10 PERSONNEL & POLICIES PERSONNEL Professional service personnel will be available at all times to insure flawless guest service including set-up, on-site cooking, clearing, and guest accommodations. Based on your menu, timeline, and the logistics of the event venue, a member of our sales team will help guide you in determining the amount of staff needed. ACRYLIC SERVICEWARE VS. CHINA SERVICE All menus that include acrylic serviceware can be upgraded to china plates and stainless utensils. ECO-FRIENDLY When not using china service Olympia is pleased to offer, upon request, the option of serving all food on attractive eco-friendly plates and accompanying bio-degradable utensils for a charge of $2.00 per person. EVENT PRODUCTION FEE AND TAX An event production fee and 7% Florida sales tax will be added to all invoices. BOOKING FEE AND PAYMENTS A $500 retainer/booking fee is required to confirm and reserve your event date and is non-refundable. Final guest count and payment of the balance will be due to Olympia seven days prior to your event. Increases in guest count are accommodated up to 72 hours prior to event. DELIVERY Delivery fee from $25-$100 will be added to all contracts. Fee depends on location of event. Please inquire with sales associate for exact amount. 10

For a traditional holiday feel, food tables will be decorated with classic holiday colors of red, green, and gold. Decor includes trees, fresh holiday greens, sparkling ornaments, garland, and fabrics. RED HOT HOLIDAY Celebrate the holidays with red, red, and more red. Our food tables will be decorated with various shades and textures including red cone trees, sparkling red ornaments and red fabrics. S UGAR N' SPICE Put some sparkle in your holiday with glittery metallic decor. Food tables will be ornamented with sparkling silver and gold cone trees, dazzling garland, and lots of shimmering ornaments. BERRIES N' BRANCHES Feel like you're at the ski chalet in the mountains with this holiday theme. Our food tables are decked out with rustic trees, branches, berry garland, fresh holiday greens, and pinecones. For an authentic touch, add on our family of bears, with papa bear reaching 5' (additional $75 rental). Decorations can include accents of red and gold as pictured or can fit into your color scheme. If you're looking for some over the top decor, let us bring our 8' nutcrackers! (additional $100 rental) VISIONS OF SUGAR PLUMS Whether you're thinking Grinchmas or Candyland, have fun with this whimsical holiday theme! Our tables will be adorned with bright jewel tone colors of pink, chartreuse, and purple. Decorations include tinsel trees, bright garland, and candy ornaments. HOLIDAY BLUES For a contemporary spin to your holiday decor, have a "cool" celebration with various shades of blue. Decorations include sleek blue cone trees, snowflakes, fabrics and various ornaments in shades of blue.
