93 WHISKY TERMS Grain: A mix of unmalted and malted grain, typically barley, distilled in a continuous still. Whisky is also made from other grains, such as corn, wheat, and rye. Malt: Grain that has been malted and quickly dried to transform starches into sugars. Malt whisky is made entirely from malted grain distilled in a pot still. Single Malt: Malt whisky made from a single distillery. Single Cask: Malt whisky from a single cask, as opposed to several casks at one distillery. Blended: Usually a blend of malt and single malt whiskies, often from several distilleries. Blended whiskies are usually more consistent and affordable. Scotch Whisky: Produced in Scotland from barely, usually distilled twice and matured at least three years in oak casks. Scotch whisky is usually referenced as single malts or blends and often has a peaty, smoky flavour due to the primary role of peat in the malting process. Irish Whiskey: Produced in Ireland and aged in wooden casks for at least three years. Almost all Irish whiskies are blends and in Ireland, coal is used to malt the barley instead of peat. 94 WHISKY TERMS Canadian Whisky: Sourced in Canada, the majority of these products are blended multigrain whiskies, aged at least three years in a wooden cask. Canadian whiskies are characterized by a spicy, bitter-sweet flavour, which becomes smoother through the barrel aging process. Bourbon Whiskey: A type of American whiskey that requires at least 51 per cent corn. Bourbon is aged for at least four years in new charred white oak barrels.
