4 PINOCCHIO Prodotti Stella, naturally A new flavour for children that teenagers and adults will love, too. It is ALL NATURAL, so among other things it is free of artificial flavourings and colourings. It is endorsed by none other than the real PINOCCHIO, as approved by the Collodi Foundation. There are 3 components in the flavour: Pinocchio Gelostella Pinocchio A powdered product to add to the base mix with dehydrated fresh cheese and dehydrated cherries and a special milk and cream mixture that is powdered using exclusive new technology. It contains natural fl avourings and gives gelato the fl avour of a fruit cheese-based cherry snack/dessert. Dosage: g/l of mix. Packaging: 1 kg bag. Meringue Chips Pinocchio 4-7 mm meringue pieces, with the ideal colour and taste for complementing the Pinocchio fl avour. Packaging: 1.5 kg bag. 7 KOOKIE NAPOLITANER Fragrant wafers with delicious hazelnut cream: Napolitaner wafers got their name because the hazelnuts used were originally harvested in the area around Naples Novelties Kookie Napolitaner Paste Cocoa and hazelnut-based flavouring paste containing a generous amount of wafer chips. 9 KOOKIE TANGO Alfajor is a name shared by a number of diff erent types of confections made in Spain and South America, whose origins lie in Arab culinary traditions. In Argentina, Alfajores consist of two biscuits with a sweet fi lling between them (usually dulce de leche) Novelties Kookie Tango Paste Flavouring paste with egg yolk for an inimitable butter biscuit flavour. Dosage: g/l of mix. Packaging: 3 kg tin. Variegato Dulce de Leche A soft, very sweet brown cream made by heating and reducing sweetened condensed milk. Packaging: 3 kg tin. Kookie Alfajores Round biscuits made with cornfl our and butter. They can be used to enrich the fl avour of Kookie Tango gelato by crumbling them on top and blending them into the base mix (2-3 biscuits per litre of base mix). We recommend decorating tubs with pairs of Kookie Alfajores joined together with a Variegato Dulce de Leche fi lling. 10 LIOGEL PIUFRUTTA KIBANA SDL There is a new addition to the Liogel Piufrutta range of complete mixes with exceptional freeze-dried fruit contents, either whole or in pieces. It can be used to make gelato with a fl avour that is highly distinctive but at the same time soft, well-rounded and not too sickly. Therefore, it can be used in conjunction with our variegato selection or the products from the Nutgel-Hicream line. It contains no traces of gluten, so it is marked with the Gluten Free logo. 13 I PESTI Prodotti Stella, naturally 2017 Novelties A new line of nut-based Paste Crema that are made in a special process, during which the nuts are ground to form a genuine pesto mixture with a grainy consistency and a rich flavour. The final result in gelato and semifreddo is very distinctive. It is evocative of ancient flavours associated with the old traditions of the gelato makers of the first half of the 20th century.
