5 This month s food focus is Leafy Greens! Did You Know? What has me vitamin C than an ange? Me calcium than a glass of milk? And me iron than beef? The answer is kale, along with many other leafy green vegetables. Leafy greens are nature s vitamin pills and cheaper too! These inexpensive veggies are packed full of amazing things f our bodies. They are great sources of vitamins A, C, E and K, as well as minerals like calcium, iron, zinc and magnesium. Try mixing together a few different greens in your salads like romaine, kale, and spinach. No matter which green you are choosing, always look f firm, dark green leaves that are free from yellow spots browning. Keep in mind that greens cook down considerably, so a 1 2 cup ption of cooked greens (equivalent to a serving of vegetables) is equal to about 2 cups of raw greens. Our guidelines: Provide me deeply coled, nutrient dense, and fiber rich fruits and vegetables, such as sweet potatoes, spinach, peaches, broccoli, and beans Provide me whole grain foods, such as brown rice and whole wheat Encourage lean proteins including vegetarian and plant based Reduce unhealthy fats, sodium, and sugar Continue Chartwells dedication to earth and community friendly practices by serving hmone free milk, poultry products without the routine use of antibiotics, sustainable seafood, cage free shell eggs, and locally grown produce To learn me about Chartwells go to
