16 Recipes 15 For best results use either Metric OR Imperial quantities throughout the recipe Honey Cake Ingredients. 250g clear honey, plus about 2 tbsp extra to glaze. 225g unsalted butter. 100g dark muscovado sugar. 3 large eggs, beaten. 300g SR flour. Butter and line a 20cm round loose bottomed cake tin. Method. 1. Preheat oven to 160C/Gas 3/Fan 140C. Cut the butter into pieces and drop into a medium pan with the honey and sugar. Melt slowly over a low heat. When the mixture looks quite liquid, increase the heat under the pan and boil for about one minute. Leave to cool for minutes, to prevent the eggs cooking when they are mixed in. 2. Beat the eggs into the melted honey mixture using a wooden spoon. Sift the flour into a large bowl and pour in the egg and honey mixture, beating until you have a smooth, quite runny batter. 3. Pour the mixture into the tin and bake for 50 minutes-1 hour until the cake is well risen, golden brown and springs back when pressed. A skewer pushed into the centre of the cake should come out clean. 4. Turn the cake out onto a wire rack. Warm 2 tbsp honey in a small pan and brush over the top of the cake to give a sticky glaze, then leave to cool. Rhubarb & Ginger Loaf Ingredients. 250g (8oz) SR flour. 1 tsp ground ginger. Pinch of salt. 150g (5oz) butter, softened. 150g (5oz) caster sugar. 3 medium eggs. 300g (10oz) rhubarb trimmed and cut into 2-3cm (¾-1¼ ) slices. Icing sugar, for dusting. 1kg loaf tin, buttered and lined with a strip of baking parchment. Method. 1. Set the oven to 180⁰C, Gas Mark 4 for fan ovens consult manufacturer s handbook. Sift the flour, ginger and salt into a bowl and add the butter, sugar and eggs. Beat to give a smooth, thick mixture. Stir in the rhubarb. Spoon the mixture into the loaf tin and level the surface. 2. Bake in the centre of the oven for minutes or until just firm to the touch in the centre & a skewer comes out clean after being inserted into the cake. 3. Remove the cake from the oven and leave to cool for 5-10 minutes, then transfer to a wire rack. 4. Dust the cake with icing sugar.
