For more info on Sunset Ramblers and earlier newsletters, go to The March campout was at Twin Oaks Park in Hoboken, Ga. March with early bird on the 10th. Ken and Kath Cody, Jack and Pat Dean, Bob and Sarah Edmondson, Rich and Pam Frederick, Rich Gavin, George and Lorretta Redderoth, Ken and Sherrie Risberg, Ray and Peggy Storey, and Chick and Debby Thompson camped. Twin Oaks is about fifteen minutes outside of Hoboken on several acres of farm land. There are cows, pecan trees, and a pond surrounded by more land. It s scenic, peaceful, and offers much for the dogs to explore. The weather was gorgeous-a great weekend for camping! Rich G. and Chick and Debby arrived on Monday. Ken and Sherrie joined them on Tuesday. Ken and Kath, Bob and Sarah, Rich and Pam, and George and Lorretta arrived on Thursday. Jack and Pat and Ray and Peggy arrived on Friday. Thursday, people had dinner on their own and then played sevens. Friday, some people played Ray s game, ladder ball, others gathered to chat at Ken and Sherrie s rig. Dinner was at 6:00 and was followed by a meeting. Secretary Pam has sent the minutes from that meeting in an . Sherrie found out from Joe after the meeting that he needs us to do security at the Spring rally. Some people played sevens after the meeting. Saturday, Ray and Peggy went to Brunswick to have lunch with friends. People gathered in different places to chat: the women at Ken and Sherrie s and the men at George and Lorretta s. Later in the day, people gathered at Ken and Sherrie s again to chat. Some people played ladder ball again. People gathered at 5:30 for an Irish potluck. 50/50 was right before dinner. Sherrie was the winner. Sherrie taught us a new game after dinner. It was called progressive rummy and was lots of fun! She was the winner. (She knows what she s doing.) The time changed Sunday morning so everyone felt a little off as we got up and prepared to leave. It s always hard to say goodbye. The next campout will be the spring rally in Okeechobee. Hopefully, most Sunset Ramblers will be there! Rich G. (and Gavin) and Chick and Debbie stayed until Monday.

2 Page 2 Hear Ye! Hear Ye! Ken and Sherrie Risberg have been married for 32 years and have two kids Kenny and Christine. Ken spent 18 years working for Sperry.Lockheed Martin (7 name changes for the company) doing work on the navigation systems of submarines in Va., Port Canaveral, and Kingsbay. Defense budget cuts created a change of careers to Kemper Insurance and desk top computer support. Sherrie s degree in business education allowed her to have many jobs over the years. She taught at Commonwealth College in Va., was FCCJ s adjunct instructor in Jacksonville, substituted at several local elementary schools while the kids were little, was office manager for a fundraising company, and finally was a dean secretary at Bishop Kenny High School. They volunteered with both the Boy Scouts and Girl Scouts on the local and service unit levels. They were lucky and got to take a very early retirement and have been traveling ever since. They volunteer for Good Sams of Florida, serve as ASD s for 4 chapters, and help with the state rallies. Ken enjoys his computer, electronics, and wood working. Sherrie likes to read, do crafts, quilt, and sew. Ingredients: Beef Cottage Pie By Rich Gavin 1 (16 oz.) bag parsnips 1 medium Yukon gold potato (about 8 oz.) 2 tablespoons water 2 tablespoons fresh chives, finely chopped 6 cloves garlic, finely chopped 8 oz. sliced baby portabellas, finely chopped 2 teaspoons canola oil 1 cup prediced yellow onions 2 oz. 50% less fat white cheddar cheese, shredded 3/4 lb. lean ground beef, 7% fat 1 teaspoon kosher salt, divided 11/2 cups unsalted beef broth 2 tablespoons cornstarch 2 cups frozen peas and carrots 1/2 cup plain nonfat Greek yogurt Directions: 1.Peel parsnips and potato, then cut into small cubes, place in microwave safe bowl with water, and cover; microwave on high for min. 2.Preheat large, nonstick saute pan on medium high for 2-3 min. Place oil in pan, then add garlic and onions; cook and stir 4-5 min. Stir in mushrooms, cook and stir 3-4 min. 3.Preheat oven to 425. Add beef and 1/2 tsp. salt to mushrooms; brown 4-5 min., stirring to crumble meat. Combine broth and cornstarch until blended; Continued on page 5.

Beef Cottage Pie continued 3...stir into beef mixture and bring to a boil. Stir in peas and carrots; transfer mixture to a 2 quart baking dish. 4.Drain potato and parsnips; mash with potato masher until smooth. Stir in yogurt, remaining salt, cheese, and chives. Spread potato mixture over beef; bake min. Serve. Easy Irish Colcannon By Sherrie Risberg Ingredients: 2 lbs. potatoes, peeled and cubed 1 head cabbage, chopped 1 bunch green onions, chopped 1/4 cup butter, softened 1/2 cup half and half cream Salt and pepper to taste Directions: 1. Place potatoes, cabbage, and green onions in a large sauce pan, fill with water, and bring to a boil. Reduce heat, cover, and simmer until the potatoes are tender, about 20 minutes. 2.Drain the vegetables and place in a large bowl. Mash the vegetables with the butter using a fork until the mixture is chunky, pouring in the half and half gradually as you mash. Season with salt and pepper. Serve.
