PRESERVING LOCAL ECONOMIES ESTE s founders, brothers Luke and Matthew Battaglia, are two Americans who have been making highest-quality, estate grown, picked-and-bottled extra virgin olive oil, for 15 years in the hills of Tuscany. Together with Gianni dicarlo, an award-winning organic wine grower in Abruzzo, the three created a network of artisans, in line with EU directives. While Luke maintains an obsessive approach to quality olive oil, winning a following of foodies worldwide, Matthew has travelled extensively for four years, meeting and joining with other food growers and producers throughout Italy, beginning in Sardinia, where the ESTE Eco-Resort and Research/Learning/Laboratory is being developed. 10 ABOUT US ESTE Extra Virgin Olive Oil (EVOO) The Battaglia brothers have been making extra virgin olive oil for fifteen years in the Tuscan hills, just outside Lucca. They area Americans whose family, generations ago, were olive farmers in sicily. ESTE extra virign olive oil (EVOO) has been described as sublime, and phenomenal. Luke has been called a master by old-time local farmers and olive pressers. Our oil is fresh, smooth but almost tart, with strong hints of artichoke, fresh cut grass, and celery. It is made with the usual mix of Tuscan varietals, ours is about 65% frantoiano; 30% leccino; and 5% moraiolo. We adhere to a very strict schedule, meaning we gather our olives in the small time frame just before the olives start to change from green to purple, the invaiatura. This means the yield per olive is less, but we avoid the ripening, which causes fermentation, and thus breaks down the polyphenols, increases peroxides (oxidants) and leads to a quickly-deteriorating taste, olivy and fatty. We store our oil in vats in dark, cool places. Bottled oil should always be kept closed, away from heat, and away from light (dark places or at least dark containers. Light is one of the biggest killers of anitoxidants) A good EVOO is high in healthy polyphenols (antioxidants) and that healthiness is expressed in olives that are harvested at the right time, pressed and stored without lots of exposure to air, to light, and to heat. Each geographical area can have fantastic oils, which willl taste very different. Polyphenols have enemies called peroxides, which are the level of oxidants in the olive oil. The lower the better. The measure of peroxides is in milligram equivalents/milliliter; with an acceptable level for EVOO at 20; PDO olive oil 14meq/ml; and the highest quality EVOOs usually having 8/8meq/ml.8fc cc Characeristics: Mild to sharp, wiht hints of celery, artichoke and fresh-cut grass. Varietals: frantoiano, leccino, moraiolo Harvest: mid-october to mid-november Pressing: Machine, cold-pressed Peroxides (Oxidants): Our 2012 peroxide level was astonishingly low : less than 4meq/ml. Acidity: 0.18% 10

11 CHEESES The Maoddi family has been involved in sheep raising, milk production, and cheese selling, for generations. Over forty years ago, Luca and xxxx s grandmother decided to set up a full-fledged dairy, buying milk only from local shepherds whom the family knew and trusted. That tradition remains to this day: the cheese you buy is only made from the best, local sheep milk, bought from shepherds in the surrounding hills and plains. All types of Pecorino are produced here, from Pecorino Romano DOP (Protected Denomination of Origin), the world s biggest selling cheese; the highly-prized top-of-the-line Sardinian Fiore Sardo. Other products include top-quality cheeses made from sheep milk, from soft pecorino (a few days), seasoned (210 days+), semi-seasoned, as well as prize-winning ricotta. Modern technology and a highly-specialized staff allow us to make over 900,000kg (2mn lbs) of cheese a year, made only from the best darn sheep s milk, only from the hills in central-south Sardinia. Each single phase of production - from collecting milk from individual farms, to processing and seasoning and packaging is by supervised by specialized technicians who work in accordance with the UNI EN ISO 9000:2008 quality standard. The products are sold worldwide, with nearly 50% being sold in the US/Canada; 40% in Italy; 10% in rest of Europe; and growing sales in Asia and the UAE. 11
