1 Fuqua School Catering Reception & Party Menu 2016/2017 Hors D oeuvres Chicken House Chicken Salad Rolls Homemade chicken salad with tenderloin of chicken, pickles, celery spices and mayo. Served on petite yeast rolls, in pastry shell or with crackers. Apple Chicken Salad Rolls Chicken, apples pieces, grapes, spices, mayo served on petite yeast rolls, in pastry shell or with crackers. Honey Teriyaki Wings Fresh chicken wings (no breading) deep fried and tossed in a teriyaki honey sauce. Southern Wings Chicken wing drumettes deep fried in seasoned flour served with a ranch dressing.. Hot Wings Chicken wing drumettes deep fried and then basted in hot sauce. served with celery and ranch dressing.

Chicken Quesadillas Mini tortillas stuffed with chicken, peppers, onions and cheese, served with a sour cream salsa sauce. Southwestern Chicken Roll Marinated petite boneless chicken breast pieces grilled and served on small yeast rolls with a chipotle mayonnaise. Chicken BBQ Roll Chicken breast slow cooked and pulled and seasoned in a hickory sweet sauce. Served on petite yeast rolls or Hawaiian rolls. Grilled Greek Chicken Tenderloin Forks Tender chicken tenderloin marinated in Greek Seasoning, grilled and cut into small squares, forked and served with feta lime cream sauce Seafood Bacon Wrapped Scallops Jumbo scallop wrapped in bacon and baked and basted in lemon butter. Bacon Wrapped Shrimp Fork Large Shrimp wrapped in bacon. Forked and served with cocktail sauce. Mushrooms Stuffed with Crabmeat Fresh mushrooms stuffed with lump crabmeat and spices. Mini Crab Meat Quiche Lump crab meat and cheese in a traditional mini quiche. Mini Crab Cakes Mini crab cake served on water wafer with remoulade. Greek Shrimp
