While technically a seed, the term millet commonly refers to a group of grasses that are grown around the world as food for both humans and livestock. It is an important crop in the semi-arid developing world because it is highly productive in dry, high temperature climates. Archaeological sites reveal that millet may have been more widely consumed by prehistoric people than rice. Though it can be white or red, the millet most often available is a yellow hulled variety. Depending on how you prepare it, millet can be creamy and smooth like a porridge or mashed potatoes or puffed like rice. The Indian fl atbread roti is made from ground millet seeds. Yes, because millet doesn t contain gluten, it is a terrifi c grain alternative for those with celiac disease. Millet is also a very good source of important nutrients like manganese, copper, phosphorous and magnesium. And many studies show that a diet rich in whole grains, like millet, helps prevent heart disease, strokes, diabetes and obesity. Thanksgiving Millet & Butternut Bake A version of Mark Bittman s Autumn Millet Bake recipe, from his outstanding cookbook, How to Cook Everything Vegetarian. 1/4 cup olive oil, divided, plus more to oil baking dish 3/4 cup millet 1 cup fresh cranberries 1 medium butternut squash, peeled, seeded & cut into 1 cubes Salt & freshly ground black pepper, to taste 1 tablespoon minced fresh sage leaves 2 tablespoons maple syrup or honey About 1 cup vegetable stock, warmed 1/4 cup chopped hazelnuts 1. Preheat oven to 375º. 2. Lightly coat a 2-quart casserole, a large gratin dish, or a 9 x 13 baking dish with olive oil. 3. Warm 2 tablespoons of the oil in a small skillet over medium-high heat. When hot, add the millet and stir frequently, until fragrant and golden, about 3 minutes. Spread millet in the bottom of the prepared baking dish. 4. Scatter the squash and cranberries on top of the millet. Sprinkle with salt and pepper and the sage. Drizzle with maple syrup or honey. 5. Carefully pour the warmed stock over all. Cover tightly with foil and bake without disturbing for 45 minutes. 6. Pull carefully from oven and uncover. Increase oven temperature to 400º. Take a small taste. Adjust seasoning and note how close millet is to being cooked. If casserole looks dry, add a spoonful or more of warm stock or water. 7. Sprinkle the hazelnuts on top and return to oven. Bake for about 10 additional minutes until the bake bubbles, the top is browned and the millet is cooked through. YIELD: 4 to 6 servings 2014 Good Food Store.
