5 Foreword HOP HARVEST GUIDE 0 a new step into the inexhaustible world of hop aromas Gone are the days when hops were judged solely for their technical properties. Today, aromas and flavours take priority. The Hop Aroma Compendia, which the experts at Joh. Barth & Sohn have developed in association with two world champion beer sommeliers and a parfumeur, have contributed to this trend. The three volumes published so far have decidedly shifted our view of hops. In the meantime, with the Hop Aroma Compendiums, we have been able to persuade sceptics and I m convinced we will also succeed in doing so with our new project. Now we go one step further because our new variety annual compares individual crop years of hops. We will present the first edition at the 0 BrauBeviale. Our highly-skilled experts have tasted and described hop varieties from the recent 0 harvest: hop varieties from Germany, France, Slovenia und the Czech Republic, four American und three Australian hop varieties. Our goal: to find out as soon as possible whether there are peculiarities or differences in the 0 harvest when compared to previous evaluations. I m very curious about the feedback from the breweries. One thing is sure: with every new project our knowledge concerning one of the most fascinating plants in the world, hops, grows. 6 Aramis Europe Mint Caramel Lemon grass Rose Raspberry The most important aroma hop variety in the Alsace region is the traditional Strisselspalter. Aramis was developed as part of a breeding programme in order to launch a new variety with a similar aroma profile and polyphenol properties to Strisselspalter onto the market. It has an enhanced bitter potential. 7 France Aroma characteristics In the cold infusion, there is a predominance of sweet floral aromas like jasmin but also straw, extracts, mint and hay. In the raw hops this variety has a sweet fruity promise of straw, rasp and pineapple with an expression of cognac notes, rose and lemon balm. 8 Aurora Europe Aurora is the Latin word for dawn. This cultivar used to be called Super Styrian and is derived from Northern Brewer. It has a rich green colour, an intense, pleasantly hoppy aroma and has outstandingly good storage stability. 9 Slovenia Aroma characteristics Aurora s appeal lies in its exceptionally spicy notes. In the cold infusion, it is strongly reminiscent of tea and citrus, with floral overtones. In its raw state, it is characterised by spicy- aromas of lovage, marjoram, lavender and aniseed, pleasantly rounded off by the fruitiness of lime and mandarin orange as well as resiny, woody notes of incense. Nowadays this hop, which stands out due to its very large cones, is only grown on a small area. In the raw hops citrus, mandarin, lemon grass combine with floral geranium, green apple and resin components to form a remarkable flavour profile. The spicy, resinous quality has receded somewhat in this crop, which is replaced by fruity notes such as sour apple rings, pineapple and elderflower syrup. 12 Hallertauer Blanc Europe Hallertauer Blanc is a daughter of the cultivar Cascade with a fruityfloral white wine bouquet. The aroma variety was bred in Huell at the request of the beer industry in light of its demand for bold tastes and new aromas and came onto the market in 0. 13 Germany Hallertauer Blanc (cold infusion*) Hallertauer Blanc (raw hops) Aroma characteristics In the cold infusion spicy to woody notes of tomato leaves and barrique come to the fore. These are combined with wine aromas of muscatel and Federweisser. In the raw hops these are complemented by green vegetal elements of lovage and onion but grapefruit notes and fruity nuances of strawberry and cassis can also be distinguished. 14 Hallertauer Mittelfrueh Europe Hallertauer Mittelfrueh is the original regional variety of Hallertau and, with its delicate aroma and average bitter content, is still very popular today. This hop variety almost disappeared due to its high susceptibility to wilt. Thanks to a resurgence in demand and newly available virus-free plants, however, the cultivar is currently making a comeback. 15 Germany Aroma characteristics The flavour profile of the Hallertauer Mittelfrueh in its raw state is characterised by spicy, woody aromas, such as liquorice and hay, with slight notes of black. In the cold infusion, floral, tea-like components enhance the overall impression. It is comparable to Hallertauer Mittelfrueh and is distinguished by its good yields. The hop variety Tradition displays good resistance to wilt and to downy mildew. 18 Herkules Europe Orange Melissa Honeydew melon Lemon Pepper The Herkules cultivar bred at the Huell hop research institute is aptly named after the mighty Greek hero Hercules. In the Greek saga, Hercules completes tasks that were considered quite impossible. Similarly, this high-alpha variety, with its extremely high performance and strong bitterness, has to meet a series of high demands from growers and brewers alike. Its acreage in Germany is growing fast. Fruit tea, especially ice tea with peach flavour and -spicy lemon balm, aniseed, lavender and floral geranium give the raw hops its special flavour. 25 Czech Republic Aroma characteristics Kazbek (cold infusion*) Kazbek (raw hops) The predominant aromas in the cold infusion are grapefruit, lemon and lime, accompanied by sweet, such as pineapple, passion fruit, peach and watermelon, with light top notes of honey and cream caramel. These aromas also occur in the raw hops where they are joined by nuances of rasp, orange, ginger, elder and chocolate. Light notes of lemon balm add particular emphasis to the overall aroma. Crop 0 This year is characterised completely by fresh citrus. That goes for the raw hops too, which combine orange, grapefruit and mandarin, delicately balanced with spicy basil and parsley. Cran and redcurrants also take their place in the mix. The cold infusion is also high in vitamins. Vitamin juice and nimm orange aroma is combined with carrots and knot. 31 Germany Aroma characteristics In its raw state, Smaragd produces an impressive combination of spicy, characteristics, such as liquorice, thyme and tarragon, with aromas of sweet and vegetal notes of garlic. The spicy elements are also present in the cold infusion, in which a cognac-like woody character is responsible for its special flavour. The name Triskel was inspired by triskelion, the symbol of the Gauls, the ancestors of the modern French people, which represents the three elements: Earth, Air, and Water. 33 France Aroma characteristics Triskel (cold infusion*) Triskel (raw hops) In the cold infusion, notes of cream caramel such as toffee combine with strawberry aromas and green vegetal artichokes, peppers and nettles. tobacco contributes an interesting note to the overall flavour profile. in the raw hops, besides these green vegetal components, there are extracts of creamy yoghurt with sweet honey, fruity peach, succulent watermelon and floral geranium. Crop 0 This year, these raw hops provide an intense summer fruit aroma, made up of apricot, peach and cran. The typically greek yoghurt with honey aroma is reminiscent of summer, the sun and the beach. It then becomes somewhat more autumnal in the cold infusion, where thoughts turn to black tea with lemon and a hay bath. 34 Cascade America The Cascade mountains, with their volcanic origins give the cultivar of the same name its medium-strong, very distinct, fragrant floral aroma. The main features of this variety are its long, darkgreen cones and its low alpha content.
