3 WELCOME BAAS, BANDS AND BEERS 3 Baasil is delighted to be back at Magna this March for the 25th Rotherham Real Ale and Music Festival. The theme this year is obviously to celebrate our 25th Anniversary but we have several new attractions! For the first time ever we have Craft Keg beers and a Prosecco Cocktail Bar. We have also looked back over the years and picked the best of the Champion Beers of Yorkshire and combined them on the Jim Charters Champions Bar. John Hyslop has booked the best and most popular acts from over the years so the music will be fabulous as well. As well as all this we have the usual bars, wine, cider and bottled beers, excellent food from the Magna kitchens and our t-shirt and food stalls. Many thanks to all our volunteers and sponsors and to the staff at Magna and we look forward to another successful Festival and to raising more money for our chosen charities, the main one being Maples Cancer Care, the new name for Rotherham Cancer Care Charity. 7 INFORMATION BAAS, BANDS AND BEERS 7 BAR OPENING TIMES THURSDAY 6pm - 11pm FRIDAY 6pm - 11pm SATURDAY 12noon - 11pm Drinks token refunds up to the value of 10 are available until 11:20 at the Main Exit. REMEMBER! Keep your 2018 Festival glass and you can use it to get FREE re-entry to the Festival on Saturday. Please note NO re-entry on Friday. You will need to purchase drink tokens. We have held the price at 1.50 with drinks served in a special lined oversized festival glass ensuring no short measures here! Look out for the tasting notes in this guide or behind the bars, which provide details about the style, type and strength of drink. Some of the stronger drinks may have a small additional charge. We recommend starting with drinks that contain the least amount of alcohol. When you start drinking your palate is fresh and so more sensitive to the delicate and lighter flavours. Starting with the strong and heavier drinks can make it difficult to appreciate the more subtle flavours later in the evening. Please treat all drinks with respect. All ales featured in the festival are arranged in different rooms by region and can be found using the map on the centre pages of this guide. Remember eating will help soak up the alcohol. Freshly cooked food provided by the Magna catering staff is available in both the Red Hall and in the Yorkshire Main Hall. SAFETY INFORMATION In the event of a fire emergency, the alarm will sound. Evacuate through the designated emergency exits to the nearest fire assembly point as shown on the centre pages of this brochure. Follow any instructions given to you by Festival and Security staff. Do not attempt to fight any fires - leave this to the experts, The Fire and Rescue Service. Don't forget to have a bit of fun at the CAMRA stand on the tombola and check out the great money saving offers if you join CAMRA here! Please drink responsibly and remember all our staff are volunteers and treat them with the respect they deserve. The festival operates a zero tolerance policy to threatening or abusive behaviour. 34 At Maples Cancer Care, the new name for Rotherham Cancer Care Centre, we understand how a cancer diagnosis can affect everything in your life. People affected by cancer have individual needs that cannot always be fully addressed by their health care providers and social networks. We offer a place for people to go to talk, relax and someone to help them deal with the way cancer has affected them and their life. We provide emotional and physical support through assessment, counselling and complementary therapies, to help people feel more in control, more confident and more able to cope. 43 HOW TO BE A BEER TASTING EXPERT BAAS, BANDS AND BEERS 43 What is beer? Beer is simply fermented, but not distilled, extract of grain. In this country the majority of beer is made from barley. One difference from other alcoholic drinks is that in grains the sugar is stored as starch. The starch has to be broken down by malting before fermentation can occur. The flavours in beer come from; Malt Pale through to black Adjuncts Added sugars or other starch sources Hops Bitterness and aroma Water Ionic composition and ph Yeast Around 5% of the flavour Combining these in differing proportions gives the various styles of beer. Styles of Beer Milds range from black to dark brown to pale amber in colour. Malty and possibly sweet tones dominate the flavour profile but there may be a light hop flavour or aroma. Alcohol levels are typically low. Pale milds have a lightly fruity aroma and gentle hoppiness. Dark milds may have a light roast malt or caramel character in aroma and taste. Best bitters are more robust than ordinary bitters. They are typically brown, tawny, copper, or amber but can be paler. They have medium to strong bitterness, light to medium body but with a more evident residual maltiness. A strong hop character should be evident. Fruit should be limited, although citrus fruit tastes are associated with some hop varieties. Strong bitters are full bodied and possess assertive hop qualities. They are typically brown, tawny, copper, or amber but can be paler. They have medium to strong bitterness. Residual maltiness may be more pronounced than in other bitters. Fruitiness may be medium to strong and can be estery. Golden ales are pale amber, gold, yellow or straw coloured with powerful aroma hop, low to strong bitterness, light to medium body and a strong hop character, often with citrus fruit tastes creating a refreshing character. There should be little or no malt character or diacetyl (toffee/butterscotch). Ordinary bitters are typically brown, tawny, copper, or amber but can be paler. They have medium to strong bitterness, light to medium body and a light to medium malt character may be present. Hop character should be evident. Fruit should be light and not distract from hop character, although citrus fruit tastes are associated with some hop varieties. Speciality beers are less specific than standard British cask beer styles and may be produced using one or more novel ingredients including fruits, herbs, honey, cereals other than malted barley and flowers other than hops. The category includes cask-conditioned lagers, wheat beers and fruit beers. There are no specific guidelines for this category.

45 HOW TO BE A BEER TASTING EXPERT BAAS, BANDS AND BEERS 45 Examples of groupings within this style are: Wheat beers are often dry and refreshing and may be served cloudy with yeast and/or protein haze. Herb beers produced with little or no hop and evident flavour of added herbs, either singly or in combination. Are often malty and strong in body or floral and light. Spice beers produced with the addition of spices such as ginger and coriander. In some cases these can be extreme and dominate the character of the beer. Porters are complex in flavour and are typically black or dark brown. The darkness comes from the use of dark malts, unlike stouts, which use roasted barley. Porters should have a full mouthfeel and a pronounced finish through bitter hopping Stouts are typically black. Dry stouts have an initial malt and caramel flavour with a distinctive dry roast bitterness in the finish. The dry roast character is achieved by use of roasted barley. Some astringency and a medium to rich mouthfeel are appropriate. Imperial Russian stouts can have some or all of these characteristics with more intensity and much higher original gravities and alcohol levels than other stouts. Sweet stouts are distinctively sweet in taste and aftertaste through the use of lactose. TASTING PROCEDURE Appearance Consider colour, clarity, condition. Aroma Cover top of glass and swirl beer around to generate and capture aroma. Take a deep sniff and note aromas. Consider hop, malt and fruity aromas. Taste Swill the beer over the entire area of your tongue. Different parts of the tongue detect different types of flavour. Consider the balance of hop, malt and fruity flavours, sweetness and bitterness. Aftertaste Swallow and note aftertaste. Consider the taste remaining half a minute or so after swallowing the beer. It will often comprise dry, bitter flavours at the back of the tongue, and hoppy and/or fruity flavours may also linger. In each category, consider whether this is appealing to you and is what you would expect for that style of beer. But crucially, does it make you want another? Why not try different styles, particularly if you ve not tried them before. Don't be afraid to ask for a trial sample if you re not sure if you d like it. A beer festival is a great opportunity for experimenting. Most importantly - enjoy yourself. Cheers!
