2 JUNMAI / HONJOZO SAKE bottle SAKE The quintessential Japanese alcoholic beverage and our prime passion at Nihonshu. We pride ourselves in having one of the widest ranges of sake in Melbourne with a varied range of grades and styles. Kizakura Tokkuri Ikkon Kinpaku-Iri 14 Kyoto Honjozo 180ml 15.5% Semi- Honjozo with gold leaf flakes. Has a, mellow and flavour. Alongside other factors such as rice strain and water quality, the milling rate of the rice determines the grade and plays a big role in shaping the flavour profile of the final product. Also playing a factor is whether brewer s alcohol is added during the brewing process. Sake designated Junmai denotes that it has had no brewer s alcohol added during brewing. Chokyu Kinokuniya Bunzaemon 21 Wakayama Junmai 300ml 15% Mild fruity frangrance and balanced ness with a finish. JUNMAI / HONJOZO SAKE Honjozo and Junmai sake are typically brewed from rice milled to at least 70% in size. They are typically er in fragrance but stronger in palate and body than Ginjo and Daiginjo sake. JUNMAI GINJO / GINJO SAKE Ginjo and Junmai Daiginjo sake is made from rice milled to at least 60% of its original size. They typically show more complexity in flavour and aroma than Honjozo and Junmai sake, and can take on fruity or savoury notes. JUNMAI DAIGINJO / DAIGINJO SAKE Junmai Daiginjo and Daiginjo sake rice is typically milled to at least 50% in size. Junmai Daiginjo and Daiginjo sake often display strong floral qualities and frutiness on the palate. 8 IMO SHOCHU 60ml glass / bottle SHOCHU Distilled Japanese spirits, commonly made from barley, potato, rice or sugar. Shochu is a delicate spirit that can be enjoyed straight, on the rocks, mixed with hot water or chilled water, or with oolong tea or fruit juice as a chu hai mixer. Kaido Iwainoaka 7 / 75 Kagoshima Sweet Potato 720ml 25% Sweet potato from Kagoshima, black koji from pure Japanese rice and Koshiki Kaiyoushinsousui (deep ocean water) are married to produce an excellent, wellrounded shochu.
