2 The Thai Wai Greeting Thai greeting gesture is called a '' Wai '' and is pronounced more like '' why '' in English. The Wai is also used to say '' sorry '' or '' thank you ''. The normal Wai is with your hands pressed together at about chest level, presenting a slight bow with your body. The Wai to a superior is with the tips of your fingers at nose level, still bowing your body. To convey the high respect and gratitude, you will Wai with your fingertips at mouth level and present a deeper and longer bow.
3 Thai Cuisine The national cuisine of Thailand At least three and up to four or five fundamental taste senses in each dish or the overall meal: sour, sweet, salty, bitter, and spicy. Thai cuisine is one of the most popular cuisines in the world.

Each of us will have a plate of cooked white rice as our main and other dishes to share. 2. The authentic Thai flavours There are 5 key flavors in Thai food; spicy, sour, sweet, salty, and rich.
7 3. The sweetness in everything The original Thai food from the old time wasn t all like sweetness. Nowadays, some Thai people like to eat something sweet because it helps us feel happier and is a quick energy boost. But, it s not always a good thing though. Consuming too much sugar, as we all know, causes weight-gaining and diabetes. 4. The original Thai food The old day there were only few things we had all the time which were rice, vegetable, and fish. Later, we learned to adapt other cooking methods from India, China, Laos, Cambodia, etc, and we created our own dishes to suit our taste.
8 5. The variety of Thai foods Thai foods are delicious and very affordable. Thai food are nutritious and delicate. For one same dish, like Som Tum, can be varied in different regions or areas.
9 6. The local stories behind each Thai dish Each of Thai dish has it story to tell. Take Pad Thai as an example. Pad Thai was promoted during Plaek Phibunsongkhram s term (1938 and 1944 and from 1948 to 1957). The prime minister wanted to promote Thailand in hope to westernize the country. He did many things to make Thailand become recognisable, from changing Siam to Thailand, to expose our rice and uplift it to the global scale by creating a rice noodle. Pad Thai become famous during WWII which is why it s our number one dish everyone know.
10 7. The eating trend 2016 Street food on the go like pork skewers, fried chicken, or north-easten style sausage are yummy and can be found almost anywhere in Thailand. Pad Thai and Tom Yum Goong are the global dishes, while Pad Kra Prao and Somtum are the local s. Street food is ready-to-eat food or drink sold by a hawker, or vendor, in a street or other public place, such as at a market or fair. It is often sold from a portable food booth, food cart, or food truck and meant for immediate consumption.
11 There is a bit of a misconception that just because there is an abundance of freshly-cooked food sourced from local ingredients that Thai food is inherently healthy. This is not true. let s talk about what you should generally try and avoid, especially if you are conscious of calories, heavy carbs, sodium, sugar, MSG, and the like.

22 Regional cuisines and historical influences Thai cuisine is more accurately described as four regional cuisines, corresponding to the four main regions of the country: Central The best rice is grown in this region, notably the hom mali, or jasmine rice, that is so highly rated as a Thai export. There are three curries typical of the region; namely, the familiar green curry (Kaeng khieo wan) to which is usually added poultry or fish; spicy curry known as Kaeng phet, and a milder version called Kaeng phanaeng. All are based on coconut milk.

24 Typical foods of the Central Plains: Salads (yam) mixed with fresh kaffir lime leaves, lemongrass and herbs Curry pastes made with spicy Thai chilies, shallots, garlic, galangal, lemongrass, coriander roots, kaffir lime peel, and shrimp paste (kapee) Eggs are an all day/every day food and preparations include omelets stuffed with minced pork, fried eggs sunny-side up served on top of gai pad graprow (Chicken Stir Fried with Holy Basil) and boiled or fried salted duck eggs.

27 North Thailand as a kingdom first began to take shape in the mountainous North, with a number of city states that eventually became a loose federation known as Lanna, centred around Chiang Mai. Because of the cooler mountain climate, there is a lager variety of vegetables than in other regional Thai cuisines, and roots and herbs have a strong presence.
28 There are many sour and bitter flavoures, especially apparent in the soups, such as Kaeng ho (Northern mixed curry), a soup made with pickled bamboo shoot. It is a folk medicine for diabetes. In Ayurveda, it is used for treatment of cough, respiratory illness, fever, burning sensation, swelling, and anaemia.

30 People of the North prefer glutinous rice to white rice, rolling it into balls with their hands, and dipping into dishes and sauces. No visit to the North is complete without sampling a Khan toke dinner. The name derives form a khan, or bowl, and a toke, a low round table made of woven bamboo, plain of lacquered. Guests sit on the floor, usually watching a cultural performance, and serve themselves form the assorted dishes of northern specialties placed on the table.
