An elegant smooth hand-crafted vodka straight from the paddock to the bottle. 666 Vodka (Burnie, TAS) Pure Tasmanian Vodka 40.00% 9 The spirit is created from 100% Tasmanian barley, triple distilled in copper pot stills, charcoal filtered to rid of any impurities, and finally cut down to 40% ABV with rainwater collected from Cape Grim. 666 Vodka (Burnie,TAS) Autumn Butter Vodka CONTAINS DAIRY 40.00% 9 Every year the rich Autumn Butter will be collected and combined with our pot distilled vodka to make 666 Autumn Butter Vodka. Hartshorn Distillery (Birchs Bay,TAS) Sheep s Whey Vodka CONTAINS DAIRY 40.00% 10 This unfiltered sheep whey vodka is distilled from the natural by-product of Grandvewe Farm s (TAS) cheese making process. Produced in tiny batches from paddock-to-bottle, maximum capacity is hand-painted bottles/week. With an abundance of milk-sweetness up front and sublime texture and structure, this vodka is excellent solo but truly shines when mixed. McHenry Distillery (Port Arthur, TAS) Puer Vodka 40.00% 11 Puer s (pronounced Pure) nose is light and easy there s a touch of vanilla along with a slight nutty undertone. It has a beautiful mouth-feel and just a bit of the traditional vodka burn as it goes down. Perfect on its own or in your favourite cocktail. 9

Bass and Flinders (Red Hill, Victoria) Soft and Smooth 40.00% 9 Bass & Flinders' Gin combines eight botanicals including juniper berries, Angelica root, liquorice root and lime. A delicate burst of citrus flavours enhances the smooth quality of our hand-crafted Shiraz grape spirit. Cape Byron Distillery (Byron Bay, NSW) Brookie s Byron Dry Gin 40.00% 9 A true exploration of Australian Native Botanicals unique to the Northern Rivers Region (Byron Bay hinterland), many of which foraged from the heart of our Rainforest. A traditional dry style Gin, Brookie s is a beautifully balanced combination of the finest traditional and local botanicals, trickle distilled in a custom handmade Copper Pot Still. Cape Byron Distillery (Byron Bay, NSW) Brookie s Slow Gin 27.00% 9 A limited-edition creation by the folks up at the Cape Byron Distillery located in the hinterlands of Northern NSW. Not your typical 'Sloe' Gin, this Slow Gin is crafted with Davidson Plums, a native product of the Northern Rivers region. The skins are torn and fermented for an extended 6 months, creating a juicy and tart vat of goodness that is then mixed with local mountain spring water and a little sugar. The end result is a deep, rich, red Slow Gin that is like no other. Patient Wolf (Melbourne, VIC) Premium Dry Gin 41.50% 9 Handcrafted in small batches in Brunswick, Melbourne. A strong nose of bright citrus quickly makes way for a bold, earthy and floral bouquet. On the palate, orris commands whilst coriander seed tingles warmly and finally finishes with hints of peppercorn spice and fresh Juniper. Antipodes (Melbourne, VIC) Organic Gin 45.00% 9 Australia's first certified organic gin. Triple distilled with native and traditional botanicals. Refined with pure Australian rainwater. Neat, sophisticated, happy to mix. The Splendid Gin (Cranbrook,TAS) Gin 42.00% 9 The Splendid Gin is a blend of the purest of Tasmanian spring water, direct from Spring Vale Estate, and a triple distilled grape spirit of the highest grad. Delicate notes of mandarin, rosemary and bergamot are carefully preserved through vapour infusion and balanced with traditional juniper and coriander botanicals. Poor Toms (Marrickville, NSW) Sydney Dry Gin 41.30% 9 You'll notice a classic juniper backbone complimented by fresh green apple, native strawberry gum leaf, and chamomile. It is an easy drinking gin - delicate, fresh, and floral. The West Winds (Margaret River, WA) Sabre Gin 40.00% 9 The 'Sabre' presents a traditional London Dry style gin. The addition of wattle seed adds a depth to the mid palate and introduces a creamy texture without the need for artificial additions. Perfect as a classic G&T with lemon or capsicum and cucumber. McHenry Distillery (Port Arthur, TAS) Classic Dry Gin 40.00% 9 An elegant smooth Gin like a magic carpet ride of the botanicals. Citrus peel is present and balanced with a small amount of star anise, coriander seeds, cardamom and orris root all beautifully balanced with the juniper. Applewood Distillery (Adelaide Hills, SA) Juniper Gin 43.00% 9 A citrus-driven and floral Gin that has an interplay of fragrance, depth and vibrancy. Inspired by Springtime in the Adelaide Hills, distilled from grape-based spirit and composed of the following botanicals: Juniper Berries, Coriander Seed, Angelica Root, Ginger Root, Lemon Myrtle, Earl Grey Tea, Lavender, Vanilla, Cardamom, Macadamia, Lemon and Orange Peel. 10

4 Loch (Loch, VIC) Dry Gin 41.00% 10 A classic London Dry style gin. Juniper lead expressive and fragrant and soft on the finish. Botanicals of juniper, cinnamon, cardamom, angelica, liquorice root, mace, cassia bark, coriander, nutmeg, oris root and ginger. Loch (Loch, VIC) Gin Liqueur 32.00% 10 A Gin designed to drink neat! The same expressive botanical base as the Classic Gin but less spirit heat with the lover alcohol level. A hint of sweetness opens the palate, but doesn t detract from the full gin character. Botanicals of juniper, cinnamon, cardamom, angelica, liquorice root, mace, cassia bark, coriander, nutmeg, oris root and ginger. Stone Pine Distillery (Bathurst, NSW) Seasonal Orange Blossom Gin 40.00% 10 The intoxicating aroma of orange blossom is married with some classic gin botanicals, along with the additions of finger lime and lemon myrtle. A zesty, citrus and floral gin. Limited Edition Artemis (Melbourne, VIC) 44.00% 10 Artemis Gin is a juniper forward, classic London dry style and is complimented by Australian native botanicals as well as our namesake, Artemisia. Artemis contains both Artemesia absynthium (wormwood) and Artemesia draconis (tarragon). It is a spicy, savoury gin with a kick of citrus and a long finish of clove, nutmeg and ginger. It is bottled at a slightly higher strength to give the botanicals extra punch. Hippocampus (Perth, WA) Dry Gin 41.50% 10 A dry gin with superb juniper character and subtle flavours from botanicals including orange and lemon peel, coriander and cubeb pepper. Only the best of the heart spirit is kept ensuring the end result is a well-balanced gin with a smooth mouthfeel and a superb finish. Distillery Botanica (Erina, NSW) Gin 42.00% 10 Fresh handpicked botanicals give this gin its distinctive character the scent is divine. Botanica uses enfleurage, a thousand-year-old technique, to extract the purest perfume from the hero botanical, Murraya, without the use of heat. This makes the delicate Murraya come alive, with cues of Jasmine, Honeysuckle and Orange Blossom. Mt Uncle Distillery (Atherton Tablelands, QLD) Botanic Australis Gin 40.00% 10 Apart from the juniper, this gin employs a full repertoire of native Australian botanicals (14 in total). The Lemon Scented gum (citriodora) makes a particularly strong contribution. Other notable ingredients include native Wattle Seed, Lilly Pilly, Lemon Myrtle, native ginger and Finger Limes. Four Pillars (Yarra Valley, VIC) Rare Dry Gin 41.80% 10 Vibrant, lifted aroma is citrus focussed with its distinct lemon peel top note hovering over peppery, woody, piney, juniper notes. Second pass sees the aroma turn creamy and more lemon-meringue like. Hints of eucalyptus emerge in the final inspection to round off a very appealing gin bouquet. Four Pillars (Yarra Valley, VIC) Spiced Negroni Gin 43.80% 10 Part of the Bartender Series, a gin created by bartenders for bartenders, a ballsy gin full of flavour and spice. With Tasmanian Pepperberry leaf and cinnamon, combined with an exotic Western African spice Grains of Paradise, create a glowing gin that cuts through vermouth and bitters. Shene Distillery (Pontville, TAS) Poltergeist Unfiltered 46.00% 10 The Unfiltered Poltergeist retains the full spectrum of all the flavours and aromas that we coax from our botanicals, and will please gin lovers looking for a powerful, mouth-watering nose and a taste that is big, bold and beautiful. Bass and Flinders (Red Hill, Victoria) Angry Ant Gin 40.00% 11 This premium gin is a truly unique Australian gin, a tribute to Australia's rich bio-diverse landscapes. With typical Australian origins, this gin is hand-crafted and hand-numbered by our distillers and made from classic Australian Shiraz spirit where the rich, ripe aromas of the Shiraz grape deliver a gin that is one of a kind. 11

5 Loch Distillery (Loch, VIC) Weaver Gin 50.00% 11 A unique gin that incorporates native botanicals into traditional gin basics. The Australian native ingredients are locallysourced and sustainably-harvested. It s as Australian as you can get, while still being a genuine London dry gin. Leading with juniper on the palate, it progresses to a distinctly Australian savoury finish. The West Winds (Margaret River, WA) The Cutlass 50.00% 11 It literally smells like fresh peeled grapefruit, orange or lemon - superb. The freshness carries onto the palate where citrus peel is perfectly balanced against peppery juniper and rosemary flavours, building into a tremendous but controlled pepper burst. Shene Distillery (Pontville, TAS) Poltergeist- 'A True Spirit' (Filtered) 46.00% 11 A fragrant, crisp blend of flavours and aromas in the London dry gin style. To balance our carefully selected ingredients, it has been filtered to ensure each is able to shine on the palette. McHenry Distillery (Port Arthur, TAS) Old English Sloe Gin 30.00% 11 Using their gin as a base, sloe berries sourced from Northern Tasmania are macerated to impart their succulent flavour. The taste is light and natural in the mouth with brambly, dried berry flavours followed by hints of raspberry tart. Ends nicely balanced, mildly tannic and pleasantly long. Avoids the 'too sweet trap'. Adelaide Hills Distillery (Adelaide Hills, SA) 78 Small Batch Gin 42.00% 11 Using pure Adelaide Hills water and a blend of twelve unique botanicals, and never heated above 78.1 o this distilling is gentle enough to ensure only the purest alcohol vapours interact with the botanicals and preserve their delicate flavours and aromas. This is a beautifully complex and superior gin, worth trying neat. Loch (Gippsland, VIC) Small Batch Gin 41.00% 11 Crystal clear with an engaging bouquet of curry leaf, white pepper, juniper and turmeric over citrus, followed through by subtle pepper / pine notes and suggestions of peppermint ice cream in the fade. Four Pillars (Yarra Valley, VIC) Cousin Vera s Gin 42.80% 11 The aromatics are bright, savoury and clean with a slight citrus spike. Olive leaf, fresh rosemary and crushed coriander sit above a solid base of juniper. The savoury notes carry on to the palate and are supported by pine needles, white pepper and a textural almond note.. Four Pillars (Yarra Valley, VIC) Bloody Shiraz Gin 37.80% 12 The beauty of Bloody Shiraz Gin being a product of vintage means that it will never be the same. The 2017 release has an incredibly vibrant ruby colour, which turns iridescent pink when mixed with tonic or soda. Aromatically the gin has fresh pine needles and incredible spice, and a clear peppery, dense raspberry character. The palate is lovely and sweet, with long juniper and spice characters to finish. This release is slightly lighter in colour than last year's, due to a cool vintage in the Yarra Valley with a moderate ripening period. McHenry Distillery (Port Arthur, TAS) Barrel Aged Gin 40.00% 12 William McHenry & Sons is the world s most southern family owned and operated distillery, located at Port Arthur. This tasty gin is finished in Russell's Reserve Bourbon barrels, it opens with fragile scents of lemon myrtle and white pepper and delicate spices Husk Distillers, (Tumbulgum, NSW) Ink Dry Gin 43.00% 12 The colour of Ink Gin is derived from the deep infusion of petals from an exotic blue flower. This natural floral infusion gives Ink Gin a remarkable and lustrous quality, most elegantly displayed in our signature Ink & Tonic, which changes colour from deep blue to blush pink when mixed. Using 12 botanicals in its distilling; Ink is a complex, yet well balanced gin; rich in citrus and floral notes, with a little heat and spice. The West Winds (Margaret River, WA) The Broadside Navy Strength 54.00% 13 Distilled using the beguiling yet delicious sea parsley, lemon verbena and seasoned using Margaret River sea salt, The Broadside delivers full-on flavour in a dry gin martini with a grapefruit twist 12

This Gin is designed to smell beautiful with delicate petal and citrus aromas with a hint of freshly cut hay. The West Winds (Margaret River, WA) Broadside Barrel Expedition Maidenii Voyage 45.00% 15 The first of many barrel aged gins, this has paired Australian Maidenii s Sweet Vermouth barrels and features wormwood, strawberry gum, river mint and wattle seed. Whisky Hellyers Road Distillery (TAS) Original Single Malt Whisky 46.20% 9 Very pale straw colour with water like hue. An enticing nose. Primarily fresh, ripe fruits; peach and cantaloupe above citrus, vanilla, shortbread and honey. The palate is stunning. A rich, creamy texture delivers wave upon wave of ripe fruits above vanilla and spice. Hellyers Road Distillery (TAS) Original Pinot Noir Finish Single Malt Australian Whisky 46.20% 10 Gold colour with pale straw hue. Top note of cereal and biscuit with tart cherry, raspberry jam and cocoa. Well balanced, with a warm spirit tingle and a spicy flourish on the back palate, finishing dry with a subtle choc-chip cookie / berry aftertaste. Belgrove (Kempton, TAS) White 100% Rye Unaged 40.00% 10 THE ONLY bio-diesel powered still in the world! Also, Peter s Rye whiskeys are one of only a small number of Paddock to Bottle distillers. This captivating and fruity palate Finishes like quality fresh rye bread with a hint of peaty earth tones. Hellyers Road Distillery (TAS) Peated Single Malt Whisky 46.20% 11 A stunning peated malt from Australia's premier distillery. Pale straw colour with water like hue. The nose is very similar to those of Islay. Fresh peat smoke, salt, kelp, liquorice, honey, vanilla butter menthol. Starward (Melbourne, VIC) Single Malt Australian Whisky 43.00% 11 STARWARD began with a simple vision: offer the world a modern whisky unshackled from tradition. Rich amber colour Aromas of ripe orchard fruits: pears, bananas and apples with vinous raisins and dried figs. Notes of caramel, vanilla and marzipan balance the fruit. The palate is filled with rich, toasty caramel, creme brulee, more fruit, pepper, sandalwood, nutmeg and marzipan. A full, sweet, juicy mouthfeel, with a youthful, spicy, dry finish. Starward (Melbourne, VIC) Wine Cask Edition Single Malt Australian Whisky 41.00% 11 Robust wine character; comes over with dried cherry, notes of prune and plum amid hints of varnish, sweet spice and vanilla malt. Matured primarily in Australian red wine barrels, this single malt represents a unique incorporation of our local barley, climate and innovative approach to producing whisky. Mt Uncle Distillery (Atherton Tablelands, QLD) The Big Black Cock 5yr Single Malt Whisky 43.00% 14 Deep polished copper colour. Issues strong scents of Christmas fruit mince pie and gobstopper, following through to an exceptionally soft textured, lightish profile that echoes the aromas. Well balanced with gentle spices and hints of vanilla entering late. Black Gate (Mendooran, NSW) Single Malt Sherry Cask 50.00% 15 Amber gold, scents of vanilla cream followed by wafer biscuit, caramel and hints of mocha. Belgrove (Kempton, TAS) 100% Rye Aged Whisky 42.00% 18 Bright gold appearance. Immediately appealing and distinctive with its dill / pickle scents and offering hints of chamomile tea, boiled lolly, cedary oak and peppermint 13

7 Timboon Port Expression (Timboon, VIC) Single Malt Whisky 41.00% 20 Golden straw soft pink colour. The nose is gentle and inviting, showing aromas-of oak, caramel, butterscotch, dark chocolate, red berries, honey, the palate is soft with citrus overtones. Great example of port wood and new make working its magic. Full length through pallet. The extra alcohol on the bottling certainly enhances the character of the malt. McHenry Distillery (Port Arthur, TAS) Single Malt Whisky 44.00% 23 Sweet, woody aromas and flavours of tropical fruits, toffee, vanilla custard, caramelized apples and dusty straw, tea with a chewy, vibrant, and fruity full body. Peppery spices, and oak spice finish. The palate is sweet initially, with notes of citrus fruits, clean wood and youthful maltiness. The stickiness from the wood finish then begins to unfold, chocolate coated almonds and burnt sugar before coming to a soft floral note and then you are left with a toffee note on the finish. Extremely Limited Release Timboon Christie s Cut (Timboon, VIC) Cut Cask Strength Single Malt Whisky 60.00% 25 Christie s Cut is our very own premium cask strength whisky. Recently awarded bronze in the Australian Distilled Spirit Awards Named after the famous police officer John Christie, this whisky is big and bold just like the name sake. At 60%, the cut has an extra-long finish featuring all our trademark characteristics of fruit, vanilla, butterscotch & smoke. Extremely Limited Release Moonshine Moonshine is generally the alcohol distillate straight from the still. It is usually made from corn mash; it is fundamentally an unaged corn whisky. Bourbon is a barrel-aged corn whiskey. Melbourne Moonshine (Melbourne, VIC) Sour Mash Shine 40.00% 9 Local corn is used to create the sour wash (the distillers beer loaded into the still) which provides the warm, sweet, strong kick of a true Southern white lightning merged with the clean, refined and utterly enjoyable drinkability of a modern Melburnian drop. Melbourne Moonshine (Melbourne, VIC) Apple Pie Shine 30.20% 9 Hand made with 2 different types of Victorian apples that are pressed and juiced, then blended with triple distilled moonshine; then infused with cloves and cinnamon sticks. The aroma that meets the nose is a free apple pie straight from the oven. Melbourne Moonshine (Melbourne, VIC) Sweet Tea Shine 39.00% 9 This moonshine is a drink best enjoyed with lemonade or ginger ale, over ice with a slice of lemon and sipped while watching the world go by Melbourne Moonshine (Melbourne, VIC) Single Cask Barrel Aged Moonshine 45.6% 10 Flavours of toasty oak, buckwheat pancake, vanilla and a delayed rush of sugars offset by light tannins and lively spices. The base spirit remains evident through the oak, while the balance and length is spot on. Lingers with a thread of vanilla and honeycomb. Great moonshine. 14

8 Unaged Spirits Husk Distillers (Tumbulgum, NSW) Pure (The North Coast Bar Series) - Unaged Australian Virgin Cane Spirit 40.00% 10 Made from the first press juice of freshly crushed sugar cane grown at Husk Plantation Distillery. The North Coast Bar Series is being created with a paddock to bottle mentality, using sustainable distilling practices. Best mixed in your favourite cocktail instead of vodka or white rum. Adelaide Hills Distillery (Adelaide Hills, SA) Gunnery Spiced White Rum 40.00% 10 A superb combination of Australian native and traditional botanicals. Cinnamon myrtle shines through on the nose with hints of chocolate, vanilla and citrus. The palate is savoury and refined with a lingering hazelnut finish. Slightly sweetened with bush honey and Australian demerara sugar. Applewood Distillery (Gumeracha, Adelaide Hills) Baby Malt 42.00% 11 The first grain-based spirit by this fantastic distillery! Crafted from 100% South Australian malt fermented, distilled and matured at the Applewood Distillery in the Adelaide Hills. Maturation occurred for 3 months in small 50L re-coopered tawny casks, 80 years of age and uncharred. Rum John Frum's (Aus company; made in Fiji) Cargo Cult Spiced Rum 38.50% 9 This rum offers defined aromas of vanilla custard, ginger bread and later hints of clove and baklava; contrasts on the palate which is unexpectedly dry, light to medium bodied, featuring cinnamon, ginger and light vanilla ice cream. Hoochery Distillery, (Kununurra, WA) Ord River Rum 40.00% 9 Distilled by WA s oldest continuously operating, legal distillery in the heart of the beautiful Ord River Valley. Hoochery is a small pot distillery gaining an excellent reputation for producing a genuine, traditional premium rum. Mount Uncle Distillery (Atherton Tablelands. QLD) FNQ Rum Co. 'Iridium' 40.00% 10 Triple distilled, single barrel aged rum from 100% sugar cane. That makes this rum an agricole style, similar to the French Caribbean Rum Agricole. It s aged for 4 years in American oak, formerly used for red wine production. Mount Uncle Distillery (Atherton Tablelands, QLD) FNQ Rum Co. 'Platinum' White Rum 40.00% 10 FNQ Rum Co. Platinum Rum has fresh, light and hypnotic elements of the sugar cane base. For better mouth feel and ultimate clarity, the distillate is filtered through Cairns Highland s volcanic rock. Perfect in a Mojito! Stone Pine (Bathurst, NSW) Dead Man's Drop Black Spiced Rum 40.00% 10 Named Dead Man's Drop, in reference to some of the region's earliest bushrangers, the Ribbon Gang, who were publicly hung in Bathurst in Dead Man's Drop marries, a barrel-aged rum with orange peel, vanilla and the Australian native flavours of Ringwood and Cinnamon Myrtle. Husk Distillers, (Tumbulgum, NSW) Virgin Cane Rum (2012 Harvest) 40.70% 14 Released barrel by barrel; this is an award-winning paddock to bottle Australian agricole rum; double pot distilled & double barrel, and aged for a minimum of four years. The flavours begin with a clear hit of wood and the rum is sweet yet dry on the palate and lusciously full bodied and exceptionally soft while retaining a nice warming sensation. Coffee, wood and caramel dominate the palate and in the background vanilla and some tea notes.
