Nowadays these "potato fritters" are most often served as an appetizer. Real crocché are made with mashed potatoes (the main ingredient), fresh eggs and sharp grated Italian cheese; no milk or flour added. 7 =III= PIZZE in TEGLIA Pizza in teglia is a pizza baked in long, rectangular metal pans made to be sliced in rectangular portions for eaters, served on a long wooden plank for easy cutting and eating. Our pizza is made by the fermentation of dough and is very light & tasty, crunchy on the outside, with soft and springy crumb. We leave our dough to rise for 48 hours so it develops its unique light flavour and texture and lightness and most importantly it s easy to digest!
