With brown butter potted shrimps, micro red amaranth micro basil scented with a light lemon mayonnaise. Fricassée of Wild Mushrooms Sautéed in Truffle Oil. Encased in a light pastry case with a light tarragon and tomato sauce. A Salad of Fresh Asparagus, Green Beans and Quail Eggs. Topped with parmesan shavings lightly flavoured with pesto and garlic dressing. A Layered Veal and Pancetta Terrine with pan fried morel mushrooms. Scented with a wasabi dressing and wild salad.
