14 Bruno Clair Bruno Clair is one of the young and talented winemakers in Bourgogne. He is the grandson of the last owner of the famous Clair-Dau domaine, though thru the weird inheritance laws of France, it was his aunt and not his father, who inherited most of the Domaine. The Domaine Clair-Dau fell into shambles at her hands and eventually was sold to Louis Jadot...Bruno's domaine includes some choice parts in Chambertin Clos de Beze and in other super 1er Crus in Gevrey and Savigny. 16 Joseph Drouhin The well-known Beaune-based négociant house of Joseph Drouhin has been an important firm in the appellation of Burgundy since its opening in In that year, Joseph Drouhin purchased a pre-existing small négociant operation and re-named it Maison Joseph Drouhin. Joseph handed over the reins of the significantly expanded négociant house to his son, Maurice Drouhin in Maurice Drouhin, who was one of the great figures of his era in Burgundy, presided over the family domaine until slowed by a sudden stroke in He was succeeded by his son Robert Drouhin, who continues to run the estate to this day. While Maison Joseph Drouhin now has a large spread of outstanding vineyard parcels scatted up and down the Côte d Or and in Chablis, it is virtually impossible to tell a Drouhin wine made from purchased grapes and those produced from their own vineyards, as the house style of terroir-driven, classic and age worthy Burgundy is shared both by the négociant wines and the estate wines. The Drouhins make all of their own wines from the Côte d Or, with an eye towards producing medium-full wines of great complexity and intensity of flavor in the traditional Burgundian style. 23 Liger-Belair The current Domaine du Comte Liger-Belair was founded by Louis-Michel Liger-Belair only in 2000, but Liger-Belairs have been growing wine in Burgundy for nearly two centuries, since General Louis Liger-Belair purchased the Château du Vosne in Over the next century the domaine grew through marriages and purchases until it included the monopoles of La Romanée, La Tâche and La Grande Rue, and substantial holdings in many of the other greatest vineyards of the Côte de Nuits. Unfortunately the passing of Comte Henri Liger-Belair in 1924 and his widow the Comtesse in 1931 meant that the estate was to pass equally to their ten children, and the law of the time provided that for any of the heirs to receive their portion in land rather than cash, all must have reached legal adulthood. Two had not, and when three of the other siblings did not want to wait to receive their inheritance, there was no choice but to put the entire domaine up for sale. At that auction, Louis-Michel s grandfather Comte Michel and one brother joined to purchase what they could, and walked away with three pieces of vineyard land in Vosne-Romanée, the monopole La Romanée and parcels of Reignots and Chaumes. The wines were released under the names of various negociants until Louis-Michel began to take back vineyards to produce the wines himself. He continues to refine his practices, most recently with a complete conversion to biodynamic farming and to gentler presses, which he believes has improved the quality of the tannins, and has in just a decade solidly re-established the Liger-Belair name as one of the most reliable producers of top class Burgundy. 27 Lucien Le Moine Lucien Le Moine is one of the newest operations in Burgundy, but since its founding in 1999 has found a remarkable level of critical success and the wines are often said to have achieved cult status. The proprietors are husband and wife couple Mounir Saouma and Rotem Brakir; the name of the estate comes from the name Lucien, one of Saouma s nicknames, and Le Moine, meaning the monk, which refers both to Saouma s background of making wine at an Israeli monastery and to the French translation of his first name. Today the line has grown to about sixty wines, all Premier or Grand Cru, from some of the best terroirs in the Cote d Or. Saouma and Brakir generally purchase juice, either immediately after fermentation for reds or after pressing for whites, and then see to the upbringing in their own cellar. Production quantities of each wine are tiny. Elevage is somewhat atypical for Burgundy, with a cellar philosophy of long contact on the lees (i.e., little racking) and extremely low sulfur levels. The wines do, by design, contain higher than usual levels of carbon dioxide and thus should always be decanted if opened in the first few years after bottling. While these are not standard practices, the high critical praise they receive both in barrel and in bottle make it clear that their winemaking approach has been a success. 41 CHAMPAGNE Billecart Salmon Agrapart In 1984, Pascal Agrapart took over his family s estate in Avize and has since established a reputation second only to Anselme Selosse of Jacques Selosse for high-quality, terroir-expressive wines from the Côte des Blancs that use only indigenous yeasts in the cellar. He makes three nonvintage cuvées: 7 Crus ($) comprises seven villages, including Avenay Val d Or in the Grande Vallée and Mardeuil in the Vallée de la Marne, while the richer and more complex Terroirs ($) is a grand cru blend from Avize, Cramant, Oiry, and Oger. Beginning in 2007, he has also made a field-blended champagne called Complantée ($$), composed of six different grape varieties that are harvested and pressed together. His vintage champagne, called Minéral ($$), always comes from Le Champ Bouton in Avize and Les Bionnes in Cramant, which share a virtually identical soil composition. His other top cuvées illustrate the terroir of Avize: L Avizoise ($$$) is a broader, more expansive wine, while Vénus ($$$) is more chiseled and crystalline, reflecting the highly chalky soils of this specific site. 42 PROPERTY OF A EUROPEAN GENTLEMAN 歐洲紳士的珍藏 Cedric Bouchard At his Roses de Jeanne estate in the village of Landreville, Cédric Bouchard makes exquisite champagnes unlike anything else in the appellation. Since 2000, he has produced exclusively singlevineyard, single-vintage champagnes of remarkable density and concentration; all harvested at unusually low yields, the wines are fermented in stainless steel and bottled at 4.5 atmospheres of pressure instead of the usual 6 atmospheres. Bouchard makes seven champagnes, aged a minimum amount of time on the lees, and released without dosage. Côte de Val Vilaine ($$), a pinot noir vineyard in the village of Polisy, is released a little earlier than the others, emphasizing its luscious, vibrant fruit. The pinot noir from Côte de Bechalin ($$$) is riper and more exotic, with a velvety depth and lively structure. Presles ($$$), is focused and fruity, made from a pinot noir vineyard that Bouchard planted in 2007 with ten different rootstocks to maximize genetic diversity. Les Ursules ($$$), is potentially the most complex and complete of these four blancs de noirs. La Haute-Lemblé ($$$) is a blanc de blancs of powerful ripeness yet intense structure and often needs several years to release. La Bolorée ($$$) is one of the most original wines of, with aromas of tea leaf, alpine herbs and licorice. Bouchard s greatest wine, Le Creux d Enfer ($$$$) is an elegant, refined pinot noir and is crushed by foot and macerated on its skins to produce a subtle yet complex rosé. 43 David Leclapart Diebolt In the village of Trépail, David Léclapart crafts pure, uncompromisingly individual champagnes made from biodynamically grown grapes. These wines have become more refined and expressive over time, but they can also be irregular; they exhibit a crystalline clarity and a complex, mineral-driven intensity. Léclapart s 7.4 acres (3 hectares) of vines are in Trépail, spread over twenty-two parcels, and for his entry-level blanc de blancs, L Amateur ($$$), he selects six parcels that illustrate all the various sectors of Trépail. The wine is vinified entirely in enameled-steel tanks and released after three years of lees aging. L Artiste ($$$$), is made from chardonnay vines up to fifty years old, but the particular parcels vary from year to year. Half of the wine is vinified in old barriques, the other half in enameled steel. The star of his cellar, L Apôtre ($$$$), is a single-vineyard blanc de blancs from the lieu-dit of La Pierre Saint-Martin (although the site is called La Voie de Villers on official maps). These chardonnay vines create a wine of vivid concentration and intense personality. Léclapart vinifies this wine in secondhand barriques obtained from Domaine Leflaive in Burgundy, and he ages it for a slightly longer amount of time on its lees in bottle than he does for others.l Astre ($$$$), made from his pinor noir vines, is an anomaly in a village dominated by chardonnay. While its flavors are clearly pinot, it feels more like a Trépail wine than anything else, its expression of terroir surpassing that of grape variety. While the estate is based in Cramant, Diebolt s wife is from Cuis, and both his nonvintage Blanc de Blancs ($) and vintage-dated Blanc de Blancs ($$) contain a high proportion of grapes from that village, blended with wine from Épernay, Chouilly, and Cramant. The Cuvée Prestige ($) used to be a pure Cramant blanc de blancs, made from Diebolt s oldest vines, although today it includes a little Chouilly and Le Mesnil-sur-Oger. It s still a wine of great character and finesse, blended from three different vintages and partially aged in large, old oak casks. Since 1995, Diebolt s Fleur de Passion ($$$) has become the signature of the estate, made exclusively from old vines in the finest terroirs of Cramant. It s a stern, demanding champagne that requires a great deal of age to reveal its full complexity and depth, and even the original vintages from the 1990s remain youthful and vibrant today. 45 Guy Charlemagne Philippe Charlemagne took over this Le Mesnil-sur-Oger estate from his father, Guy, in 1988, and today, he farms about 37 acres (15 hectares), not only in the Côte des Blancs but also in the Côte de Sézanne and Vitryat. Both his nonvintage Brut Classic ($) and Brut Nature ($) are exclusively from the Côte de Sézanne, blended from both chardonnay and pinot noir, while the more elegantly textured Réserve Blanc de Blancs ($) is from Oger and Le Mesnil-sur-Oger. At the top of the range is Mesnillésime ($$), a vintage-dated blanc de blancs from Charlemagne s oldest vines in Le Mesnil: like all of his wines, it s brisk and racy, although it has a layered depth of fruit and a prominent chalkiness to counter its high acidity.
