4 Desserts Apples are an important ingredient in many desserts, such as apple pie, apple crumble and apple cake. They are often eaten baked or stewed, and they can also be dried and eaten or reconstituted for later use. When cooked, some apple varieties easily form a puree known as apple sauce. Apples are also made into apple butter and apple jelly. Apple cake called Szarlotka or Jabłecznik is a very popular traditional dessert in Poland. It's made from sweet crust pastry and spiced apple filling. It can be topped with kruszonka (crumbles). In restaurants and cafes apple cake is usually served hot with whipped cream and ice creams. Drinks From ciders to smoothies and cocktails, apples make delicious appearances in all kinds of drinks. In Poland one of the traditional drinks is kompot. Compotes are drinks prepared of fruits usually fresh, sometimes dried. Sugar is added and sometimes cloves are used as a spice. In Poland the most popular fruits are: apples, cherries and strawberries. Compote is served cold, together with the fruits. A glass of compote is typical dinner drink in many Polish homes. Courses Pierogi are the most recognizable Polish food abroad. They are half-circular dumplings usually made from noodle flour dough. Polish pierogi are usually boiled in salted water. Baked or even deep fried pierogi are also popular. Poles also like sweet dumplings, in summer, some eat a sweet version of those as a main course. Summer dumplings are filled with fruit like apricots, bilberries, apples, sweet or sour cherries. Dumplings can be topped with some powdered sugar and melted butter. Bigos is a traditional single pot dish, usually made during the winter months or for special occasions. This is a dish made with chopped meat and cabbage. In modern cookbooks, we can find recipes for many different varieties of bigos. In many of them, apple is an ingredient too. Apples are perfect for all kinds of meat. Lots of chefs adds apples to roast meat to give their dish sweeter falvour.

6 3. Apples in Poland 1) Poland, with an annual production of 2.5 million tons, is the first producer of apples in Europe. Apples represent more than 80 % of the fruits production of the country. The main varieties are Idared, Szampion, Jonagored, Gloster, the Golden Delicious and Gala Royal and Must. Besides the production sold in national market, apples of table or apples destinated to the production of juices and concentrates of juice, big quantities are exported to the countries of the European Union and Russia, this last imports nearly half a million tons yearly from Poland. These last years, there is a growing request of the Polish apples by the importers from the countries of Maghreb such as Algeria, Morocco, Tunisia and others because of the lower prices comparing with the offers from other countries of Europe. 2) Orchards cover a surface of about 174 thousand ha. Polish apples grow in favourable climate and soil conditions. It results in delicious taste and nutritious value of our products. Apples are harvested very carefully, because only mature, but not too ripe fruit can be well stored. The fact that many varieties are available all year round is due to the good moment of harvest and Controlled Atmosphere storage, where temperature, oxygen and carbon dioxide are precisely controlled. 3) Apples appear in many religious traditions, often as a mystical or forbidden fruit. Apple is a symbol of health, life, spring, love, immortality and power. Due to this fact, lots of organizations have apple in logo. Even a political party present Poland as a big green apple.
