2 Per Se, the acclaimed New York restaurant from Chef Thomas Keller, opened in February 2004 in the Time Warner Center at Columbus Circle and has brought Keller s distinctive hands-on approach from Napa Valley s The French Laundry to New York City. Per Se reflects Chef Keller s intense focus on detail, which touches not only his cuisine, but extends to the presentation, mood and surroundings of the entire restaurant. Designer Adam D. Tihany in collaboration with Keller, has achieved a rare blend of open space, easy intimacy, discreet drama and understated luxury. With spectacular views of Central Park and Columbus Circle, the restaurant includes a serene 64-seat dining room, salon, bar and wine cellar, as well as two private banquet rooms. Keller continually strives to refine and redefine the dining experience. The challenge is to make it perfect every time, he says. You never get there, of course, but the act of trying is what brings me back to the kitchen excited every day. Chef de cuisine Eli Kaimeh works closely with him on achieving this goal as well as crafting Per Se s complex and progressive dishes. Keller s staff also includes general manager Antonio Begonja, pastry chef Anna Bolz and head sommelier Michel Couvreux. Since its opening, Per Se has consistently received the highest of accolades from the culinary industry and international press, including the most prestigious honor bestowed by the Michelin Guide New York City, a three star rating. Keller s famed California outpost, The French Laundry, also received three stars in the Michelin Guide San Francisco, making Keller the only American-born chef to have two Michelin three-star properties. Noteworthy honors also include: Highest Ranking New Entry by Restaurant Magazine in 2005, which also rated the restaurant seventh globally. In 2004, Per Se received a four star rating from both the New York Times and Crain s New York Business, as well as the coveted award for Best New Restaurant from the James Beard Foundation. In 2011, Per Se was awarded the Outstanding Service Award from the James Beard Foundation and was re-reviewed by the New York Times and received another four star rating. 6 T H E S A LO N FAC T S H E E T LO C AT I O N NOTAB L E AT T R I B U T E S CO N C E P T DESIGN Time Warner Center Ten Columbus Circle (at 60th Street) 4th Floor Manhattan, New York Celebrating the urban interpretation of The French Laundry, the Per Se Salon is a unique space that offers guests the opportunity to choose a sampling of the restaurant s finest: an á la carte version of Chef s tasting menu a five-course dessert tasting menu Beginning in 2008, four years after Per Se celebrated its grand opening, The Salon was offered as a dining option to guests who wished to experience the restaurant without full commitment to Chef s daily, nine-course tasting menu. With a view overlooking New York s iconic Columbus Circle and Southwest corner of Central Park, The Salon is an intimate, 15-seat extension of the dining room. Just beyond the signature blue door The Salon s theme and décor, designed by Adam D. Tihany, is welcoming and comfortable, featuring Full view windows and earthy textiles of wood, marble, granite and copper Guests enter The Salon by way of the newly updated Garden which embodies the essence of The French Laundry s courtyard. Complete with a trellis and Garden furniture.

7 CHEF S TASTING MENU For guests of The Salon, Chef s tasting menu is offered á la carte. The menu changes daily, in addition to some of Chef Keller s classic dishes such as Oysters & Pearls. TASTING OF DESSERTS The Salon s daily dessert tasting menu follows a similar progression as Chef s tasting menu, featuring one-bite pastries, sweet cornets, seasonally fresh fruit or berries and Chef Keller s classic Coffee and Doughnuts. Guests complete the tasting with a selection of housemade chocolates. WINE SERVICE With an emphasis on the best selections from Burgundy, The Salon s wine list features more than 50 half-bottles and offers several unique wines by the glass, perfect for sharing or pairing with an à la carte experience.
