Leading fish and chip shop supplier Henry Colbeck Limited has the answer. Perform Liquid Vegetable Oil offers huge health benefits over other oils, without compromising on the delicious, authentic flavour that shops in the trade are renowned for. Perform contains just 7% saturated fat and has been proven to provide a whopping 30% longer frying life than standard rapeseed oil. That s according to the British Frozen Food Federation s (BFFF) report, Fresh Facts on Frozen. The organisation, which promotes the benefits of frozen food in the UK, has carried out research that found a 30% price difference in the cost of producing a meal from scratch vs from frozen. What s more, they also claim that the quality of produce does not need to be compromised, and that frozen food is often fresher than fresh food. Fresh produce can spend from three to seven days in the supply chain, causing their nutritional qualities to diminish, whereas with There is pressure on the food manufacturing and the foodservice markets to reduce the level of saturated fat in the products they produce and market and we can only see this pressure increasing, said Duncan McLean, Colbecks Marketing Director. Fish sold as fresh can take up to 14 days in the supply chain before it reaches the wholesaler or retailer. 7% Add to this the fact that frozen food can be stored for longer without losing any of the quality, and frozen is the clear winner every time. When we first arrived at Gala Bingo s Leicester club, it wasn t hard to appreciate the sheer scale of Gala s foodservice offer - and its importance to the company s bottom line. Although it was only 1 o clock, dozens of bingo players were already enjoying a snack at their respective tables. They had tucked into a variety of light bites and main meals - so many in fact, that some high street cafes would be hard-pressed to keep up. Pre-prepared Is Profitable Gala used to have hot counters, but the majority of our clubs have transferred to pre-prepared dishes. This helps with portioning and waste. The skill level in the kitchen doesn t need to be as high either, so we don t need people who are catering qualified. Choose Convenient Products We like products that can be cooked in a variety of ways - fry, microwave, oven and grilled. Snacking and picking items, deep-fried, make up 80% of the menu - and Meadow Vale is good for this. For example, we use the Crispy Small Fillets in a starter, in a wrap, and also in a sharing platter. We ve got the burger on the menu, but if we wanted, we could also use it for the wrap. MV Inspired asked the Petrou family, owners of Petrou Brothers - voted Independent Takeaway Fish and Chip Shop of the Year in They agreed to share some of the secrets to their success, and explained how the Meadow Vale range has helped delight their customers - for more than 20 years. For Steve and Jane Dodwell, great pub grub is a way of life. The husband and wife team are proud landlords of the White Horse Inn - a village pub in rural Overton-on-Dee. Renowned for its homed cooked meals, The White Horse showcases Steve s considerable skills as a trained chef. And because he used to be a head chef, Steve know he can rely on two key ingredients. The first? The freshest local produce, full of authentic flavours and scents. The second? An occasional helping hand from Meadow Vale. Although he s a whizz in the kitchen, Steve explains that he can t keep customers waiting. He needs quality ingredients with a home cooked taste, that can be ready in minutes. To add value for the consumer, platters also need to include several protein items combined with some traditional sides such as potato wedges, corn on the cob or garlic bread and more adventurous dipping sauces. Smoky: smoky bacon, smoked cheese and BBQ sauce. Hot n Spicy: hot chilli sauce, jalapeno peppers and crunchy white onions. Texan: Monteray Jack cheese, onion rings, BBQ sauce. Gourmet: goats cheese and red pepper, topped with mayo. Sides The options don t have to end with toppings. Menus are increasingly offering choices of sides. In addition to the usual chips, try offering spicy wedges or curly fries, which can spice up meals and make the consumer feel that they re in control of exactly what goes on their plate. And for the more health conscious consumers, a jacket potato, new potatoes or salad can really appeal and can even be the difference between customers choosing to eat at your outlet or the one next door. Meal deals Attaching a special offer to your burgers helps boost sales. Look at tying in a drink option at a discounted price. If customers can see the total cost of their visit at a glance, it can make menu items more appealing and also helps cost-sensitive consumers to budget their visit. Promotion Creating an amazing menu item is one thing, but making sure people know about how great it is something else entirely. If you don t have the tools and money to spend on promotional material, highlight your new offers on a specials board, or give your staff a taster and enthuse them to talk to customers about it over the counter.
