popping up. We have had some minor problems in the past with this. I am asking you, PLEASE, work with your neighbor on this issue. CASI is aware that this is a problem and we are looking into trying to resolve it. If you have any suggestions, let us know. PLEASE, I beg you to reconsider if you are planning on bringing a 12 canopy this year and I thank you for your cooperation. I am working With You and For You, Ralph Hay Alcalde The Texas Festivals and Events Association s Annual Conference was kicked off in a grand way with a CASI Cook Off and Margarita Pour-Off during their kick-off party on Thursday, July 8 at Traders Village in Houston. 36 cooks turned out to show off their best for the festival organizers from across the state. From margaritas and chili, to show, the TFEA folks were impressed and still talking about the event several days later. The margaritas were a great icebreaker for the evening and, with People s Choice award up for grabs, an ideal way for the TFEA folks to meet all the CASI cooks. Congrats to Marolyn Blair who won not only People s Choice, but also 1 st place margaritas! Evidently, she knows what to do with limes and tequila! This was a wonderful opportunity for CASI to show what they can do and it looks like some festivals will want to host a new cook off in the future. Thanks go to TFEA for asking Becky Allen to put together this event and Mike Baxter of Traders Village for hosting us at his facility. Also, thanks to all the CASI Directors who came out to support this cook off as well as several previous TICC winners. In addition, we owe a huge thank-you to all those who helped with registration and the judging tables, especially Sherrie Davis for being Referee and Keith Karaff for serving as Head Judge. As the conference moves locations from year to year, we don t know if we ll get the opportunity to do this again, but if we do, we ll certainly be ready! 9 August 2010 Terlingua Trails Page 9 July 4, 2010 Dear CASI, Thank you very much for the CASI scholarship I have been so blessed with for the last two years. As a yearly update to you all in regards to my college: I will continue for one more year at Tyler Junior College and will graduate with an Associate s Degree in Education in May It has taken me a little longer than most due to cheerleading taking up a lot of my time my freshman year at TJC. Although, I certainly enjoyed cheerleading, I came to realize that it was too difficult for me to keep up my schoolwork and the extracurricular activities that cheerleading entailed. Dear CASI Scholarship Committee, I would like to thank you for the generous scholarship towards my education. I will begin clinicals in August, which is one step closer to becoming a nurse! I plan on using my scholarship to buy my books and nursing supplies. Hopefully with this money I will be able to also continue my chili cooking hobby. I love the opportunity to raise money for the wonderful charities CASI rewards. Thankfully CASI is now helping me with my dreams in being a nurse and helping people. Back Row - Jim Miller (6th), Fred Lazarus (4th) and Kelly Draper (1st Place Show) This year s Chili Legends Memorial Cook Off was a huge success. A big thank you to all who were in attendance. For those who did not make it, you were missed, but we had a large time! Saturday, Kelly Draper won first in show and in chili. This was Kelly s first, 1st Place Chili! Congrats Kelly! For the Chili Legends Cook Off on Saturday 1st thru 10th place received a fancy stool with a blue jean embroidered cover. The big winner on Sunday was Laura Coad taking first in chili and second in show. Way to go Laura! On Memorial Day, Lisa Brown took first place. This is Lisa s first year to cook CASI chili. Her first place win on Monday qualified her. We are so proud of you Lisa! A big thank you to everyone that gave a helping hand over the Memorial Day weekend. A lip smacking Thanks to Jim and Fran Miller for the yummy BBQ on Saturday and Zanna, Robert, Delana and Jeff for the shrimp boil on Sunday. I would also like to thank ALL the great kids that helped with trash duty. We had another fine Fourth of July chili cookoff at Becker Vineyards in Stonewall, Texas this year. We began the weekend with a cooks party and dinner hosted in the winery tasting room. Hill Country fare and offerings of Becker wines were enjoyed by all. Fifty-six cooks worked on their judging samples and served chili to the hungry public. Habitat for Humanity sold hundreds of tasting kits that included ballots for People s Choice. It was exciting to see the enthusiastic tasters as they gathered and compared notes on the various chilies, debating which one should get their ballots. At the end of the day, the big winners were Charmaine Rogers for chili and James Benefield for People s Choice. Thanks to all those who brought and made extra chili for the public. 17 August 2010 Terlingua Trails Page 17 4 POINT RECOMMENDATION FOR CASI After working with or serving on the CASI Board of Directors for the past 15 years, I have observed the criticisms, obstacles, shortcomings, and successes of our organization. I have been fortunate to be involved in the great growth and stabilizing of CASI as it evolved into what it is today. I have a great love for CASI and wish to remain active wherever I can be of service. With my recent retirement, I have had a lot of time to reflect on some of these things. I am submitting this document to the Board of Directors as a suggestion for change. It is something that is not originating from the Board, so I will bear the criticism of authoring it. I would just ask that you give it your consideration, modify it, and pass it on to the Great Peppers as you wish. Problem One: Membership Roster We have long been criticized for the small number of physical members we actually count in our official roll. It is my contention that our membership number should be reflected as the number of cooks that cook in CASI sanctioned events. Each time a person cooks in a CASI event, he pays a fee to CASI, and I believe should be considered a CASI cook. This would raise our active membership to somewhere between ten and twenty thousand cooks without any cost or extensive bookkeeping. The number would be approximate, but it would better represent who is out there cooking with CASI. The members who pay dues would be considered as sanctioned cooks and have the benefits of ability to cook at Terlingua when so qualified and receive the Terlingua Trails. Benefit: This would give us a more realistic number of people cooking CASI and lend greater stature to the organization. It will be easier to raise funds for CASI with the greater numbers that are actually participating. This will be a formula and timing for the Board to determine. It will greatly help sponsorship as we have been fortunate to raise what we have with our relatively small representation. It will require no additional effort. Problem Two: Great Peppers Meeting We are running out of hosts and locations for the annual Great Peppers Meeting. Most of the larger pods have now hosted the meeting and few have a tendency to repeat. I am proposing that we establish a permanent location for the meeting. The meeting would remain in the same place, but the pods hosting it would change each year. A committee established by the Board would administer the framework of the meeting, but rotating pods would have the opportunity to be the designated hosts and provide whatever ambience and personnel they can contribute. No pod would be expected to make any financial commitment. Benefit: The use of the same location each year would allow for economy derived from increased ability to negotiate the needs of the organization. Problems could be solved by working with the same facility and gaining familiarity with our needs. Better communication would be available. Rates could be negotiated on a longerterm basis. The membership would be more comfortable knowing where the amenities are located and what is offered locally. Transportation could be planned and improved on with the same destination each year. I am confident that we would be able to attract funds from sponsors for the meeting and defray our costs. I can solicit local sponsorship funds if I know we will be there for more than one year. Pods hosting the event could be one or many. It would give all interested pods the ability to host the meeting and better introduce themselves to the general membership. Being under no financial obligation would ease the tension of underwriting the process. More social functions could be solicited from the locale to enhance the experience. Problem Three: Increased Scholarship Funding gives more to charity than it actually does. At the organization level, CASI only gives about $50,000 per year to charity, by means of scholarships and awards from the TICC stage. I feel this is not an adequate representation of the good we do because all our claims are based on funds donated by sanctioned cook offs. CASI is not so much the charity as it is the enabler operating as a sanctioning body. As such, it is entitled to satisfactory funding to entice people to cook and seek participation at TICC. It is my proposal that we assess an additional $1.00 per cook at all CASI sanctioned events to be remitted to the CASI Scholarship Fund. Benefit: All cooks, as earlier described, would be participating in funding the CASI national program. The money would be going to a good cause that I believe most members support. We have no competition, as the only recourse would be to go to a less significant Tolbert event or pay the $ fee plus $50.00 membership to cook ICS. This will increase the CASI Scholarship funding by about $20, per year. The cook that cooks 12 times a year would be out an additional $12.00 and all cooks would share in the Scholarship Fund. I believe this is a proper use of our international status. Problem Four: Recognition of TICC Champion There has long been a criticism on many fronts that CASI does not properly reward or recognize the Terlingua International Champion. I was tasked by the Great Peppers several years ago to pursue a way of funding a prize for the winner similar to what is awarded by ICS. I have not been comfortable until this time to make a recommendation to facilitate this. Such funding has to be assured and not subject to a sponsor s whims or presence. It has to be a fact of CASI life and a goal to work toward. It should be something the winners are proud of and not subject to negative publicity. With the adoption of the three preceding points, I feel like we can confidently develop a reward system that could take any number of directions. This could also be scaled in on a limited basis and expanded. I believe this would be a benefit to CASI and not detrimental to its charitable giving. I believe we can adequately stress that this is for TICC only. Example: Awarding of $10, to TICC winner. This money could be all cash or divided into some cash and an amount to be utilized as a travel budget for the winner. Benefit: Savings from GP meeting derived from efficiencies and acquiring meeting sponsors. Increased interest in cooking as more cooks have incentive to qualify and cook at TICC. Increased revenues for TICC as more cooks qualify and they and their followers spend money there. Sense of satisfaction by TICC finishers that they are rewarded and recognized for their success Ability of TICC winner to travel and represent CASI in their winning year Increased exposure for CASI as prize is publicized. Greater income for Scholarship Fund by more people cooking and funding aided by additional assessment Greater giving at the corporate level by CASI Close As I stated earlier, these are suggestions for review, revision, and response by the CASI Board of Directors. As Chairman of the Sponsorship Committee and a past CASI Officer, I feel like I have the insight to make these recommendations. They will be controversial I am sure, but I feel like it is time to move to another level. I am not campaigning for these changes and I have no horse in the race except where it benefits sponsorship.
