2 INTRODUCTION By Tony Springall Press and Publicity Officer, CAMRA Berkshire South East On behalf of everyone involved I would like to welcome you to the 12th Ascot Racecourse Beer Festival held in association with the Berkshire South East branch of the Campaign for Real Ale (CAMRA). The festival has grown significantly from its first event in 2007 (thanks to the efforts of the late Colin Langham) when 6,500 pints were sold from 56 casks of beer and 7 ciders to now stocking in excess of 200 casks and 40 ciders. The festival would not take place without a huge team effort and whilst it would be insidious to pick and choose names, special mention must be made of Mike Smith who stepped in as Festival Organiser on that very first festival and has carried the torch ever since. This year is a special one for the branch as one of our local breweries, Siren Craft in Finchampstead was awarded the ultimate accolade at this years Great British Beer Festival by having their Broken Dream Breakfast Stout named as the Supreme Champion Beer of Britain. This award is the pinnacle for any brewer and extra special as the brewery was only founded in 2012, a terrific achievement in such a short time. Pride of place at the bar will be Maggs Magnificent Mild from the West Berkshire Brewery in Yattendon who were voted by you as the Beer of the Festival last year. Whilst over at the Bar you will find Crazy Dave s Berkshire Medium, our current festival cider champion. FESTIVAL SPECIALS We are extremely pleased to offer you a number of beers which have been brewed especially for the festival. If you would like to find out more information about joining the Campaign, please come and talk to us at the CAMRA bar or visit camra.org.uk CAMRA Beer Festival Volunteers REAL ALE Real ale is a fresh, natural product brewed using traditional ingredients and left to mature in the cask from which it is served in the pub, through a process called secondary fermentation. It is this process which makes real ale unique amongst beers and develops the wonderful tastes and aromas which processed beers can never provide. It is served without the addition of extraneous carbon dioxide and is also known as cask-conditioned or naturally-conditioned beer. The fundamental distinction between real ale and other beer is that live yeast is present in the container from which it is served, although it settles at the bottom and is not poured into your glass. Real ale is a very diverse product and with more than 1,600 breweries across the UK there is a beer out there to suit everyone s palate. Here is an explanation of the most common beer styles: MILD Mild is one of the most traditional beer styles and is enjoying a revival in today s real ale market. Usually dark brown/black in colour, due to the use of well-roasted malts or barley, it is less hopped than bitters and often has a chocolatey character with nutty and burnt flavours. Milds tend to have an Alcohol by Volume (ABV) content in the 3% to 3.5% range. STANDARD BITTER Bitters are highly-hopped ales. Standard bitters or session bitters fall in the ABV range of 3% to 4% and generally have a lighter colour. BEST BITTER Bitters that are over 4% ABV. The most common style of real ale found today with great variance in colour and taste within the style. STRONG BITTER Bitters that are over 4.6% ABV and best sampled with appreciation rather than to quench a thirst. GOLDEN ALE Pale, Amber, Gold or Straw coloured ales that are hoppy and refreshing. This style has become very popular in recent years as brewers seek to entice lager drinkers and a younger clientele. STOUT/PORTER Porters are dark, hoppy beers made with the addition of roasted barley and tending to have a slight sweetness. This style originated in London around 1730 and by the end of the 18th Century was the most popular beer style in England. Stouts are a stronger version of Porter, originally called Extra Porter or Stout Porter. They are usually dark, heavy and well-hopped with a creamy head and dry grainy taste from the dark roasted barley malt used in the mash. SPECIALITY ALE This beer style captures the flair of the brewer as he has experimented to bring out a new unique flavour and aroma. Beers in this category may include the addition of wheat, oats or other natural products to provide something out of the ordinary to the beer drinker. 5

4 COPPER/RUBY ALE Beers made with some more highly roasted malts to give a red or copper colour to the beer. Usually not as well-hopped as a bitter and often only available in the autumn. OLD ALE Typically black or dark brown, but can be paler. Old Ales are full bodied with a malty richness. Fermentation characters such as fruity estery flavours should contribute to the flavour profile but considerable variation can occur within the style. Usually between 4.3% and 6% ABV. CASK LAGER Beers brewed with lager malts and topfermented. Refreshing with a soft bitterness from traditional continental lager hops. Usually very pale, with an ABV between 4% and 5%. SOUR BEER Intentionally brewed with a high level of acidity to give a tart or sour taste. Commonly produced with the introduction of a naturally occurring strain of wild yeast during fermentation or by barrel-aging in a wooden cask. An acquired taste and rapidly becoming more fashionable. WHEAT BEER Malted or unmalted wheat added to the grist imparting a clean, subtle flavour. The higher protein content often produces a large, longer lasting head with a hazy appearance. Signature characteristics are the fruit-like esters, aroma and flavour compounds produced during fermentation. If you would like to join the Ascot Racecourse postal and mailing list for information on forthcoming events, please write your name, address and below: 6 CIDER AND PERRY Real cider and perry are long- established traditional drinks which are produced naturally from apples (for cider) or pears (for perry) and are neither carbonated nor pasteurised. has undergone a massive revival in recent years although it is unfortunate that many of the most well-known ciders in the UK are cold, fizzy keg products which have been produced artificially rather than naturally. More people are now discovering for themselves how deliciously mellow, aromatic and intoxicating the flavours of naturally produced real cider or perry can be. To make real cider, the apples are washed and checked for rot or mould. The apples are then crushed in a machine called a scratter which chops them up into small pieces called pulp. The pulp is placed in layers on a press. If a traditional screw or hydraulic press is used, the pulp is wrapped in fine mesh cloth parcels called cheeses. The apple juice is then extracted and natural yeasts in the juice start the fermentation. Several months later you have real cider. In order to maintain consistency and suit different palates, the producer will often blend ciders made from different apple varieties. Perry is made in exactly the same way. RESPONSIBLE DRINKING Ascot Racecourse encourages responsible drinking. New controversial Government alcohol guidelines came into effect in January The alcohol limit for men has been lowered to be the same as for women. The UK s Chief Medical Officer (CMO) guideline for both men and women is that: You are safest not to drink regularly more than 14 units per week. If you do drink as much as 14 units week it is best to spread this evenly across the week. As a guide: n One pint of standard beer (3.5% volume) = 2 units n One pint of regular cider (5% volume) = 2.8 units n One pint of premium beer or lager (5% volume) = 2.8 units n One pint of standard lager (4% volume) = 2.3 units We want you to enjoy yourself, but please drink responsibly and remember: DON T DRINK AND DRIVE. 9

6 Andwell King John Andwell, Hampshire Best Bitter 4.2% Deep amber in colour with a blend of pale ale and crystal malt. The bitterness and fruity aroma are developed from a combination of local hops. Billericay Billericay Zepellin Billericay, Essex Golden Ale 3.8% Easy drinking session ale with slight smoky notes. BAR 1 Andwell Ruddy Darter Andwell, Hampshire Copper / Ruby Ale 4.6% Named after a dragon fly found in local rivers. Malted rye creates its characteristic ruby glow. Flavours and aromas derive from a combination of English hops. Billericay Grasshopper (Green-Hopped) Billericay, Essex Golden Ale 4.1% Brewed with freshly harvested green Goldings hops. This annual special uses the fresh hops to give spicy aromas to the final beer, which has intense bitterness. BAR 1 BAR 1 XT Animal - Hop Kitty Long Crendon, Buckinghamshire Golden Ale 3.9% Packed with Citra and Cascade hops. Lightly toasted malts give a hint of sweetness. Big Mango and Lychee zest from a generous Citra third round of dry-hopping. Ascot Brewing Dark Horse Camberley, Surrey Stout / Porter 4.5% Smooth porter with deep chestnut colour delivering subtle hop notes followed by coffee malt flavour then rich chocolate at the finish. Ascot Brewing Gold Cup Camberley, Surrey Golden Ale 4.0% Light golden ale with intense citrus grapefruit aromas from Cascade and Chinook hops. Very refreshing Golden Ale with a strong hop character. BAR 1 BAR 2 Binghams Brickworks Bitter Ruscombe, Berkshire Best Bitter 4.2% A malty bitter which is chestnut in colour with a slightly nutty hint. Hops balance the maltiness to provide a well rounded best bitter. Binghams Hop Project (Dr Rudi & El Dorado) Ruscombe, Berkshire Golden Ale 4.5% A pale ale base to showcase two different hops - Dr Rudi and El Dorado. Binghams Vanilla Stout Ruscombe, Berkshire Stout / Porter 5.0% Infused with vanilla pods which complement the dark malts to create a smooth drinking, deliciously dark stout. Crafty Hop Tipple Loxhill, Surrey Best Bitter 4.2% Maris Otter and Munich malts from Britain and Germany provide a platform from which the Cascade and Chinook hops shine out. BAR 2 Bristol Beer Factory Independence Bristol Golden Ale 4.6% Full of big hop character from carefully selected American hops to give a really fresh aromatic boost. BAR 3 Dark Star American Pale Ale Partridge Green, West Sussex Best Bitter 4.7% Imported US yeast strain along with Cascade, Centennial and Chinook hops. Full of the aroma of hops. Bristol Beer Factory Nova Bristol Golden Ale 3.8% A light malt base: Maris Otter, CaraPils and wheat malt allows the bright, fresh and zesty hop aromas to shine - underpinned by herbal and floral notes. BAR 3 Derventio Cleopatra Derby Speciality Beer 5.0% A complex beer rounded off with First Gold hops and a hint of Apricot. BAR 2 Broken Bridge Wheatus Upper Swanmore, Southampton Wheat Beer 6.6% Slightly hazy golden wheat ale. Naturally cloudy. Broken Bridge Tessellate Upper Swanmore, Southampton Golden Ale 4.0% Mosaic and Simcoe pale ale. BAR 3 Downlands Bramber Small Dole, West Sussex Best Bitter 4.5% Punchy tropical hop aromas sit atop a caramel toffee amber malt base. Downlands Hidden Colour Small Dole, West Sussex Golden Ale 4.2% Jasmine flowers complement Cascade hops exclusively used in a Galleons Band inspired pale. BAR 2 Chiltern Copper Beech Autumn Ale Terrick, Buckinghamshire Copper / Ruby Ale 4.4% Moreish, smooth red ale. Slightly sweet and gently hopped. Downlands Old Small Dole, West Sussex Old Ale 4.4% Robust dark chocolatey and caramelly old ale using Admiral, Challenger, Bramling X hops. Chiltern Beechwood Bitter Terrick, Buckinghamshire Best Bitter 4.3% Mid amber colour with a rich butter-toffee aroma. Fruity and slightly nutty. Downton Elderquad Downton, Wiltshire Speciality Beer 4.0% Hints of sweetness, and a subtle elderflower aroma, provide a terrific balance to the hops. 12 BAR 3 Colchester Jack Spitty s Smuggler s Ale Colchester, Essex Golden Ale 4.0% Golden easy drinking summer ale. Full of hop flavour with delicate bitterness and light aroma. Colchester Brazilian Colchester, Essex Stout /Porter 4.6% Multiple award winning coffee and vanilla porter. Not at all shy on flavour but beautifully balanced. Always do sober what you said you'd do drunk. That will teach you to keep your mouth shut ERNEST HEMINGWAY BAR 3 Downton Honey Blonde Downton, Wiltshire Golden Ale 4.3% Light and refreshing blonde/golden ale, with subtle hints of honey and softly sweet malt. The finish is crisp and refreshing. Downton Coconut Milk Stout Downton, Wiltshire Speciality Beer 5.0% Wonderfully enticing wheat stout with a pronounced bitterness and complex aroma coupled with an a wheaty mouth feel and exotic flavours of coconut milk. 13

8 Elusive Level Up - Level 15 (Citra & Warrior) Finchampstead, Berkshire Copper / Ruby Ale 5.0% Red ale that balances six different malts against heavyweight hops to produce a beer with great depth of flavour and aroma. BAR 4 Flowerpots Goodens Gold Cheriton, Hampshire Golden Ale 4.8% Superb gold colour and fullness in the mouth from a subtle mixture of lightly caramelised malts. North American hops giving a good level of bitterness. BAR 3 Elusive Shadow of the Beast Finchampstead, Berkshire Stout / Porter 5.0% Beer black in colour but low in roasted malt profile. American hops provide notes of pine and citrus. Flowerpots XXV ( Twenty Five ) Cheriton, Hampshire Golden Ale 4.2% Special US hopped pale brewed for the first and only time to celebrate the 25th anniversary of brewing at the Flower Pots in Cheriton. BAR 4 Elusive Sphere of Destiny (Ekuanot) Finchampstead, Berkshire Golden Ale 4.4% Single hopped session IPA. Elusive Plan B (Loral Edition) Slaithwaite, West Yorkshire Golden Ale 4.2% Pale ale fermented on the Belgian Duvel yeast strain. Vic Secret in the copper. Dry-hopped with Loral - a super-intense Saaz with notes of lemon. Naturally cloudy. BAR 4 Great Heck Black Jesus Goole, Yorkshire Strong Bitter 6.5% Brewed with biblical quantities of premium American hops and special de-husked German roasted malt. Great Heck Voodoo Mild Goole, Yorkshire Mild 4.3% Very flavourful dark mild brewed with lots of roasted malts balanced perfectly with finest English hops. BAR 4 Fallen Acorn Pompey Royal Gosport, Hampshire Best Bitter 4.3% Brewed to the traditional recipe, Pompey Royal is a sweet and malty ale with a delicate hop finish. Fallen Acorn Mumby s Ginger Pale Ale Gosport, Hampshire Speciality Beer 3.9% Hopped with experimental British hops that possess a ginger aroma and infused with Ginger root. A fiery number, refreshing and best served by the lashing. BAR 4 Gyle 59 Take It Easy Chard, Somerset Standard Bitter 2.5% Aromatic, refreshing and satisfying. Big on citrus flavour but low in alcohol, a beer to quench your thirst. Gyle 59 Toujours Saison Chard, Somerset Speciality Beer 4.0% Mixture of Pale and Vienna malts combine with English and German hops to perfectly compliment the earthy, peppery and spicy yeast flavours. Fallen Acorn Twisted Oak Gosport, Hampshire Best Bitter 4.0% Initially malty giving way to a lingering bitterness and a long hoppy finish. An excellent session beer that grew out of Oakleaf Brewery s Quercus Folium. Gyle 59 Thoroughbred Chard, Somerset Golden Ale 3.7% Citrusy, lemony pale incorporating three hops including Centennial and Citra as well as Pacific Gem. Former Ascot Beer Festival Special. Fisher s A.P.A High Wycombe, Buckinghamshire Best Bitter 4.5% Classic American Pale Ale. Citra dry-hopped with a big hit of grapefruit & notes of caramel. BAR 5 Hambleton Stud Blonde Hambleton, North Yorkshire Golden Ale 4.3% Easy drinking blonde ale. Gluten-free (accredited). BAR 4 Fisher s Dunkel High Wycombe, Buckinghamshire Speciality Beer 5.0% A rich, dark and malty beer made with Munich, wheat and roasted malts, lagered for a fruity and soft finish. BAR 5 Hammerpot Northbrook Harvest Poling, West Sussex Strong Bitter 4.8% Bursting with fruity hop flavours ranging from apricot and pear to dark berry and raisins. Pale & crystal malts. Jarrylo (US), Rakau (NZ) & Bramling Cross (UK) hops. 14 Always do sober what you said you'd do drunk. 9 Hogs Back Home Harvest Tongham, Surrey Golden Ale 4.0% Fuggles and English Cascade hops harvested from the brewery garden as well as the classic Farnham White Bine variety, grown exclusively by Hogs Back. BAR 5 Kettlesmith Streamline Blonde Bradford-on-Avon Speciality Beer 4.2% Refreshing blonde ale brewed with lager malt and our Belgian yeast strain. Explore an aroma of white grape teamed with flavours of pineapple and gooseberry. BAR 5 Hogs Back Green Hopped TEA Tongham, Surrey Best Bitter 4.2% Tawny-coloured with more malt than hops present in the nose. These carry into a well-rounded flavour with malt slightly dominant and a fruity sweetness. Hogs Back Surrey Nirvana Tongham, Surrey Golden Ale 4.0% Cascade, Centennial and local Surrey hops with strong citrus and floral notes on the nose. Light in body, with well-balanced hoppy and citrus flavours. BAR 6 Kew Botanic Kew, West London Standard Bitter 3.8% A sessionable amber ale. The tangerine and peach aroma gives way to biscuit and caramel in the body and a soft, long bitterness. Naturally cloudy.
