4 INSTALLATION AND SAFETY PRECAUTIONS Read this manual and fllw these simple safety precautins befre using this appliance. The breadmaker shuld be placed 1 n a heat resistant surface and away frm direct sunlight. D nt use the breadmaker near a surce f heat r where it might vibrate r "walk" during peratin. Allw at least 4 inches clearance n all sides f the breadmaker when it is in use. Keep the breadmaker away frm babies and children. They may tuch the cntrl pads r ht surfaces during peratin. "at least 4 inches Plug the breadmaker int a prperly wired wall utlet. D nt cver the breadmaker with anything,r put anything in the breadmaker, (except the bread pan) as this may cause a fire r a malfunctin.

5 The lid may be pened n the Sweet Bread, French Bread, and Whle Wheat Bread prgrams t add extra ingredients at the indicated time (beeper sunds 4 times). Lifting the lid during peratin allws warm air t escape, hindering the RISE and BAKE stages. D nt immerse the bread pan in water. It may cause the shaft t malfunctin. Wipe pan with a damp clth t clean. 10 D nt dent r damage the bread pan. The breadmaker will nt perate prperly if the pan is damaged. Never immerse the breadmaker, crd, 8 r plug in water. This wuld be very dangerus. 11 Be sure t discnnect the pwer crd by pulling ut the plug. Allw the breadmaker t cl befre string.

6 BREADMAKER INSTRUCTIONS Basic Features The BREAD PROGRAM will let yu chse frm six different prgrams BASIC BREAD, SWEET BREAD, WHOLE WHEAT BREAD, FRENCH BREAD, RAPID BREAD, and DOUGH. The BAKING CONTROL functin allws yu t select a dark, medium, r light crust. The TIMER functin allws yu t enjy fresh and ht bread anytime. The WARM functin will keep the bread warm fr 3 hurs after the bread is finished. Yu can see the breadmaking prcess anytime thrugh the VIEWING WINDOW. Parts and Functins

7 Cntrl Panel and Operatin REMAINING TIME INDICATOR This displays the remaining time fr the prgram t be cmpleted. BREAD PROGRAM INDICATOR When PROGRAM SELECT pad is pressed, BREAD PROGRAM INDICATOR will display 1, 2, 3, 4, 5, r 6 t indicate the selected prgram. After the START pad is pressed, the indicatr will disappear. BAKING CONTROL INDICATOR When BAKING CONTROL pad is pressed, BAKING CONTROL INDICATOR will display A, B, r C t indicate the selected baking cntrl. LIGHT CDARK GldStar TIMER PROGRAM SELECT BAKING CONTROL START CANCEL TIMER Press timer pad t set the time delay. The time will advance by 10 minute intervals, frm 4:10 t 13:00. This timer can nt be used fr Rapid Bread and dugh prgram. PROGRAM SELECT Press this pad t select the prgram. 1. BASIC BREAD 2. SWEET BREAD 3. WHOLE WHEAT BREAD 4. FRENCH BREAD 5. RAPID BREAD 6. DOUGH BAKING CONTROL Press this pad t select dark, medium, r light crust. START After setting the desired prgram, the baking cntrl, and timer (if needed), press this pad t start the prgram r timer cunt dwn. CANCEL r STOP Press this pad t cancel a prgram. If yu make a mistake when setting the delay timer, prgram, r baking cntrl, press CANCEL pad and reenter the crrect prgram. If yu want t cancel the selected prgram, press the CANCEL pad fr mre than 1 secnd at any time during the cycle.

The BASIC BREAD, SWEET BREAD, WHOLE WHEAT BREAD, AND FRENCH BREAD prgrams cntain an audible signal (4 beeps) at the end f the baking cycle. (20 minutes f cling time remain) 3. The beeper beeps 8 times at the end f each prgram t signal cmpletin.

9 INGREDIENTS There are essentially three things required t make bread : flur, yeast, and water. Of curse, yu can add additinal ingredients t make thusands f varieties f breads, each with its wn texture and flavr. T achieve ptimum results, please take a few minutes t read the fllwing infrmatin befre yu shp fr the ingredients. ^ ESSENTIAL INGREDIENTS ~) Flur: Bread Flur Is Essential Bread flur is a necessity. It is milled frm a hard winter r spring wheat. The prtein cntent is higher and mre durable in bread flur than in all-purpse flur. The prtein becmes gluten when mixed with liquid. When gluten is kneaded it becmes elastic, and when baked, it is the structure f the bread. All-purpse flur, milled frm a cmbinatin f hard and sft wheat, becmes elastic t easily fr use in a bread machine and quickly lses its ability t stretch well. The bread made frm all-purpse flur will be small and dense. Several well-knwn mills nw market bread flur. The packages are labeled as bread flur and are readily available at grcery stres. Wheat is the nly grain that cntains gluten, the type f prtein that becmes elastic when kneaded. Other flurs (at, rice, barley, sy, rye, and buckwheat) add flavr and fiber t breads but d nt becme part f the dugh. Therefre, it is necessary t have wheat flur as a base when making breads with ther flurs. Vital Wheat Gluten is prduced by prcessing white flur an extra step. White (all-purpse) flur cntains prtein and starch. Mills can nw remve mst f the starch, leaving nly the prtein (gluten). This is mre expensive but is used in very small amunts. When vital wheat gluten is added t recipes cntaining all whle grains, it helps t imprve the vlume and shape f the laf. Usually 1 teaspn per cup f flur will make a difference. If mre than a tablespn per cup f flur is used, the bread may be tugh. Grcery stres are beginning t stck this ingredient in the aisle with baking ingredients. It is als available at health r natural fd stres. T measure flur, spn int measuring cup and level ff. DO NOT : tap cup pack flur int cup sift flur Stre flur fr lng perids f time in the freezer rather than the refrigeratr. Refrigeratrs tend t dry ut flurs. Be sure the flur is at rm temperature befre placing it in a bread machine. Yeast: The Number One Ingredient Active Dry Yeast r Quick Rise Yeast can be used in the GldStar Autmatic Breadmaker. This can be purchased in small packets, jars, cans, r in bulk at a health fd stre. Cake yeast cannt be used. Because yeast can grind against itself and becme very fine, it is packaged by weight and nt by vlume. A 1 A z. package f yeast cntains apprximately 2 1 A level teaspns f yeast. The activity f yeast will deterirate when it is expsed t xygen, misture, r warmth. Therefre, yeast needs t be stred airtight, refrigerated r frzen. Yeast is granular and cmes t rm temperature very quickly. Be sure t check the expiratin date n the yeast since aged yeast usually perfrms prly. Measure yeast accurately fr best results and fllw the quantities given in each individual recipe.

10 Liquids: Activate The Yeast And Bind The Dugh Liquids include all the wet ingredients used in the recipe. Traditinal bread bakers have been taught crrectly that warm liquid ( F) will activate dry yeast. Hwever, when yeast is used in a bread machine, the liquid temperature mst likely t prvide a gd envirnment fr the yeast is 80 F. At this temperature, the yeast activates gradually t accmmdate the prgram f the machine. When htter liquids are used, the yeast nt nly activates t quickly, the entire dugh becmes t warm. If the temperature f the dugh rises abve 100 F during the rise times, the yeast des nt die but becmes very lethargic and ineffective. Because climates and seasns f the year cause a wide variety f humidity levels, the liquid amunts called fr in a recipe may have t be adjusted. Flur will nt accept the same amunt f water in a mist, humid climate as it will in a dry climate. Fr example, Flrida residents will always use less liquid than Arizna residents. Wiscnsin bakers will use less liquid in their machines in the summer than in the winter. The difference may be as much as 1 A t V2 cup f liquid. When bread is kneading, the dugh shuld be a sft, tacky ball. Mre flur, ne tablespn at a time, may be added after 5 minutes f kneading if the dugh is t wet. Mre liquid may be added als, ne tablespn at a time, if the dugh is t dry. If the bread falls during the baking cycle and/r is quite carse, reduce the ttal liquid amunt. When the machine is set n the delay timer, reduce the amunt f liquid in mst recipes by 1 tablespn and be sure the liquid is very cld. Eggs are als cnsidered part f the ttal liquid amunt. One egg measure 1 A cup. If it des nt, add additinal water t equalv4 cup per egg. An egg white is equal t Vs cup. If it des nt, add additinal water t equal Vs cup. Eggs need t be at rm temperature befre putting it in the machine. If eggs are taken directly frm the refrigeratr, place them in a bwl f warm water t take ff the chill befre cracking. DO NOT USE EGGS OR ANY PERISHABLE FOODS WITH THE DELAYED SETTING. Recipes which require nn fat dry milk can substitute fresh milk. Omit the dry milk and replace part r all f the water in the recipe with milk. Dry milk, like liquid milk, will make the crumb structure have a mre velvety texture. Fresh milk is nt recmmended with the delayed setting. Always place ingredients int the bread pan in the rder listed in the recipes in this bk. Always keep yeast dry. NOTE : Fresh eggs, sur cream, milk, cream, and cttage cheese are nt recmmended fr Delayed Baking with the Timer t avid spilage. Fresh milk can be substituted fr nn-fat dry milk nly: if the same measurement f water is deducted frm the recipe if the milk des nt misten the yeast befre kneading Additinal : Fruits, Nut and Vegetables When adding fruit, nut and vegetables, their sugar, fat, and water cntents must be cnsidered. Ttal weight f fruit, nuts, r vegetables shuld nt exceed 15% f the flur weight. The height f the bread may be lwer because the chpped additinal ingredients cut the gluten structure. Resist the temptatin t add mre than specified in the recipe. Fr the best results, wait fr the beeper t sund during the 2nd knead and add the extra ingredients at that time.

11 C ADDITIONAL INGREDIENTS Sugar: Leavens the Bread Yeast ferments sugar t leaven bread. White and brwn sugar, hney, and mlasses may be interchanged equally. Since hney and mlasses are liquids, decrease the water by the same amunt as the hney r mlasses added. D nt use a sugar substitute. Artificial sweeteners may nt be used as the yeast cannt react with them. Yeast des have the ability t cnvert the starch in flur t sugar. Althugh sugar is the favrite fd f yeast, t much sugar will cause the yeast t malfunctin, especially within a bread machine prgram. The yeast will have a feeding frenzy and then becme lethargic. The laf f bread will be small and dense. Dried fruits als cntribute sugar t the bread dugh. Resist the temptatin t add mre than specified in the recipe. Salt: Regulates Yeast Activity Salt is necessary t cntrl the activity f the yeast, disciplining it t wrk slwly and steadily. Withut salt, yeast acts very rapidly and is exhausted t quickly. Salt als strengthens the structure f the dugh. If t little salt is used, the bread will rise rapidly and then fail befre the baking r as sn as the baking begins. The texture will be carse and uneven. Sme salt substitutes will wrk effectively. Fat: Dugh Enhance And Cnditiner Shrtening is an American term fr fat used in recipes. The recipes in this bk use vegetable il. Slid shrtening, butter, r margarine may be substituted. Divide it int small pieces befre placing in the machine. There will nt be any nticeable flavr difference. The crust may be a little crisper with butter. Margarine tends t make the crust a little tugher. Light r whipped margarine des nt wrk well. Milk : Add Flavr and Make a Tender Bread Milk and milk prducts add flavr t bread and make a mre tender, delicate crumb than water r water-based liquids. Because f the fat cntent, it is mre difficult t disslve yeast in milk, s we recmmend using nnfat dry milk (NFD) r pwered buttermilk. Cinnamn And Garlic : Nt True Friends Of Yeast Dugh Althugh cinnamn is assciated very clsely t the nstalgic senses f bread, it has nt been a part f the actual dugh. Previusly, cinnamn and sugar were sprinkled n dugh befre it was rlled up jelly rll fashin. Adding it t the dugh in a bread machine presents a prblem. Cinnamn acts n bread dugh as meat tenderizer acts n meat breaking dwn the structure. Althugh it smells wnderful while baking, the flavr is dissipated in the baking prcess. DO NOT ADD MORE than listed in the recipe. Garlic inhibits yeast activity. Use garlic in a spread fr the bread rather than adding it t the dugh. Bread Mixes Use mixes labeled fr 1-1 Vs pund laves. Fr best results use the Basic Bread r Rapid Bread. Layer ingredients in bread pan in the fllwing sequences: Yeast(Keep Dry) Dry - Water and Liquids Tips Fr Measuring Use the measuring cup prvide with yur breadmaker fr liquid measurements. Use standard dry measures and measuring spns, filling t verflwing, then leveled ff. Exact measurements are critical.

12 HOW TO CLEAN CLEANING (Always unplug unit) Avid using any cleaning agent ther than dish detergent. D nt use steel wl r ther abrasive materials. D nt wash the remvable parts in the dishwasher. D nt immerse the bread pan in water. Wipe clean with a damp clth, then dry thrughly. Wipe the shaft with a sft clth r spnge t prevent damage t the seal packing. Allw the pan t dry befre string it inside the breadmaker. Wipe the exterir with a damp dish clth after each use. D nt immerse in water r splash with water.»after using, cl and wipe ut crumbs r frm the ver interir with a dampened dishclth. A dampened sft, small brush may be used als. SEAL PACKING SHAFT Wash the kneading blade with a sft clth r spnge, and let dry. If necessary, immerse in water fr a while and clean with a sft tthbrush. Dry thrughly. The Kneading Blade shuld be remved and cleaned after use.»d nt use metal utensils t prevent damage t the nn-stick cating f the bread pan. KNEADING BLADE NOTE : The nn-stick cating may change clr after prlnged use. This is caused by misture and steam and in n way affects perfrmance. STORING Be sure breadmaker is cmpletely cled befre string. All remvable parts shuld be thrughly cleaned and dried. Stre breadmaker with lid clsed.

13 OPERATION Prgramming the Bread Basic Bread, Sweet Bread, Whle Wheat Bread, French Bread, Rapid Bread Open the lid and remve the bread 1 pan by turning it clckwise and pulling it straight up, using the handle. Munt the kneading blade n the shaft. Place all ingredients in the bread pan. Make sure nt t mit any ingredients. Place the bread pan in the breadmaker and turn cunterclckwise. Align the (VFRONT) mark t the FRONT side f the breadmaker Yeast(Keep Dry) Dry Water and Liquids NOTE : When using the timer, add the yeast n tp f the flur and away frm the liquid. This is critical fr gd results. i M'

14 Clse the lid slwly and tightly using the handle, until it clicks. Plug in the breadmaker. The display indicatr will light up. Press the START pad. Then the PROGRAM SELECT and BAKING CONTROL indicatrs will disappear and REMAINING TIME will be displayed. Ntice that the time left fr the bread t be finished is displayed and will cunt dwn frm 3:40(Basic Bread), 2:40(Rapid Bread), 4:00(Whle Wheat) r 1:03(Dugh). REMAINING TIME HOURS MINUTES Select the desired Prgram and Baking Cntrl (light, medium, r dark crust). The timer cunts dwn by the minute 3 3 O CAUTION: D nt tuch the Breadmaker, because it is very ht during baking. D nt pen the lid during peratin. Heat will escape and final result may be altered. The beeper will sund 4 times when baking is cmplete. A 20 minute cling perid will then 8 prceed. After the bread is cl, the beeper will sund 8 times. If yu d nt take the bread ut f the breadmaker immediately, it will be kept warm fr 3 hurs, except in the RAPID BREAD r DOUGH cycles. ([H:] will display n the Remaining Time Indicatr, fllwed by [END].) t I t U

15 Press the CANCEL pad and remve A Turn the Bread Pan upside dwn the bread pan using ven mitts. 1^ and shake the bread pan several times t release the bread. Place the bread n a wire rack t cl and allw the steam t escape. Be sure t remve the, kneading blade frm the bread. Dissipate heat by placing a twel under the laf and slice with a serrated knife. CAUTION :»The bread pan, kneading blade and bread will be very ht. Always unplug after each use. Prgramming the Delay Timer (Except Rapid Bread and Dugh Prgram) Set the timer fr hwever lng yu want t wait befre the bread is dne (frm 4:10 t 13 hurs, in 10 minute intervals). y EXAMPLE: It is 9:00 p.m.nw. The bread shuld be ready at 6:30 a.m. the next mrning. Set the timer fr 9:30, because there are 9 hurs and 30 minutes between 9:00 p.m. and 6:30 a.m. When pressed, the time will 1 advance in 10 minute increments. When cnstant pressure is applied t the pad, the time will advance quickly. NOTE: If yu pass the desired delay time, push the ( ) pad t g back. Cntinually pressing the ( ) pad will advance the time mre quickly up t 13:00, which is the lngest that the timer may be delayed. It will then cunt dwn in 1 minute increments t 3:40, then it will start. x Press the START pad and the timer is set. The cln blinks. After ne minute, 9:29 is displayed, and the timer cntinues t cunt dwn. i n i Cln will blink NOTE : Fresh eggs, sur cream, milk, cream, and cttage cheese are nt recmmended fr Delayed Baking with the Timer t avid spilage.

16 Prgramming Specialty Breads-Raisin Bread, etc C NOTE: SEE COOKING GUIDE FOR RECIPES. 1 Press prgram t select Sweet Bread, Whle Wheat Bread, r French Bread Prgram. Press the START pad. Ntice that cln blinks and the timer displays hw lng it will take t cmplete the bread making prgram: 3:40 (Sweet Bread) r 4:00 (Whle Wheat and French Bread). SWEET BREAD 1 st Knead Rest 2nd Knead D-D i WHOLE WHEAT r FRENCH BREAD Pre-Heat 1 st Knead Rest 2nd Knead ~r- D n 19 minutes frm the start f the Sweet Bread prgram (remaining time display 3:21) and 90 minutes frm the start fr the whle wheat and French Bread (Remaining time display 2:30), 4 beeps indicate the time t add any additinal ingredients. Open the lid and add ingredients quickly and evenly ver the dugh. Opening the lid at this time will nt stp the kneading, s be careful. Clse the lid. Nw the unit will cntinue thrugh the remaining stages autmatically. S 6' NOTE Make sure yu select the Sweet bread, Whle Wheat Bread, r French Bread. If verlked, the beeper will nt sund t indicate when t add the additinal ingredients. If yu add the additinal ingredients befre the machine beeps 4 times, the ingredients may be crushed. After adding the extras, quickly and gently clse the lid t prevent heat lss and pssible cllapsing f laf. It is better t select light baking cntrl fr a sft and delicius crust.

17 Baking Cntrl The Baking Cntrl functin is used fr any laf f bread baked in the Autmatic Breadmaker. r The Baking Cntrl functin is used t select the clr f the crust. It can be baked light, medium, r ^ dark yu chse! BAKING COrflROL 1. Press ne time, medium is selected. 2. Press mre than ne time, the baking cntrl functin will be advanced as fllws: v L MED LIGHT DARK -I NOTE : It is nt necessary t press the Baking Cntrl pad when medium is desired. Just press the START pad and the Baking Cntrl be set t medium autmatically, Crust Treatments (use nly with dugh prgram) J Always allw ptimum rising f shaped dugh. Then, use a pastry brush t gently apply the glaze. Bake as directed in the recipe. Fr a shiny, glden crust, use Egg Glaze r Egg Ylk Glaze. Fr a shiny, chewy crust, use Egg White Glaze. Because egg ylk is nt used, the crust will nt be as glden in clr. Egg Glaze Egg Ylk Glaze Egg White Glaze Mix 1 slightly beaten egg with 1 tablespn (15ml) water r milk. Mix 1 slightly beaten egg ylk with 1 tablespn (15ml) water r milk. Mix 1 slightly beaten egg white with 1 tablespn (15ml) water. Prgramming Dugh The Delay Timer cannt be used fr the dugh prgram. PROGRAM SEACT 1 First chse a recipe frm the COOKING GUIDE. REMAINING TIME HOURS MINUTES START Press the PROGRAM SELECT pad t select the Dugh Prgram Press the START pad. Then REMAINING TIME displays 1:03 and cln will blink. After 1 hur and 3 minutes, the beeper will sund, indicating the time t remve the dugh. Fllw yur recipe directins t cmplete whatever yu have chsen t make.
