3 1 Zennoh International Europe Limited Founded in 1972, Zennoh consists of 1,173 agricultural cooperatives and federations and is one of the largest organization of its kind, with an aim to support its farmer members by bringing premium quality Japanese produce to the International market. JA Zennoh has been aggressively promoting Japanese Agricultural produce through various channels, including the recently opened TOKIMEITE Restaurant in Mayfair. This venue provides JA Zennoh with a platform to showcase produce such as Japanese Wagyu Beef and Japanese Fruits and Vegetables. Hida Beef Hida-gyu (Hida Beef) is the specific name given to beef from a black-haired Japanese cattle breed, that has been raised in Gifu Prefecture for at least 14 months. The origin of today s Hida-gyu brand was a farmer s encounter with a single bull named Yasufuku in Yasufuku is said to have had the ideal genetic makeup to produce calves with high quality meat, and that he produced 39,000 offspring in his lifetime. They can replace any cucumber in any recipe and achieve the same desired results. They are excellent for simply fresh eating whole or sliced, as a salad, crudite and sandwich ingredient. They are often pickled, utilizing an ancient pickling method called Shiozuke, meaning salt pickle, but they can also be quickly pickled and eaten within 24 hours. Japanese cucumbers are a great cooling ingredient, utilized to contrast spicy and hot foods. Eggplant skin contains 'nasunin,' a powerful antioxidant and free radical scavenger that protects cell membranes of the brain from damage. Eggplants also contain vitamin C, potassium, folate and dietary fiber, particularly in the eggplants skin.
