2 The Ladies Singles Plate The Ladies Singles Plate is presented to the Ladies Singles Champion (from 1886 to date). The Ladies Singles Trophy is a silver salver, sometimes referred to as the Rosewater Dish or Venus Rosewater Dish which was first won by the Champion when the challenge round was introduced in The 50 guineas trophy was made in 1864 by Messrs Elkington & Co. Ltd of Birmingham and is a copy of an electrotype, obtained by Casper Enderlein, from a pewter original in the Louvre. From 1949 to 2006 all Champions have received a miniature replica of the trophy (diameter 8 inches). From 2007 all Champions have received a three quarter size replica of the trophy, bearing the names of all past Champions (diameter 14 inches).

The palate is richly textured with grapefruit and peach characters, complemented by an oily texture and mineral notes all held together by a crisp acidity that leads to a lingering finish. 16 Mâcon Villages Domaine Fichet Les Crepilliones 2011 France ABV 12.5% Crisp, lemony fruit. Floral and quite complex. Nice, fresh example of Chardonnay and the Mâcon-Villages AC Riva Leone Gavi 2011/2012 Italy ABV 13.5% Delicate with intense fruity and lemony notes. Clean and fresh with a long lingering, citrusy finish. 19 A2O Albarino 2011 Spain ABV 12.5% Delicate tongue-tingling apricot fruit with a lingering mineral and spice finish. 20 Sancerre Blanc Le Manoir Andre Neveu 2011/2012 France ABV 12.5% Rich nose with hints of ripe apple and pear, citrus and spices. It has a full mouth feel and great aromatic intensity. Dense, rich and very persistent on the finish. 21 Pouilly Fumé Les Berthiers Claude Michot 2011 France ABV 12.5% A lively, fresh and elegant wine with a long finish marked by steely gunflint flavours and hints of blackcurrant. 22 Chablis Terroirs de Chablis Patrick Piuze 2012 France ABV 13.5% Vibrant, mineral-driven aromas of chalk, white peach and mint. Stony and refreshing, with very good cut to the flavours of powdered stone and mint. It is smooth and easy drinking. 29 Alto Bajo Merlot 2012 Chile ABV 14% Lovely and smooth, with juicy plum, blackberry and damson fruit served up with lashings of mocha coffee and chocolate. 30 Saam Mountain Paarl Cabernet Sauvignon 2011 South Africa ABV 14% A classic Cabernet with a blackberry and plum nose. The deep garnet red colour reflects the depth of fragrance. Ripe, dark red berry and stone fruit aromas abound and are highlighted with complex, spicy oak highlights and savoury nuances. The palate is deceptively mellow and continues the fruit themes while adding chocolate and mocha smoothness to the mélange of fleshy stone fruit flavours. Soft and wellbalanced on the palate. 40 Châteauneuf du Pape Rouge Château St- Jean 2010 France ABV 14.5% A full-bodied, peppery, garrigue-dominated effort with loads of blackcurrant and cherry fruit. 41 Domaine Bouley Pommard 2009/2010 France ABV 13% Warm and spicy with rich red fruits. It is well concentrated with very ripe soft tannins but plenty of structure and freshness

7 CAMBRIAN MOUNTAIN LAMB MID WALES Supported by HRH The Prince of Wales, who is President of the Cambrian Mountains Initiative (CMI), The Cambrian Mountains comprise a distinctive upland, Welsh speaking area forming the heartland of Wales. It is an area of exceptional, unspoilt landscape that supports valued habitats, species and ways of farming that have roots stretching back to the Middle Ages. The Cambrian Mountains initiative aims to: support the development of sustainable, rural communities within the area of the Cambrian Mountains sustain the environment of the area of the Cambrian Mountains as defined by the landscape character assessment of Wales work with communities and producers, tourism providers within the surrounding area of influence to the benefit of the core area ensure the future sustainability of the Welsh family farms achieve the highest standards of land management and animal welfare be a guardian of the area s natural environment and heritage enable the provision of ecosystem services to the benefit of the wider society through securing carbon in the soil and flood management provide the best Welsh welcome and a high quality of service to visitors to the area The CMI premium quality Welsh lamb is born and reared in the Cambrian Mountains region of mid-wales by a group of 21 producers who are part of the Cambrian Mountains group. The lamb producers who supply the Cambrian Mountains Lamb adhere to strict principles to ensure best practice land management, maintain valuable habitats and eco-systems and actively encourage vibrant rural communities. Native breeds in the Cambrian Mountains are from traditionally hefted flocks on farm-assured farms that use the old Hafod and Hendre system. After a winter in the valley, the lambs are shepherded up to the hills for the long summer grazing on natural pastureland rich in varied grasses and herbs. This results in a special, slightly lighter weight lamb (around 16-18kg) with great conformation for succulent, juicy meat with a delicate, sweet flavour. We work with the CMI to ensure that the lamb is ready for Wimbledon which is a seasonal product and as such is available from late June. We have one farmer Rhys who brings his lambs earlier for slaughter to ensure we can have them in time for Wimbledon menus.
