5 Class 108 Chocolate chip cake by Peachey 200g plain flour 220g dark brown soft sugar 4 tablespoons unsweetened cocoa powder 1 teaspoon bicarbonate of soda 1 teaspoon salt 75ml vegetable oil 1 tablespoon vinegar 2 teaspoons vanilla extract 250ml milk 170g plain chocolate chips Preheat oven to 180 C / Gas 4. Grease and flour a 20cm square tin recommended. Everything is mixed in the baking tin. 1 Combine the flour, dark brown soft sugar, cocoa powder, bicarbonate of soda and salt in prepared tin. Mix well with a fork. 2 Make three "wells" in the dry ingredients. Pour oil in the first, vinegar in the second and vanilla in the third. Pour milk over the top and mix all ingredients with a fork until well blended. Pour chocolate chips over the top. 3 Bake in the preheated oven for 30 minutes or until a skewer inserted into the centre of the cake comes out with moist crumbs. Cool in tin for 15 minutes, then cut and serve directly from the tin. Stage in tin. Class 109 Sablé confection biscuits by Hilary Walden 125g plain flour Small pinch of salt 70g unsalted butter at room temperature 2 egg yolks, beaten, plus yolk for covering rod 40g caster sugar, plus extra for coating Sift the flour and the salt on to a cold work surface and form a well in the centre. Pound the butter with a rolling pin to soften it slightly, then chop it roughly with a cold knife. Put the lumps into the well with the egg yolks and sugar. Quickly and lightly blend them together by pecking at them with the fingertips until they are just beginning to bind and look rather like rough scrambled egg. Sprinkle a little of the flour over the butter/egg mixture and, as lightly and quickly as possible, draw all the ingredients together by chopping through them with a cold round-bladed knife whilst at the same time drawing free flour from the edges of the pile into the centre with a smooth flowing action. When there is no free fat or flour to be seen and the mixture resembles crumbs, draw it lightly together with the fingertips. Knead it once or twice with the heel of the hand to ensure all the ingredients are evenly blended, but do not overwork the dough, roll the dough into a rod between 2-3cm diameter, cover with cling film and refrigerate for at least 3 hours. Sprinkle coating sugar on waxed paper, combine egg yolk with a splash of water in a small bowl and whisk with a fork. Brush the dough rod with the egg wash and roll it in the coating sugar until evenly coated. Using a knife, cut the rod into discs, place on a baking sheet lined with silicone or greaseproof paper. Cook until brown around the edges and golden on the bottom, 5

6 Class 110 Vegetable Samosas by Teresa Yakub ½ tablespoon oil 1 medium onion, chopped 1 teaspoon ground cumin 1 teaspoon ground coriander ¼ teaspoon chilli 1 teaspoon mustard seed 1 tablespoon tomato purée Salt 1 tablespoon fresh coriander 450g potatoes, boiled, & roughly chopped Filo pastry cut into strips approx 10 inch x 2.5 inch Fry the onion in oil until edges brown. Add the four spices and mustard seed, fry for one minute, add the tomato purée fry for one minute. Mix contents of pan with potato, fresh coriander and salt to taste. Cool. Place a spoonful of mixture on a corner of one strip of filo pastry. Fold alternately diagonally, then square (seven folds) to form a triangle. Dampen the edges with a little water. Fry for five minutes. Fry as soon as you make them and keep the filo pastry covered up with a cloth or cling film to prevent it drying out. 6
